Abstract

Animal protein one of which is obtained by consuming meat. This study aims to determine the social and economic characteristic of household and to analyze the factors that influence household beef consumtion in Batang Toru District. The analytical method used is descriptive analysis by directly observing the social and economic conditions of the household, then using a questionnaire to obtain data on the socio-economic conditions of the household. The results of the study indicate that beef consumers in Batang Toru district have differents socio-economic charasterictics, both in terms of education, age, number of family members and income. The socio-economic charasteristics of beef consumers, namely education, age, number of family members and income, have a significant effect  on the amount of beef consumption. While the variable number of family members does not significantly affect  on the amount of beef consumtion.

Abstract

Abstract

This study aims to identify the type, number of nematode eggs, and nematode prevalence rate, as well as determine the factors that influence the prevalence of nematode eggs in beef cattle feces in Tanjung Morawa District. The research method used was direct interviews with farmers assisted by questionnaires and examination of 89 beef cattle fecal samples at the Medan Veterinary Center Parasitology Laboratory. Purposive sampling techniques were carried out. The research samples were Dalu Sepuluh A Village, Bangun Rejo Village, Dalu Sepuluh B Village in Tanjung Morawa District with variables maintenance systems, deworming, cage sanitation, forage collection time, cow age, cattle breed, and gender. Based on the examination results, 43 positive samples were obtained with a prevalence of 48.31% (commonly), and the egg infestation rate per gram of feces was in the low to medium category, with an average of 200-700 eggs. The types of nematode eggs found are Bunostomum sp., Capillaria sp., Cooperia sp., Eimeria sp., Oesophagostomum sp., Trichuris sp. Most nematode eggs are in the type of Eimeria sp. Factors influencing the prevalence and infestation of eggs per gram of feces are the maintenance system, deworming, cage sanitation, and forage collection time.

Abstract

Contamination of meat is common Contamination of meat often occurs which endangers the health of consumers. This study aims to determine the presence of bacterial contamination of Escherichia coli and Salmonella sp. on broiler meat at slaughterhouses and traditional markets in Medan City. This study used a survey method with a purposive sampling technique and used 60 samples (30 from slaughterhouses and 30 from traditional markets). There were 3 slaughterhouses (slaughterhouses Johor, slaughterhouses setia budi, and slaughterhouses padang bulan) and three traditional markets (traditional market Johor, Setia Budi and   Padang bulan). Samples were analyzed at the Laboratory Microbiology Faculty of Mathematic and Natural Science Universitas Sumatera Utara Medan. The results showed that the average total amount of Escherichia coli in  the sample from chicken slaughterhouses was 3.15 log CFU/g, and from the traditional markets was 3.39 log CFU/g. The number of samples contaminated by Salmonella sp. in chicken slaughterhouses was 17 of 30 samples, whereas on the traditional market were 20 of the 30 samples. This study concludes that the average total amount of Escherichia coli microbes in    samples from chicken slaughterhouses and traditional markets in Medan City all of them had exceeded the maximum limit of microbial contamination, based on the microbiological quality requirements of  SNI 3932: 2008, which is 1x101 CFU/g. While the bacterial contamination rate of Salmonella sp. in chicken slaughterhouses was 56%, and in the traditional market was 66%.
