Abstract

Penelitian ini bertujuan untuk mengetahui penerapan sistem GMP  pada usaha mikro tahu tempe benjo di Desa Lambusa Kecamatan Konda  Kabupaten Konawe Selatan. Metode penelitian menggunakan metode survey pada usaha mikro tahu tempe benjo dan dianalisis secara deskriptif kuantitatif. Subjek penelitian adalah (a) bangunan tempat penyelengaraan produk makanan, (b) cara pengolahan produk makanan, (c) peralatan yang digunakan, dan (d) tenaga karyawan. Hasil penelitian menunjukan bahwa penerapan sistem Good Manufacturing Practices (GMP) usaha mikro tahu tempe benjo tergolong dalam kategori efektif, terlihat pada: (a)  keadaan sanitasi bangunan (66%); (b) keadaan sanitasi cara pengolahan produk makanan (86%); (c) keadaan peralatan yang digunakan (58%), dan (d) keadaan hygiene karyawan (55%). Jumlah dari: (a) keadaan sanitasi bangunan; (b) sanitasi cara pengolahan produk makanan; (c) sanitasi keadaan peralatan yang digunakan, dan (d) keadaan higiene karyawan,  yang jika dirata-ratakan dari ke empat aspek yang dinilai diperoleh hasil sebesar 66,25% sehingga masuk dalam kategori efektif.

Abstract

The purpose of this study was to analyze the value added of anti-microbial food packaging paper products made from cocoa bean shells. The study was conducted at the CV. Sultan of Agro-Maritime Industry Kendari City, Southeast Sulawesi Province. The location of this research was determined purposively. The study was conducted in July 2019 - July 2020. Types and sources of data include primary data obtained through interviews with respondents in the cocoa processing industry (Kalla Kakao Industri and CV. Sultan Agro-Maritime Industri) and relevant secondary data. Data collection techniques are carried out by in-depth interviews with key respondents or main respondents, and literature studies. The data analysis used in this study is the analysis of value added using the Hayami method. The results showed that the value added of cocoa bean shell waste into antimicrobial food packaging paper products was IDR 34,313 / kg.Keywords: cocoa bean shells; packaging paper; value-added

Abstract

This research aims to analyze the institutional system of coconut agro-industry businesses in Konawe Islands Regency, Southeast Sulawesi Province. The scope of this research is the institutional processing business, namely institutional form, raw material requirements, institutional structure, capital, decision making, data collection techniques through interviews, FGD and expert questionnaires (ISM). Based on the research results, it shows that: The key elements of the palaku coconut processing business development system in Konawe Islands Regency are coconut farmers and consumers of processed coconut products. The key elements needed by players in the coconut processing business development system are easy access and guaranteed marketing of processed products, the need for rehabilitation, intensification and extensification of coconut plants. Sustainability of institutional development of coconut processing businesses requires assistance from universities (PTN-PTS) whose role is to connect between parties which have been an obstacle for farmers and coconut processors.
