Abstract

Labu kuning (Cucurbita moschata) adalah tanaman yang mudah tumbuh, produktif dan tidak begitu sulit dalam perawatan. Keberadaannya melimpah, kurang termanfaatkan, dan nilai ekonomisnya sangat rendah karena masih dianggap sebagai makanan inferior. Labu kuning merupakan sumber kalori, vitamin A, dan mengandung beta-karoten yang tinggi. Harga cabai cenderung fluktuatif, karena tingkat konsumsi yang tinggi dan tidak diimbangi dengan produktivitas. Permintaan pasar akan saus sambal terus meningkat, diversifikasi produk saus dari pasta labu kuning dan cabai rawit dapat menjadi alternatif untuk mengatasi masalah tersebut. Pasta labu kuning berfungsi sebagai bahan pengisi dan penstabil. Pembuatan pasta lebih mudah, praktis, dan ekonomis apabila dibandingkan dengan proses penepungan. Untuk menghasilkan saus yang berwarna merah, digunakan pigmen antosianin dari ekstrak kelopak bunga rosella, sehingga menghasilkan saus labu kuning pedas yang kaya dengan senyawa antioksidan. Penelitian menggunakan Rancangan Acak Kelompok (RAK) dengan 2 faktor yaitu proporsi labu kuning dan cabai rawit (70:30, 80:20, 90:10) serta konsentrasi ekstrak kelopak kering bunga rosella merah (10, 20, 30 %). Perlakuan terbaik diperoleh dari proporsi labu kuning : cabai rawit 90:10 dan konsentrasi ekstrak rosella 10% dengan nilai kadar air 90.33 %, total karoten 281.09 ppm, total antosianin 8.01 ppm, aktivitas antioksidan 78.82 %, pH 3.88, viskositas 11180 cP, total padatan terlarut 8.93 %Brix, rendemen 82.11 %, kecerahan 31.98, dan nilai 0Hue 56.05 berwarna oranye.   Kata kunci: Antioksidan, Antosianin, Ekstrak, Karoten

Abstract

The Soxhlet and maceration methods were used to determine the extract yield in the carotenoid pigment encapsulation for halal natural pigment production. This study aims to obtain halal natural pigment by determining the highest extract yield from the encapsulation of β-carotene in carrots. The carrot was extracted using Soxhlet and maceration method and then continued by oven drying. The n-hexane was selected because of its better volatility than ethanol and provided less solvent residue after extraction. UV-Vis spectroscopy and Thin Layer Chromatography (TLC) were used to characterize the n-hexane yield extract. Encapsulation of the pigment was investigated by adding five grams of maltodextrin to extract n-hexane weights of 0.05, 0.50, 0.75, and 1.0 grams. The maceration method yielded a much higher yield than the Soxhlet extraction method, with 2.24% (w/w) and 0.88% (w/w), respectively. The n-hexane extract absorbed a maximum wavelength of 450 nm with a retention factor (Rf) of 0.62. These values are confirmed by comparing the band's Rf values and absorption spectra with the standard's. Light absorption spectra at wavelengths 350-500 nm confirmed an intense color expression for encapsulation containing the highest pigment concentration.

Abstract

Instant tiwul is commonly made from cassava flour which product specification was characterized by its properties. However, some sensory attributes of instant tiwul were not desirable. In addition, the nutritional quality of instant tiwul needs to be improved by the addition of micronutrients. The substitution of cassava flour with mocaf flour and supplemented with yellow pumpkin flour is expected to improve the physical and sensory quality of the product, as adding nutritional value of instant tiwul that enriched with vitamin A. This study was conducted in a group-randomized trial with the substitution of yellow pumpkin flour with variation of 0, 10, 20% to cassava flour and mocaf flour. Physical properties (water content, water absorption, color) and sensory properties (acceptance test) were evaluated. The result indicated that the addition of yellow pumpkin flour lowered the water content on instan tiwul from both cassava flour and mocaf flour. The addition of yellow pumpkin flour significantly increased the water absorption of instant tiwul from cassava flour, however it reduced on mocaf flour formula. Water absorption of instant tiwul from mocaf with 0% yellow pumpkin flour is the highest with 45,27%. There is significant change on L, a and b parameter of instant tiwul color with addition of yellow pumpkin flour. Sensory evaluation suggested that there is significant change on acceptance of aroma, taste, texture, and overall likeness from instant tiwul made from mocaf flour with addition of yellow pumpkin flour, however cassava flour with addition of yellow pumpkin flour showed least significant change on sensory properties.Â
