Abstract

Penelitian ini mengeksplorasi pemanfaatan Kulit Kayu Balakka sebagai bahan pengental alami dalam pembuatan yoghurt. Balakka (Phyllanthus emblica) merupakan salah satu tanaman kearifan lokal Tapanuli Bagian Selatan. Penelitian dilaksanakan di Laboratorium Biologi Universitas Muhammadiyah Tapanuli Selatan, Laboratorium Sistematika Tumbuhan Herbarium Medanense (MEDA) Universitas Sumatera Utara dan Laboratorium Kimia Organik/Proses Kimia FMIPA Universitas Sumatera Utara dari Maret hingga Juli 2024, penelitian ini bertujuan untuk mengidentifikasi kandungan kimia Tanaman Balakka dan mengevaluasi proses pembuatan yoghurt dengan Ekstrak Kulit Kayu Balakka. Metode yang digunakan meliputi pembuatan ekstrak air dari Kulit Kayu Balakka dan pengujian kandungan kimianya, seperti terpenoida, flavonoid, tanin, dan polifenol. Hasil menunjukkan bahwa Ekstrak Kulit Kayu Balakka dapat meningkatkan kualitas yoghurt, dengan uji organoleptik menunjukkan perbandingan optimal antara yoghurt dan Ekstrak Kulit Kayu Balakka adalah 1 : 1 (Y1B1). Kandungan Tanin dan Polifenol pada Ekstrak Kulit Kayu Balakka memberikan pengaruh terhadap kekentalan yoghurt, dikarenakan keduanya mengandung asam fenolik dimana asam fenolik memiliki fungsi sebagai aktivitas enzim yang bersifat koagulan. Penelitian ini menyoroti potensi ekonomi dan manfaat kesehatan dari penggunaan Balakka dalam industri makanan, serta memberikan edukasi kepada masyarakat tentang bahan alami ini.

Abstract

This research explores the use of Balakka Bark as a natural thickening agent in making yoghurt. Balakka (Phyllanthus emblica) is one of the local wisdom plants of Southern Tapanuli. The research was carried out at the Biology Laboratory of the Universitas Muhammadiyah Tapanuli Selatan, the Plant Systematics Laboratory of the Medanense Herbarium (MEDA) of the Universitas Sumatera Utara and the Organic Chemistry/Chemical Process Laboratory of the FMIPA University Sumatera Utara from March to July 2024. This research aims to identify the chemical content of the Balakka Plant and evaluate the process making yoghurt with Balakka Bark Extract. The method used includes making a water extract from Balakka Bark and testing its chemical content, such as terpenoids, flavonoids, tannins and polyphenols. The results show that Balakka Bark Extract can improve the quality of yoghurt, with organoleptic tests showing the optimal ratio between yoghurt and Balakka Bark Extract is 1 : 1 (Y1B1). The tannin and polyphenol content in Balakka Bark Extract influences the viscosity of yoghurt, because both contain phenolic acids, where phenolic acids function as coagulant enzyme activities. This research highlights the potential economic and health benefits of using Balakka in the food industry, as well as providing education to the public about this natural ingredient.

Abstract

Local wisdom education can preserve traditional scripts (such as Tulak-Tulak) which are threatened with extinction by incorporating them into learning. This study aims to improve students' understanding of the Animal Life Cycle material through the application of a deep learning approach based on the Tulak-Tulak script as an effort to digitize and preserve Mandailing culture. The study was conducted at SD Negeri 150 Tano Bato, Mandailing Natal Regency, with 22 fourth-grade students as subjects. The method used was classroom action research (CAR) consisting of two cycles, each consisting of the planning, action, observation, and reflection stages. Data were collected through observation, interviews, and written tests. The results of the study showed a significant increase in student learning outcomes, with the percentage of completion increasing from 23.8% in Cycle I to 90.9% in Cycle II. The application of a deep learning approach based on meaningful, mindful, and joyful learning has been proven to improve students' conceptual understanding and foster higher learning interest. The integration of the Tulak-Tulak script in learning not only provides a contextual and interactive learning experience, but also introduces and preserves local cultural values ​​through the science learning process. Thus, the implementation of the Tulak-Tulak script-based deep learning approach is an effective innovation in improving the quality of learning while strengthening efforts to digitize regional cultural heritage in elementary education environments.
