Abstract

Kopi arabika (Coffea arabica) mempunyai mutu cita rasaterbaik dibandingkan jenis kopiyang lain, dengan ciri biji berbentuk putih kehijauan dan daun hijau tua. Secara umum,pengolahan kopi di Indonesia terdiri dari pengolahan secara kering, secara basah, dan luwak.Penelitian ini bertujuan untuk mengetahui mutu kopi arabika secara organoleptik (warna, tekstur,aroma, rasa) melalui proses pengolahan bahan baku (kering, basah, luwak). Berat biji kopiarabika untuk masing-masing perlakuan adalah 1000 gram. Setelah dilakukan prosespengolahan, biji kopi disangrai dan digiling, dilakukan analisis rendemen dan kadar air, kemudiandilakukan penyeduhan dengan air panas 500 mL. Setelah itu dilakukan pengamatan sensori(warna, tekstur, aroma, rasa). Hasil penelitian menunjukkan bahwa rendemen tertinggi padaperlakuan luwak yaitu 95,7% dan kadar air yang tertinggi pada perlakuan kering yaitu 4,86%,dimana kadar air ini sesuai dengan persyaratan Standar Nasional Indonesia (SNI) yaitu maksimal7%. Berdasarkan uji organoleptik, warna terbaik adalah perlakuan basah dengan nilai sebesar4,49; tekstur terbaik adalah perlakuan kering sebesar 3,85; dan aroma serta rasa terbaik adalahperlakuan luwak dengan nilai masing-masing sebesar 5,17 dan 3,83.

Abstract

Daun jambu biji mengandung tanin yang dapat berperan sebagai antioksidan, anti diare, dan anti bakteri. Penelitian ini bertujuan untuk mengetahui konsentrasi perbandingan terbaik antara cokelat tiramisu dengan ekstrak daun jambu biji dan mengetahui kadar air, total lemak, serta sifat organoleptik dari cokelat tiramisu yang dihasilkan. Perlakuan penelitian yaitu cokelat tiramisu dengan konsentrasi (100%, 95%, 90%, 85%) dan ekstrak daun jambu biji dengan konsentrasi (0%, 5%, 10%, 15%). Analisis data menggunakan metode Rancangan Acak Lengkap (RAL), dengan empat taraf perlakuan dan tiga kali ulangan. Hasil penelitian ini diperoleh bahwa semakin banyak ekstrak daun jambu yang ditambahkan akan mengakibatkan kadar air semakin tinggi, kadar lemak semakin rendah, dan sifat organoleptik yang semakin tidak disukai panelis. Kadar lemak permen cokelat tiramisu dengan penambahan ekstrak daun jambu biji yang dihasilkan dalam penelitian ini masih memenuhi SNI 7934:2014 Cokelat dan produk-produk cokelat

Abstract

Factors that influence Crude Palm Oil (CPO) production is the increase in CPO consumption and with the implementation of CPO production process management, it can meet domestic and export demand. The purpose of this study was to determine the application of CPO production process management at “X” Co. This research has been conducted from May to June 2018. The data collection technique was purposive sampling with descriptive analysis. The results obtained indicate that based on the implementation of production management, improvements are still needed through increasing CPO production by increasing the capacity of production machines from 2.5 tons per lorry to 10 tons per lorry. In addition, it is also necessary to improve the quality of human resources and products to increase the company's competitiveness. Keywords: management, production, demand, CPO, planning

Abstract

This study aims to determine the best concentration on the comparison of jackfruit skin starch and chitosan with the addition of virgin coconut oil (VCO) as a plasticizer and the characteristics of bioplastics. The research method consisted of the following steps: extracting jackfruit skin starch using two processes, namely the delignification process and the bleaching process. The production of bioplastics was carried out with the following treatments: Jackfruit skin starch: chitosan, each with a ratio of P1= 100%:0%; P2 = 85%:15%; P3 = 70%:30% and P4 = 55%:45% with the addition of VCO of 10% of the total starch of jackfruit skin and chitosan and stirred for 1 hour until homogeneous. The resulting solution was then printed on a glass mold with a size of 20 x 15 cm and dried in an oven at 60oC for 6 hours. The bioplastics were cooled at room temperature for 6 hours then removed from the glass plate and stabilized in a desiccator before being analyzed. Data analysis used the Completely Randomized Design (CRD) method with 4 treatment levels and three replications. The results showed that the addition of chitosan and VCO had a very significant effect (p<0.05) on the characteristics of bioplastics. The best treatment ratio was obtained in the ratio of jackfruit skin starch: chitosan 55%:45% with each thickness value of 0.1682 mm, tensile strength of 0.5933 MPA, 20% water absorption and 50% biodegradability test which can be degraded for 3 weeks.
