Abstract

In the city of ternate the market demand for sweet corn is very high and sweet com is still imported from qutside the region such as North Halmahera regency, West Halmahera, East Halmahera, dan South Halmahera. So that sweet corn is still available. So we together with students and the community formed a group to take advantage of the narrow sleeping area for cultivating sweet corn using multipurpose liquid organic fertilizer. The results of the activity showed thad using multipurpose liquid organic fertilizer on corn cultivation could increase sweet corn production, sustainable land and corn available on the market.

Abstract

Stunting is one of the global nutritional problems in children, where around 161 million toddlers in the world experience stunting. Education and family understanding of nutrition have an impact on stunting. West Halmahera Regency ranks first in the number of stunted toddlers compared to other districts/cities in North Maluku. The prevalence of children under five (toddlers) who have short and very short nutritional status in 2018 was 35.26%. When viewed from the consumption patterns of toddlers in Bangko Hamlet, they generally consume more than one type of carbohydrate, including rice, cassava, and sago. Most of them only consume vegetable side dishes such as tempeh and tofu 2-6 times per week. As for animal-based dishes, more than 90% of them consume these every day and at least once a day. The general objective of this PKM is to improve the knowledge and skills of mothers of toddlers in compiling menus and processing local fish-based food ingredients as an effort to prevent stunting in toddlers. The method used in this study was to socialize and demonstrate fish-based menus in an effort to reduce stunting rates as a form of prevention. The results of community service can be seen from the increase in community knowledge in three aspects: knowledge of efforts to prevent stunting (89.1%), knowledge of making banana fish porridge (73%), and knowledge of fish roulade with the addition of carrots (67.6%).

Abstract

The sheet jam was developed by reflecting on the practicality of sheet cheese. Sheet jam can be formed with the presence of hydrocolloids. Pectin is a hydrocolloid that is naturally contained in watermelon albedo. However, the use of watermelon albedo in making imitation watermelon sheet jam requires coloring and sweeteners. This study aims to obtain the physicochemical and sensory characteristics of imitation watermelon sheet jam using watermelon albedo with natural coloring and sweetener formulations. The treatments used were two types of natural dyes (roselle and sappanwood) and sweetener formulations (fructose, honey, sucrose). The psychochemical characteristics tested were water content, reducing sugar content, total acid, and color. Sensory characteristics were tested descriptively and hedonic quality. Data analysis has been carried out using OPLS-DA, followed by OPLS, and Pearson’s correlation (by SIMCA 14.1). The findings showed that the main physicochemical and sensory characteristics of imitation watermelon sheet jam were herbal aroma, fruit aroma, chewy texture, sweetness, reducing sugar, Hue (red/yellow), rollability, and overall preference. The characteristics that determine the level of preference for imitation watermelon sheet jam were rollability, sweetness, shiny appearance, and chewy taste. The sweet taste characteristic (r -0.92582) has a negative correlation with the level of preference. The presence of a doctoring agent (fructose or honey) prevents crystallization in sheet jam, which is positively correlated with preference. Coloring with Roselle and sappanwood can replace the use of watermelon flesh and can be further studied in relation to the functional characteristics that may be provided.
