Abstract

Indonesia is one of the countries that produces porang and gembili tubers that can be processed into value-added food products. One innovation that can be developed is the analog rice made from these two tubers. Porang and gembili tubers are known to contain bioactive compounds and dietary fiber that provide functional benefits, such as lowering blood glucose levels, improving lipid profiles, and improving digestive tract health. This study aimed to evaluate the physical and proximate qualities of three analog rice formulations using commercial porang and gembili flours. The experimental design used was a Completely Randomized Design (CRD) with two replications, conducted from August to December 2024 at the Technopark Laboratory (Faculty of Agricultural Technology) and Nutrition Analysis Laboratory (Department of Community Nutrition, FEMA IPB). The formulations had porang and gembili ratios of F1 (75:25), F2 (50:50), and F3 (25:75). Data were analyzed using One-Way ANOVA preceded by variance homogeneity testing, followed by DMRT multiple range test. The results showed that cooking time and bulk density differed significantly between F1, F2, and F3. The expansion ratio, degree of breakage, and hardness differed significantly among F3, F1, and F2. F3 exhibited the highest brightness (L*) value. Proximate analysis revealed significant differences in ash, moisture, protein, fat, and carbohydrate contents among all formulations. The F3 formulation, which had a higher proportion of gembili, demonstrated the greatest potential as a staple carbohydrate source. However, further sensory and consumer acceptability improvements are needed.

Abstract

The prevalence of obesity has significantly increased, affecting millions of people worldwide. Obesity is a growing public health concern worldwide. According to the statistical data, millions of individuals were classified as obese. Policy plays a crucial role as a macro-level factor in shaping behavioral changes. This study aimed to analyze global trends in health policy research on obesity and its impact on Non-Communicable Diseases (NCDs) from a bibliometric perspective using Scopus-indexed documents. Data analysis methods and visualization techniques were applied to publications from 2014 to 2023 using the keywords (overweight OR obesity OR obes* OR over$weight) AND (health AND (policy OR regulation OR procedure OR system) AND ncd*). RStudio and VOSviewer were utilized for bibliometric publication statistical analysis, resulting in 132 publications from the Scopus metadata. We used bibliometric analysis to examine the published literature and visualize development trends regarding the effects of health policies on obesity. These findings indicate that health policies related to obesity focus on the mechanisms that affect NCDs. The identified policies included taxes on unhealthy foods and food subsidies. Health policies play a crucial role in preventing obesity and reducing its impact on NCDs. Collaboration between the government and various sectors of society is necessary to implement effective policies for the prevention of obesity. Future policies are expected to be adopted by each country regarding unhealthy food tax policies, food subsidy policies, Early Care and Education (ECE) policies, and Health in All Policies (HiAP).

Abstract

The hospital provides services intended for the recovery of its patients without neglecting other promotive, preventive and rehabilitative roles, one of which is through nutrition service activities in the hospital. Food distribution is a series of food delivery activities according to the type of food and the number of patients. The purpose of this study was to conduct research to analyze the workload and calculate the need for distribution personnel at the Nutrition Installation at PKU Muhammadiyah Sukoharjo Hospital. This study used a qualitative research design with an observational design. Purposive sampling technique was used for sampling. The workload that has been obtained is then used to calculate workforce requirements using the Work Load Indicators Staff Need (WISN) method. Analysis of the workload of distribution workers in the morning shift and afternoon shift respectively amounted to 86.33% and 73,2% which is in the heavy category because it exceeds 80%. To achieve a balanced need for distribution personnel, it is necessary 10 distribution personnel.

Abstract

Gembili tubers have sufficient carbohydrate content compared to other tubers. Gembili tubers contain bioactive compounds that can be beneficial for the body. The antioxidants contained in gembili tubers are phenol, diosgenin, and dioscorin. Dietary fiber is also contained in gembili tubers which can provide benefits for the body such as overcoming diabetes, preventing digestive disorders, lowering cholesterol levels. These tubers can be processed into tuber flour, starch, and composite flour. In addition, this tuber can be used as an alternative non-rice food source. Turmeric as a colorant for instant yellow rice of gembili tubers which contains antioxidants, anti-inflammatory, antimutagenic, anticancer, and antimicrobial properties. So far, no one has made instant yellow rice made from gembili tubers. Purpose: The research is aimed to determine the content of antioxidants activity and dietary fibers in instant yellow rice from gembili tubers with different drying temperature variations of 70oC, 80oC, and 90oC. Methodology: The experiment of instant yellow rice was conducted using a single-factor Completely Randomized Design (CRD) method with temperature variations of 70oC, 80oC, and 90oC for three hours. Testing of dietary fiber using the multienzyme method and testing of antioxidant activity using the RSA IC50 method. The research was carried out in two treatment replications with two laboratory analyzes. Furthermore, the obtained data were analyzed using the One-Way ANOVA test, and if the results showed a treatment effect, then proceed using the DMRT test with = 5%. Results: The results of this study showed that the dietary fiber content of instant yellow rice from Gembili tubers had no effect on variations in drying temperature with p = 0.685 (p ≥ 0.05). However, based on three different temperature treatments, the highest dietary fiber content was at 70OC temperature treatment, which was 10.8047%. Whereas antioxidant activity tests on instant yellow rice of Gembili tubers indicated that there was an effect of drying temperature variations on antioxidant activity with p = 0.001 (p < 0.05). The variation of the drying temperature of 90OC shows the highest antioxidant activity, which is 6162,7008 ppm. The lower of the drying temperature, so the lower of the level antioxidant activity. Applications/Originality/Value: This diversification product of instant yellow rice of gembili tubers is expected can support the national food security program by reducing rice consumption rate without causing substantial change in the tradition of the Indonesian people.
