Abstract

Hygiene is a health effort by maintaining and protecting the cleanliness of the subject to protect the integrity of the food as a whole, while sanitation is a health effort by maintaining and protecting the environmental cleanliness of the subject. Angkringan is a place to sell food that is often encountered and is currently popular among the public. This study aims to determine the level of knowledge, attitudes and consumer satisfaction, the correlation of knowledge, attitude, application of hygiene and sanitation to satisfaction with consumers of angkringan traders in Kec. Telukjambe Timur Kab. Karawang. This research is quantitative using analytic observational method with cross sectional design. The number of samples is 30 angkringan using totality sampling technique and 100 consumers using accidental sampling technique. The results showed a high level of knowledge as much as 63.3%, a low level of attitude as much as 36.7%, application of poor sanitation hygiene as much as 70% and good or satisfied customer satisfaction as much as 78%. Meanwhile, there is no correlation between knowledge and the application of sanitation hygiene (p>0.05). There is a correlation between attitude and the application of sanitation hygiene (p<0.05). There is a correlation between the application of sanitation hygiene with consumer satisfaction (p <0.05). The conclusion of this study is that most of the angkringan traders have a good level of knowledge, a bad attitude level, poor sanitation practices and poor customer satisfaction. There is no correlation between knowledge and the application of sanitation hygiene. There is a correlation between attitude and the application of sanitation hygiene. There is a correlation between the application of hygiene and sanitation with consumer satisfaction.

Abstract

Tujuan penelitian ini untuk mendapatkan formulasi terbaik dan mengetahui kandungan gizi dari sosis subtitusi hati ayam. Metode penelitian  ini menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari 3 jenis perlakuan (hati ayam : daging ayam) yaitu F1 (30% : 70%) F2 (50% : 50%); F3 (70% : 30%). Data di analisis menggunakan Kruskal Wallis dan uji lanjut Mann Whitney. Penambahan subtitusi hati ayam pada sosis ayam menunjukan hasil yang berpengaruh sangat nyata (p<0,05) pada uji mutu hedonik yaitu terhadapa warna, aroma, rasa, tekstur dan Aftertaste. Kandungan gizi pada sosis subtitusi hati ayam per 100 gram yaitu, kadar air sebesar 67,80%, kadar abu sebesar 1.29%, kadar lemak sebesar 4,06%, kadar protein sebesar 12.32%, kadar karbohidrat sebesar 14.53%, kadar zat besi sebesar 3.65 mg. Formulasi sosis subtitusi hati ayam yang paling banyak disukai yaitu F1 (hati ayam 30%, daging ayam 70%).

Abstract

Skills in anthropometric measurements are one of the skills that every cadre must master and possess to monitor the growth and nutritional status of toddlers. This service activity aims to increase cadres' knowledge and skills in carrying out anthropometric height measurements that are easy to understand and apply in Posyandu activities. This activity is supported by an innovative height measuring tool that has been designed and is equipped with a pocket book and poster. The counseling technique was carried out using lecture and panel discussion methods to 32 cadres from 7 Posyandu, namely Posyandu Mekar Asih 1, Mekar Asih 2, Rido Asih, Fajar Sidik, Bahagia, Wargi Saluyu, and Rahayu. Based on the results of the paired parametric T comparative statistical test, it shows that there is no significant difference between the infantometer and the curve device (p > 0.05). however, there was a significant difference between the stadiometer and the Curve device (p < 0.05).
