Abstract

Higiene sanitasi makanan merupakan upaya mengendalikan faktor risiko terjadinya kontaminasi terhadap makanan, baik yang berasal dari bahan makanan, orang, tempat dan peralatan agar aman dikonsumsi. Fasilitas sanitasi jasaboga meliputi tempat cuci tangan, air bersih, jamban dan peturasan, kamar mandi dan tempat sampah. Berdasarkan Profil Dinas Kesehatan Kota Bengkulu Tahun 2017, TPM memenuhi syarat hygiene sanitasi berjumlah 553 unit (53,69%). Tujuan Penelitian ini memperoleh gambaran secara deskriptif tentang personal hygiene penjamah makanan dan fasilitas sanitasi pada 10 Jasaboga di Kota Bengkulu. Jenis penelitian ini adalah deskriptif dengan mengunakan rancangan observasional. Penelitian ini dilakukan dengan wawancara tentang personal hygiene sebanyak 20 penjamah makanan pada Jasaboga di Kota Bengkulu. Hasil penelitian ini didapatkan bahwa Personal hygiene penjamah makanan 40% tidak memenuhi syarat. Fasilitas sanitasi berupa tempat cuci tangan 60% tidak memenuhi syarat, air bersih 70% tidak memenuhi syarat, jamban dan peturasan (urinoir) 70% tidak memenuhi syarat dan tempat sampah 100% tidak memenuhi syarat. Diharapkan pemilik dan karyawan pada jasaboga memiliki sertifikat hygiene sanitasi makanan, menyediakan dan menggunakan celemek dan sepatu kedap air selama beraktifitas bagi penjamah makanan. Pemilik juga harus menyediakan tempat sampah tertutup yang didalamnya dilapisi kantong plastik sesuai dengan jenis sampah sehingga memudahkan dalam pengangkutan sampah.

Abstract

Waste is something that is not used, not used, not liked or something that is discarded that comes from human activities and does not happen by itself. Waste sorting is the activity of grouping and separating according to the type of waste. Education or also called education is any planned effort to influence other people either individuals, groups, or the community so that they do what is expected by the education practitioners. Audio visual media is media that is able to display sound and images. This study aims to determine the Effects of Education Using Audio Visuals on Increasing Knowledge, Attitudes and Actions of Waste Sorting in Elementary School (SD) students in 19 Bengkulu City.This research method is a quasi experiment. The population of this study was 126 students who took 126 students in class V using simple random sampling and obtained 96 students consisting of class A 32 people, B 32 people and C 32 people. T-test statistical test results show the difference between knowledge, attitudes and actions before being given education and after being given education using audio visual (ρ = 0.00 <0.05).Conclusions there are significant differences between knowledge, attitudes and actions before and after being given education using audio visual.Keywords: audio-visual education, knowledge, attitudes, actions

Abstract

 Food is a basic need for humans. Snack food is very likely to be contaminated due to lack of attention to environmental sanitation and personal hygiene when processing snack food with disease complaints at Kandis Simpang, Bengkulu City. The purpose of this study was to analyze the relationship between environmental sanitation and personal hygiene on traders' complaints of digestive disorders.This type of research is observational analytic with a cross sectional approach. The sample is 42 traders. The variables studied were environmental sanitation, personal hygiene and traders' complaints of digestive disorders. Data analysis used the chi square test.The results showed that 16.7% of traders had poor environmental sanitation, 26.2%of traders had poor personal hygiene and complaints of gastrointestinal diseases. The results of the chi-square test found that there was a relationship between environmental sanitation and gastrointestinal complaints with a significance value of P=Value 0.009 andthere was no relationship between personal hygiene and gastrointestinal complaints with a significance value of P=Value 0.021. There is a relationship between environmental sanitation and complaints of digestive disorders, but not with personal hygiene of traders. The researcher's suggestion for tradersis to understand the importance of environmental sanitation and personal hygiene for street food vendors at the Kandis intersection in Bengkulu City
