Abstract

Yellow pumpkin (Cucurbita moschata) is a horticultural plant belonging to the Cucurbitaceae family. Yellow pumpkin fruit contains polysaccharides, various vitamins (including β-carotene, vitamin A, vitamin B2, tocopherol, vitamin C, and vitamin E). The abundant β-carotene in yellow pumpkin fruit has been proven to have activity in combating the negative effects of free radicals. This study aimed to determine the levels of β-carotene, total flavonoids, total phenols, and antioxidant activity in yellow pumpkin fruit (Cucurbita moschata) extracted using the maceration method with 96% ethanol solvent. The extract was qualitatively tested using thin-layer chromatography (TLC) and quantitatively tested using a UV-Vis spectrophotometer. Antioxidant activity was performed using DPPH method. The total flavonoid content in the yellow pumpkin fruit extract was 1.8 ± 0.025 mgQE/g extract, and the total phenol content was 13.9 ± 0.04 mg GAE/gram extract. Meanwhile, the β-carotene content was 16.99%, and the antioxidant activity of the yellow pumpkin fruit extract resulted in an IC50 value of 12.13 ppm, which can be classified as a very strong antioxidant.

Abstract

Indonesia memiliki kekayaan tumbuhan yang merupakan suplay bahan baku untuk obat tradisional. Kegiatan ini bertujuan untuk memberikan pengetahuan mendalam tentang manfaat serai pandan untuk kesehatan tubuh, meningkatkan pengetahuan dan keterampilan peserta dalam memanfaatkan tanaman herbal serai pandan di sekitar mereka dan mendorong peserta pelatihan untuk menciptakan beragam produk herbal dengan menggunakan serai pandan. Pelatihan dilakukan di kelurahan Telaga Biru Kota Banjarmasin dengan total peserta 31 orang. Tanaman serai dan pandan sering dijumpai dan mudah didapatkan di masyarakat Banjarmasin. Pembuatan teh celup serai pandan menjadi salah satu produk inovatif yang dapat dikembangkan untuk meningkatkan nilai tambah dari serai pandan di Masyarakat Banjarmasin. Hasil tes pretest dan postest menunjukkan bahwa ada peningkatan pengetahuan wawasan pada saat sebelum pelatihan dan setelah pelatihan yaitu dari 49,03% menjadi 82,90% di kota Banjarmasin. Kesimpulan ini menunjukkan adanya peningkatan pengetahuan dari materi pelatihan yang disampaikan dan dapat dipahami dengan baik oleh Masyarakat.Kata Kunci: Pelatihan, Teh celup, Herbal, Sereh, PandanIndonesia has a wealth of plants which supply raw materials for traditional medicine. This community empowerment program (prodamat) aims to provide in-depth knowledge about the benefits of pandan lemongrass for body health, increase participants' knowledge and skills in utilizing pandan lemongrass herbal plants around them and encourage training participants to create various herbal products using pandan lemongrass. The training was carried out in the Telaga Biru sub-district, Banjarmasin City with a total of 31 participants. Lemongrass and pandan plants are often found and easy to obtain in the people of Banjarmasin. Making pandan lemongrass tea bags is one of the innovative products that can be developed to increase the added value of pandan lemongrass in the Banjarmasin community. The results of the pretest and posttest showed that there was an increase in insight knowledge before the training and after the training, namely from 49.03% to 82.90% in the city of Banjarmasin. This conclusion shows that there is an increase in knowledge from the training material delivered and can be well understood by the community.
