Abstract

ABSTRAKBahan Tambahan Pangan (BTP) adalah zat yang ditambahkan ke dalam makanan untuk menjaga kualitas seperti tekstur, konsistensi, penampilan, aroma, rasa, dan tingkat keasaman. Boraks termasuk dalam bahan tambahan yang dilarang penggunaannya dalam makanan karena berpotensi menimbulkan dampak buruk bagi kesehatan. Konsumsi boraks dapat menyebabkan gejala seperti batuk, iritasi mata, muntah, kesulitan bernapas, bahkan kematian. Penelitian ini bertujuan untuk menganalisis adanya boraks dalam cendol dengan metode kualitatif, yaitu uji nyala api dan uji kertas tumerik. Sampel diambil secara purposive sampling dari empat lokasi berbeda di wilayah Sungai Raya, Pontianak. Hasil uji kertas tumerik menunjukkan bahwa keempat sampel cendol tidak mengalami perubahan warna dari kuning menjadi merah, mengindikasikan hasil negatif. Uji nyala api juga menghasilkan warna nyala yang tidak berwarna hijau, menegaskan bahwa keempat sampel negatif mengandung boraks. Dengan demikian, penelitian ini menyimpulkan bahwa cendol yang diuji tidak mengandung boraks.Kata kunci : Boraks, Cendol, Uji Nyala, Uji Kertas Tumerik  ABSTRACTFood Additives (BTP) are substances added to food to maintain its quality, such as texture, consistency, appearance, aroma, taste, and acidity level. Borax is one of the additives prohibited in food due to its potential health risks. Consuming borax can lead to symptoms like coughing, eye irritation, vomiting, difficulty breathing, and even death. This study aims to analyze the presence of borax in cendol using qualitative methods, specifically the flame test and turmeric paper test. Samples were collected using purposive sampling from four different locations in Sungai Raya, Pontianak. The turmeric paper test results indicated no color change from yellow to red in all four cendol samples, suggesting negative results. Similarly, the flame test did not produce a green flame, confirming that the samples were free of borax. Therefore, the study concludes that the tested *cendol* samples do not contain borax.Keywords : Borax, Cendol, Flame Test, Tumeric Paper Test

Abstract

Upper gastrointestinal disorders such as Gastroesophageal Reflux Disease (GERD) are increasingly prevalent in the community, primarily due to irregular eating patterns and unhealthy lifestyles. The adverse effects associated with long-term use of synthetic medications have prompted a shift toward natural remedies. One approach to support this transition is the introduction of a herbal juice made from turmeric, pears, and carrots as a preventive and promotive measure against GERD, particularly targeting homemakers. This program was implemented through a Thematic Community Service (KKN) activity in Kapur Village, Sungai Raya District, West Kalimantan, involving a series of sessions including material presentation, group discussions, hands-on training in herbal juice preparation, and evaluation through pretest and posttest assessments. The activity engaged nine participants from the Family Welfare Empowerment (PKK) group. Evaluation results revealed an improvement in participants' understanding, as reflected in the increase of average scores from 70.22 (pretest) to 80.44 (posttest). The success of this program was supported by local authorities and the community's enthusiastic participation. Overall, the activity proved effective in enhancing public health literacy related to digestive health and in promoting sustainable community empowerment by utilizing local natural resources.
