Abstract

Background: Dyslipidemia is a significant risk factor for cardiovascular disease. The high prevalence of dyslipidemia is caused by the habitual consumption of foods contain saturated fats, such as beef. Therefore, meat analog made from plant-based ingredients is a potential alternative due to its high protein content and low fat content, especially regarding saturated fats. Objectives: To determine the effect of pumpkin seeds and straw mushroom combination with lesser yam as a binder on proximate and amino acid profile of meat analog. Methods: This study used a completely randomized design with three formulations based on the proportions of pumpkin seed flour and straw mushroom flour, such as F1 (75%:25%), F2 (50%:50%), and F3 (25%:75%). Each formulation is added with 25 g lesser yam puree. Proximate analysis was conducted to determine moisture, ash, protein, fat, and carbohydrate, with analysis of amino acid profile of meat analog. Statistical analysis of the data was conducted using ANOVA and Duncan’s Multiple Range (DMRT) test. Results: The three formulations of meat analogue had moisture 42.19-42.29%, ash 2.81-4.34%, protein 15.50-16.90%, fat 3.86-14.08%, carbohydrate 24.01-33.98%, and total amino acids 11.97-14.60%. The results showed that the three formulations of pumpkin seed flour and straw mushroom flour significantly affected ash content (p-value=0.020), fat content (p-value<0.001), carbohydrate content (p-value=0.004), as well as the amino acids threonine (p-value=0.019) and lysine (p-value=0.036). Conclusions: The combination of pumpkin seed flour, straw mushroom flour, and lesser yam as a binder had a significant effect on the proximate and amino acid profile of the meat analog.

Abstract

Women of reproductive age (WRA) are at reproductive years to getting pregnant, so their nutritional status need to be considered. Currently, WRA face double burden of malnutrition. Obesity is a common problem in WRA which causes fertility problems, preeclampsia and gestational diabetes during pregnancy, fetal macrosomia, and miscarriage. The aim of this community service is to provide knowledge to WRA so that they can prevent and manage obesity. This activity uses counseling methods with flipchart as media. The counseling include waist circumference measurement training and education of increasing fiber consumption through the T-model plate. The activity is participated by 30 WRA in Pasir Putih, Depok. In this community service activity, an evaluation is conducted with questions related to measurements and the T-model plate. The evaluation is done through analysis using the Wilcoxon test, and it is found that there is a difference in knowledge between the pre-test and post-test results with p-value 0,000. Meanwhile, the average pre-test score is 56,83, while the average post-test score increases to 84,33. This indicates that the community service activity is effective in bringing about changes in knowledge among WRA regarding obesity, as evidenced by an increase in knowledge scores. Knowledge related waist circumference measurement and the T-model plate is expected to increase awareness to prevent and manage obesity. Wanita usia subur (WUS) berada pada usia produktif untuk memperoleh keturunan sehingga status gizinya perlu untuk diperhatikan. Saat ini, WUS menghadapi masalah gizi ganda yang salah satunya adalah obesitas. Obesitas pada WUS dapat menyebabkan masalah kesuburan, preeklampsia dan diabetes gestasional saat hamil, penurunan obesitas ke janin, hingga keguguran semasa kehamilan. Tujuan dari pengabdian masyarakat ini untuk memberikan pengetahuan kepada WUS agar dapat mencegah dan mengatasi obesitas. Kegiatan ini menggunakan metode penyuluhan dengan media flipchart atau lembar balik. Penyuluhan ini terdiri dari pelatihan pengukuran lingkar perut dan edukasi peningkatan konsumsi serat melalui piring makan model T. Kegiatan dilaksanakan secara langsung kepada 30 WUS di daerah Pasir Putih, Kota Depok. Pada kegiatan pengabdian masyarakat ini dilakukan evaluasi dengan pertanyaan terkait pengukuran dan piring makan model T. Evaluasi dilakukan melalui analisis menggunakan uji Wilcoxon dan didapatkan ada perbedaan pengetahuan dari hasil pre-test dan post-test dengan nilai p-value 0,000. Sementara itu, nilai rata-rata pre-test didapatkan sebesar 56,83, sementara nilai rata-rata post-test naik menjadi 84,33. Hal tersebut menunjukkan bahwa kegiatan pengabdian efektif dalam memberikan perubahan pengetahuan pada WUS terkait obesitas yang dibuktikan dengan adanya peningkatan skor pengetahuan. Pengetahuan terkait cara mengukur lingkar perut dan piring makan model T diharapkan dapat meningkatkan kesadaran dalam upaya mencegah dan mengatasi obesitas.
