Abstract

ABSTRAKTempe merupakan salah satu makanan tradisional Indonesia yang memiliki nilai gizi yang tinggi. Pembuatan tempe pada umumnya dilakukan oleh Usaha Mikro Kecil dan Menengah (UMKM), termasuk UMKM tempe di dusun Clangap Mojokerto.  Produksi yang dilakukan masih sederhana, kurang higienis dan mempunyai kualitas produk yang tidak konsisten. Rak tempe terbuat dari bambu dan diletakkan di luar ruangan, sedangkan proses produksi tidak konsisten. Kegiatan ini bertujuan untuk meningkatkan kebersihan melalui pembuatan rak tempe dan menjaga kualitas produk dengan pelatihan penyusunan SOP. Hasil pengabdian masyarakat menunjukkan pembuatan rak tempe untuk mitra menjadi lebih tertata, dan lebih terjaga kebersihannya. Pelatihan Penyusunan SOP Produksi Tempe telah menghasilkan   satu dokumen SOP dalam bentuk tabel yang membuat proses produksinya selalu konsisten Kata kunci: rak tempe; SOP; kebersihan; kualitas produk ABSTRACTTempe is a traditional Indonesian food that has high nutritional value. Tempe production is generally carried out by Micro, Small and Medium Enterprises (MSMEs), including tempeh MSMEs in the village of Clangap, Mojokerto. Production is still simple, less hygienic and has inconsistent product quality. The tempe rack is made of bamboo and placed outdoors, while the production process is inconsistent. This activity aims to improve cleanliness through making tempeh racks and maintaining product quality with training in preparing SOPs. The results of community service show that the making of tempeh racks for partners is more orderly and more hygienic.
