Abstract

ABSTRAK Wilayah kerja Puskesmas Kintamani III masih menghadapi masalah stunting yang disebabkan oleh kurangnya pengetahuan ibu balita tentang pengenalan Makanan Pendamping ASI dan kesehatan tumbuh kembang anak. Survei sebelumnya menunjukkan 37,6% ibu memiliki pengetahuan yang kurang tentang stunting. Wawancara dengan Kader Pembangunan Manusia pada Maret 2024 mengidentifikasi tiga masalah utama di Desa Daup, yaitu kasus stunting, kurangnya kemampuan ibu balita dalam pengukuran pertumbuhan, serta kurangnya pemanfaatan potensi pangan lokal. Program ini bertujuan mewujudkan Desa Daup sebagai Desa SIAGA (Siap Deteksi Dini dan Cegah) Stunting dengan meningkatkan pengetahuan, keterampilan, dan kemandirian ibu dan kader kesehatan dalam pencegahan dan deteksi dini stunting melalui pemanfaatan pangan lokal.  Kegiatan ini dilaksanakan melalui lima tahapan yaitu sosialisasi, pelatihan, penerapan teknologi, pendampingan dan evaluasi serta keberlanjutan program. Fokus kegiatan yaitu pengukuran berat badan, tinggi badan, lingkar kepala anak, serta pengolahan pangan lokal daging dan telur ayam kampung. Kegiatan ini berhasil meningkatkan pengetahuan, keterampilan dan kemandirian ibu dan kader kesehatan (15 orang/ 100%) terkait deteksi dini stunting dan pemanfaatan pangan lokal. Masyarakat Desa Daup berhasil mewujudkan Desa SIAGA Stunting, dengan ibu balita dan kader kesehatan yang lebih mandiri dan efektif dalam pencegahan serta deteksi dini stunting melalui pemanfaatan potensi pangan lokal.  Kata Kunci: Desa Siaga Stunting, Pemberdayaan, Pengolahan Potensi Pangan Lokal, Telur Ayam Kampung, Daging Ayam KampungABSTRACT The working area of Kintamani III Health Center still faces stunting problems caused by the lack of knowledge of mothers about the complementary foods of breast milk and the health of child growth and development. A previous survey showed that 37.6% of mothers had insufficient knowledge about stunting. Interviews with Human Development Cadres in March 2024 identified three main problems in Daup Village, namely stunting cases, lack of ability of mothers in measuring growth, and lack of utilization of lokal food potential. This program aims to realize Daup Village as a SIAGA Village (Ready for Early Detection and Prevention) of Stunting by increasing the knowledge, skills, and independence of mothers and health cadres in the prevention and early detection of stunting through the utilization of lokal food. This activity is carried out through five stages, namely sosialization, training, application of technology, assistance and evaluation and program sustainability. The focus of the activity is measuring the weight, height, head circumference of children, and processing lokal food meat and eggs from lokal chickens. This activity succeeded in increasing the knowledge, skills and independence of mothers and health cadres (15 people/100%) regarding early detection of stunting and the utilization of lokal food. The Daup Village community has succeeded in realizing the SIAGA Stunting Village, with mothers and health cadres who are more independent and effective in preventing and early detection of stunting through the utilization of lokal food potential. Keywords: Lokal Chicken Eggs, Lokal Chicken Meat, Processing of Lokal Food Potential, Stunting Alert Village, Empowerment

Abstract

Increased awareness of healthy lifestyles has spurred the growth of functional food trends among communities. Iron deficiency causes anemia, a major nutritional problem in Indonesia. Mangrove crab shells are a local source of iron. In most cases, the edible portion of crabs is limited to the meat, while the shells are discarded, leading to their high potential as a source of waste. The purpose of this study was to determine the effect of adding mangrove crab shell powder on the iron content of cookies. This study employed an experimental design using a Complete Randomized Design (CRD), with treatments of adding different concentrations of mangrove crab shell powder (0%, 3%, 6%, 9%, 12%, 15%). The data were analyzed using ANOVA and Duncan’s multiple range test. Findings indicated that adding mangrove crab shell powder significantly affected the iron content of the cookies. The iron content of the modified cookies ranged from 64.13 to 187.54 mg. The higher the concentration of crab shell flour added, the higher the iron content of the cookies. It is recommended that further research be conducted, encompassing organoleptic evaluation, microbiological contamination analysis, and heavy metal contamination assessment, to ensure the product's safety and quality. It is hoped that this research can serve as a reference on the use of crab shell waste as a source of iron that is beneficial to health.
