Abstract

Nowadays,estimated about 500 millions people (12%) of the population wolrldwide are obese. In Padang Panjang city, found obese category in adults 18 years and over as much as 37%, which is the highest prevalence compared with other districts or cities in West Sumatra. The purpose of this study was to assess factors related to obesity in adults in Padang Panjang. It is a cross sectional research. The population is the entire number of adults in Padang Panjang. The sample size is 178 people, taken by Simple Random Sampling. Data were collected by questionnaire and interview using Food Frequency Quantitative (FFQ). Data processing was done by SPSS and analyzed by Chi-square test at p value <0,05. The result showed that there were significant correlation between knowledge level (p =0,023), physical activity (p= 0,026), mean intake of energy (p=0,000)with obesity and no signiicant correlation between smoking habbits and obesity (p=0,344). We concluded that low physical activity and knowledge, as well as high energy intake were risk factors for obesity.

Abstract

Masalah gizi kurang pada bayi dan anak-anak dapat menyebabkan terganggunya pertumbuhan dan perkembangan anak. Untuk mengatasinya perlu perbaikan pola makan masyarakat melalui diversifikasi dan substitusi pangan. Alpukat dan ikan lele merupakan bahan pangan potensial pada pembuatan biskuit kaya akan protein. Tujuan penelitian ini adalah untuk mengetahui pengaruh substitusi alpukat dan tepung ikan lele terhadap kadar protein dan mutu organoleptik pada biskuit.  Penelitian eksperimental ini menggunakan desain rancangan acak lengkap (RAL) yang terdiri dari tiga perlakuan dan dua kali ulangan. Pengamatan yang dilakukan adalah uji subjektif yang dilakukan terhadap cita rasa (uji organoleptik) dengan 25 panelis agak terlatih dan analisis protein  menggunakan metode Kjedahl berdasarkan SNI 01-2891-1992. Data dianalisis statistik dengan menggunakana SPSS 16. Hasil uji organoleptik didapatkan perlakuan yang paling disukai adalah perlakuan B (10 g alpukat: 20 g tepung ikan lele) dengan indikator penilaian berdasarkan kesukaan terhadap warna, tekstur, aroma serta rasa. Hasil kadar protein terbaik adalah pada perlakuan A (5 g alpukat: 25 g tepung ikan lele) yaitu sebesar 12,37 % , seluruh biskuit dengan ketiga perlakuan telah memenuhi kriteria biskuit MPASI berdasarkan Menkes 2007.

Abstract

Abstrak : Penelitian ini bertujuan untuk mengetahui ada atau tidak pengaruh minat membaca di perpustakaan terhadap hasil belajar pada mata pelajaran pemasaran kelas XI SMK Panca Bhakti Sungai Raya Kabupaten Kubu Raya. Metode yang digunakan adalah metode deskriptif dengan bentuk penelitian studi hubungan. Populasinya berjumlah 40 siswa dengan semuanya dijadikan responden. Hasil penelitian menunjukkan bahwa minat membaca di perpustakaan memiliki pengaruh terhadap hasil belajar pada mata pelajaran pemasaran kelas XI SMK Panca Bhakti Sungai Raya Kabupaten Kubu Raya ditunjukkan dengan formulasi Y = 2,315 + 0,006 x. Berdasarkan perhitungan menggunakan program SPSS 22, dihasilkan bahwa t hitung > t tabel yaitu 2,077 > 2,024. Oleh karena t hitung > t tabel maka Ha diterima dan Ho ditolak artinya terdapat pengaruh positif minat membaca di perpustakaan terhadap hasil belajar pada mata pelajaran pemasaran kelas XI SMK Panca Bhakti Sungai Raya Kabupaten Kubu Raya dengan persentase sebesar 10,2%.   Kata Kunci : Minat Membaca Perpustakaan Abstract : This study aims to determine whether or not the influence of interest in reading in the library on the results of a marketing study on the subjects of class XI Panca Bhakti SMK Sungai Raya Kubu Raya. The method used is descriptive method with the form of research studies the relationship. And a population of 40 students with everything as respondents. The results showed that interest in reading in the library has an influence on the results of a marketing study on the subjects of class XI SMK Sungai Raya Panca Bhakti Kubu Raya indicated by formulations Y = 2.315 + 0.006 x. Based on calculations using SPSS 22 is generated that t > t table is 2.077 > 2.024. Hence t > t table then Ha Ho accepted and rejected it means there is positive interest in reading in the library to the learning outcomes on the subjects of marketing Panca Bhakti class XI SMK Sungai Raya Kubu Raya with a percentage of 10.2%. Abstract

Stunting is a chronic malnutrition problem as a result of lack of nutritional intake for a long time, so that it has an impact on the growth of children who have a height that is lower or shorter than the standard age. working area of  the Water Children Health Center in 2021. This type of research is observational with a cross sectional design. The total population is 3,221 people, the research sample is 97 people using stratified random sampling technique. The data collected includes height with a digital height measuring device (digital wireless), Questionnaire, SQ FFQ. Data analysis using SPSS 20 using the Chi-Square test. The results of statistical tests showed stunting toddlers had low maternal knowledge 36.1%, less family support 36.1%, carbohydrate intake was less 74.2%, protein intake was less 59.8%, fat intake was 94.8%. The results of the bivariate analysis showed a significant relationship between the incidence of stunting and carbohydrate intake (P=0.019), protein intake (P=0.013), there was no significant relationship between the incidence of stunting and maternal knowledge (P=0.537), family support (P=1.00 ), fat intake (P=1.00). Mothers are expected to pay more attention to the food consumed by toddlers, not only providing foods that are liked by toddlers but also providing varied foods so that the nutritional needs of toddlers can be met. Abstract

Wasting is a condition where there is a problem of malnutrition where a toddler's weight does not match the proper body weight with a z-score value of >- 2SD. Wasting is a symptom of acute under nutrition, usually occurring due to inadequate food intake, inadequate parenting patterns, maternal knowledge, education and income level. This study aims to determine the relationship between maternal knowledge, parenting patterns, and nutritional intake on nutritional status (BB/TB) in toddlers 24-59 months. The type of research used is descriptive-analytic with a Case-Control research design. The sampling technique was purposive sampling of 44 respondents. Data on maternal knowledge and parenting patterns used a questionnaire, while nutritional intake used the Semi Quantitative Food Frequency Questionnaire (SQFFQ). Data analysis used the Chi-square test. The research results showed that 68.2% of mothers' knowledge was good in the control group, 18.2% of mothers' knowledge was good in the case group, 86.4% good parenting patterns in the control group, 45.5% poor parenting patterns in the case group, 59 .1% good carbohydrate intake in the control group, 18.2% poor carbohydrate intake in the case group, 86.4% good protein intake in the control group, 40.9% poor protein intake in the case group, 86.4% good fat in the control group and 45.5% less good fat intake in the case group. From the results of statistical tests, there is a significant relationship between maternal knowledge, parenting patterns, carbohydrate, protein and fat intake and the incidence of wasting. Maternal knowledge, parenting patterns, intake of carbohydrates, protein and fat are risk factors for wasting in toddlers. It is hoped that the public will know the importance of nutritional knowledge, parenting patterns, nutritional intake and other risk factors in toddlers so that they can prevent wasting.Keywords: wasting, maternal knowledge, parenting, carbohydrate intake, protein intake, fat intake

Abstract

The purpose of this study was to examine the forms of special treatment for debtors who were receiving business loans as victims of natural disasters that occurred in Palu City, Central Sulawesi Province, and legal protection for debtors who were receiving business loans. This study used empirical legal methods. The results of the study indicated that the form of special treatment for debtors receiving business loans as victims of natural disasters referred to the Financial Services Authority Regulation Number 45/POJK.03/2017 concerning Special Treatment of Credit or Bank Financing for Certain Areas in Indonesia Affected by Natural Disasters. Legal protection provided if the credit restructuring provided in the form of a delay in payment of obligations (grace period) had not been optimal could be in the form of an extension of credit restructuring, new treaty addendum, or write off.

Abstract

The prevalence of diabetes mellitus in West Sumatra is 1.8% of the 3.7 million population over the age of 15 years (Ministry of Health of the Republic of Indonesia 2020). Purple sweet potatoes are high in fiber which is useful for stabilizing blood sugar and cholesterol. Dates can be a good source of nutrition for healthy individuals and patients with Diabetes Mellitus.This study aims to determine the organoleptic quality and glycemic index levels in the manufacture of purple sweet potato pudding with the addition of dates as an alternative snack for Diabetic Mellitus patients. This type of research is an experimental study, using a Complete Randomized Design (RAL) with 1 control of 3 treatments and 2 replicates. This research was conducted in February - August 2024 with subjective observation of taste (organoleptic test) with 25 moderately trained panelists. Nutrient analysis was carried out in the Eka Sakti University Laboratory. Objective observation through the analysis of the glycemic index rate in pudding. The result of the study was that the most preferred color of the panelists was the P1 treatment, which was 72% with purple. The most preferred aroma is the P0 and P3 treatments, which is 60% with a fragrant aroma, the most preferred texture is the P0 treatment, which is 80% with a soft texture. The most preferred taste is P1 and P3 treatment, which is 68% with sweetness. . The glycemic index value obtained from purple sweet potato pudding was 96.6. It is recommended that the public can take advantage of purple sweet potatoes that can be processed into pudding and many other innovations made from purple sweet potatoes It is not recommended for people with diabetes mellitus to consume purple sweet potato pudding with the addition of dates because it has a high glycemic index level.Keywords : Pudding, Purple Sweet Potato, Dates, Glycemic Index, Diabetes Mellitus

Abstract

Background: According to the International of Diabetic Federation there has been an increase in cases. The incidence of diabetes mellitus according to Riskesdas (2013) data increased from 1.1% in 2007 to 2.1% in 2013 from a total population of 250 million people. This research aims to carry out the process of standard nutritional care in care management clinical nutrition in diabetes millitus patients. Methods: This type of research is descriptive observational and uses purposive sampling method. Results: Patients were diagnosed with diabetes mellitus, the nutritional status of obese patients and the patient's diet was high in energy and fat. Conclusion: Based on the results of monitoring and evaluation on patients and the nutritional status of obese patients, intake before and after the intervention energy deficit is heavy, moderate protein deficit, good fat and carbohydrate deficit is heavy.Keywords: Nutritional Status, Patients, Diabetes Mellitus

Abstract

Pangan fungsional merupakan pangan yang tidak hanya berfungsi sebagai makanan tetapi juga mengandung senyawa bioaktif yang bermanfaat bagi kesehatan di luar manfaat zat gizi yang terkandung di dalamnya. Minuman Kawa Daun yang terbuat dari daun kopi (Coffea Canephora) adalah minuman tradisional khas Sumatera Barat yang dikenal dengan sebutan "aia kawa" dan memiliki potensi besar sebagai pangan fungsional. Penelitian ini bertujuan untuk menganalisis potensi kawa daun sebagai pangan fungsional dengan fokus pada karakteristik dan bioaktifitasnya.Penelitian ini merupakan penelitian eksperimen, metode penelitian meliputi analisis kandungan senyawa bioaktif seperti flavonoid, klorofil, dan kafein pada daun kopi robusta (Coffea Canephora) melalui berbagai tingkat perkembangan daun. Ekstraksi dilakukan menggunakan pelarut etanol dengan variasi suhu dan waktu infusi untuk mendapatkan aktivitas antioksidan optimal. Pengujian aktivitas antioksidan dilakukan menggunakan metode DPPH (2,2-diphenyl-1-picrylhydrazyl) untuk mengukur kemampuan menangkal radikal bebas. Analisis kandungan klorofil, flavonoid, dan kafein dilakukan menggunakan spektrofotometri UV-Vis. Hasil penelitian menunjukkan bahwa kawa daun mengandung senyawa antioksidan yang tinggi, aktivitas antioksidan menggunakan DPPH IC50 didapatkan 144,6391 ppm. Kadar total flavonoid yaitu 0,1968 mgQE/gr. Hasil analisis klorofil yaitu 7,8095 mg/L. Hasil kafein yaitu 0,0215 %. Hasil uji proksimat didapatkan lemak 0,1727%, air 98,0114%, abu 0,10%, lemak 0,4943%, karbohidrat 0,67%, serat kasar 0,56%. Kesimpulannya, kawa daun (Coffea Canephora) memiliki potensi besar sebagai pangan fungsional khas Sumatera Barat dengan kandungan senyawa bioaktif yang bermanfaat untuk kesehatan, khususnya sebagai sumber antioksidan alami yang dapat mencegah berbagai penyakit  dan mendukung kesehatan metabolik tubuh.
