Abstract

Abstract – Non dairy milk contains high protein and carbohydrate, low fat, and free lactose. Even more, banana peel has a potential as prebiotic because it contains 33% fructooligosaccharides (FOS). Banana peel was usually being thrown away although it still had good content. That would be a potential resource to make a non dairy kefir from it. This research aimed to know the effect on changes of fermentation parameters, the results of organoleptic tests, and the best treatment in making non dairy kefir with addition of Tanduk banana peel. The results showed that the parameters of total sugar, lactic acid, pH, TAT, viscosity, ethanol, number of yeast and LAB tests were significantly different in each sample even though not all samples were significantly different on reducing sugar. The results of organoleptic tests showed that non dairy kefir without the addition of Tanduk banana peel was the most preferred kefir with quite sweet and sour taste, not alcoholic, less sour and quite unpleasant aroma, a yellowish white color, quite thick consistency, and not bitter aftertaste. The best treatment based on the effective-index method was non dairy kefir with the addition of 5% Tanduk banana peel. Keywords: kefir, tanduk banana, non dairy milk Abstrak – Susu nabati memiliki kandungan protein dan karbohidrat yang tinggi, rendah lemak, serta tidak mengandung laktosa. Kulit pisang berpotensi sebagai prebiotik karena mengandung 33% fructooligosaccharides (FOS). Kandungan gizi kulit pisang dan susu nabati yang baik serta keinginan memanfaatkan kulit pisang Tanduk yang biasanya dibuang menjadi alasan untuk membuat kefir susu nabati dengan penambahan kulit pisang Tanduk. Tujuan penelitian ini adalah mengetahui pengaruh terhadap perubahan parameter fermentasi, hasil uji organoleptik, dan perlakuan terbaik dalam pembuatan kefir susu nabati dengan penambahan kulit pisang Tanduk. Penelitian ini mengunakan metode rancangan acak lengkap dengan variasi kadar kulit pisang Tanduk yang ditambahkan 0%, 5%, dan 10%. Hasil penelitian menunjukkan bahwa parameter gula total, asam laktat, pH, TAT, viskositas, etanol, jumlah khamir dan BAL, terdapat perbedaan signifikan pada setiap sampel, sedangkan pada parameter gula reduksi tidak semua sampel mengalami perbedaan signifikan. Hasil uji organoleptik kefir susu nabati tanpa penambahan kulit pisang Tanduk merupakan kefir yang paling disukai dengan karakteristik rasa yang cukup manis, cukup asam, tidak beralkohol, aroma kurang asam dan cukup langu, berwarna putih kekuningan, menghasilkan aftertaste yang tidak pahit, serta memiliki konsistensi cukup kental. Perlakuan terbaik berdasarkan metode indeks efektivitas adalah kefir susu nabati dengan penambahan kulit pisang Tanduk 5%. Kata kunci: kefir, pisang tanduk, susu nabati

Abstract

Abstract—A study of energy consumption in the Keluwih canteen at the University of Surabaya (UBAYA) has been conducted as a first step to determine the design of the use of alternative energy that is appropriate in the canteen. The study began with conducting an energy consumption survey in the Keluwih canteen to find out the energy needs in the canteen. This energy consumption is measured by the energy used for lighting (lamps), air conditioning (AC), and other electronic equipment (television, blenders, rice cookers, electric stoves, etc.) and fuel used for cooking. Data were obtained from a questionnaire given to booth the canteen manager and tenants in the Keluwih canteen. From the data obtained, it can be knewn the energy consumption map in the Keluwih Canteen and based on the survey that has been done can be concluded that the energy consumption in the Keluwih Canteen is dominated by electricity which is around 600 kWh/day. Keywords: energy consumption, keluwih canteen, survey, questionnaire, electricity Abstrak—Telah dilakukan studi konsumsi energi di kantin Keluwih Universitas Surabaya (UBAYA) sebagai langkah awal untuk menentukan desain pemanfaatan energi alternatif yang tepat guna di kantin tersebut. Kajian diawali dengan melakukan survei konsumsi energi di kantin Keluwih untuk mengetahui kebutuhan energi di kantin. Konsumsi energi ini diukur dari energi yang dipergunakan untuk penerangan (lampu), pendingin ruangan (AC), dan peralatan elektronik lainnya (televisi, blender, rice cooker, kompor listrik, dll.) serta bahan bakar yang dipakai untuk memasak. Data diperoleh dari kuesioner yang diberikan kepada pengelola kantin serta penyewa stan di kantin Keluwih. Dari data yang diperoleh dapat diketahui peta konsumsi energi di Kantin Keluwih dan berdasarkan survei yang telah dilakukan dapat disimpulkan bahwa konsumsi energi di Kantin Keluwih didominasi oleh energi listrik yang jumlahnya berkisar 600 kWh/hari. Abstract

Porang (Amorphophallus muelleri Blume) is a significant player in the international market, but its slow seedling growth rate is a major concern. This study, which holds significant implications for porang cultivation, aimed to accelerate the seedling growth phase through the induction of adventitious shoots from callus proliferation. We explored the use of plant growth regulators (PGRs), specifically auxins (NAA and 2,4-D) and cytokinins (BAP), in combination with variations in light color (white and white-blue). The observed parameters included the time of first callus and adventitious shoot emergence, callus growth, number of adventitious shoots, and callus coloration. Data were subjected to two-way analysis of variance (ANOVA) to evaluate the effects of plant growth regulator (PGR) type and light quality as independent variables. Statistical significance was assessed at a 95% confidence level using SPSS software. The combination of 1.0 ppm NAA and 0.5 ppm BAP in MS medium under white-blue light effectively accelerated callus induction from bulbil explants, with visible callus formation by day 8 and the fastest proliferation over 7 weeks. Under white light, the same PGR combination also promoted the earliest adventitious shoot formation by day 16 and yielded the highest number of shoots, totaling seven by the end of the culture period.

Abstract

Introduction: Plant Growth Regulators (PGRs) play a role in regulating organogenesis and morphogenesis in shoots, roots, and callus formation. Color spectrum of light is one of the quality light factors that affects plant physiological processes. This study aimed to determine the effect of cytokinin and auxin on Murashige-Skoog (MS) medium and light on callus induction and proliferation of porang (Amorphophallus muelleri Blume.) var. Madiun1. Methods: This study used completely randomized design, with the first factor was PGRs (combination auxin and cytokinin) and the second was color spectrum of light (white light, blue light, and its combination) during incubation. Variables observed were emergence time, color, texture, structure and calli growth, also shoots emerging from calli. Results: The results showed an interaction between PGRs with a combination of light color spectrum on callus growth. The fastest callus growth occurred in combination 5.0 mg.l-1 6-benzyl amino purine (BAP) with 0.2 mg.l-1 naphthalene acetic acid (NAA) which was incubated in a combination of white and blue light for 16 hour irradiation. The combination 5.0 mg.l-1 BAP with 0.2 mg.l-1 NAA was able to induce callus emergence time, and the shoots appearing were faster, whereas combination of white and blue light was able to accelerate callus emergence from bulbil and adventitious shoots emergence. Conclusion: The combination of white and blue light color spectrum for 16 hours irradiation can accelerate callus emergence from bulbil and adventitious shoots emerging from calli, and interaction with combination of 5.0 mg.l-1 BAP and 0.2 mg.l-1 NAA can accelerate porang’s callus growth.

Abstract

Indonesia merupakan salah satu produsen kopi terbesar di dunia, sehingga sektor ekspor menjadi pilar penting dalam perekonomian nasional. Aktivitas ekspor berperan dalam meningkatkan keuntungan, memperluas pangsa pasar, serta menjaga kestabilan harga komoditas dan nilai tukar. Penelitian ini mengkaji penerapan metode K-Means Clustering untuk menganalisis kinerja ekspor kopi berdasarkan negara tujuan. Data penelitian diperoleh dari catatan ekspor perusahaan Café Coffee pada periode 2023–2024, mencakup 40 negara tujuan beserta total kuantitas ekspor. Pengolahan data dilakukan melalui teknik data mining clustering dengan ukuran jarak Euclidean Distance. Hasil analisis menunjukkan bahwa algoritma K-Means berhasil mengelompokkan laba ekspor ke dalam tiga kategori, yaitu laba rendah, sedang, dan tinggi. Validasi model dilakukan menggunakan Davies-Bouldin Index (DBI) dengan nilai 0,422, yang mengindikasikan kualitas klaster yang baik dan dapat diterima.
