Abstract

This study aims to determine the effect of administering a mixture of turmeric extract and honey through drinking water on the physical quality of broiler meat.The broilers were divided into four treatment groups: P0 (control, no turmeric extract and honey), P1 (1% mixture of turmeric extract and honey), P2 (2% mixture of turmeric extract and honey), and P3 (3% mixture of turmeric extract and honey) through drinking water. Observed parameters included meat pH, water-holding capacity (WHC), cooking loss, drip loss, and meat color. Increasing the level of turmeric extract and honey tended to enhance the meat color due to the absorption of curcumin into the tissues. The pH values remained within the normal range (5.6–5,9), indicating that the meat was in good condition and fit for consumption. Water holding capacity (27–32%), cooking loss (33–34%), and drip loss (12–14%) were all within the normal range, with a tendency for increased water holding capacity in treatments supplemented with turmeric and honey. In terms of meat color, a decrease in lightness (L*) and redness (a*) was observed in the turmeric and honey extract treatments compared to the control, although the differences were not statistically significant. However, the yellowness value (b*) in treatment P3 showed a significant decrease, possibly due to the degradation of curcumin pigments at high concentrations. ABSTRAK Penelitian ini bertujuan untuk mengetahui pengaruh pemberian campuran sari kunyit dan madu melalui air minum terhadap kualitas fisik daging broiler. Broiler diberikan perlakuan dengan empat kelompok, yaitu P0 (tanpa penambahan sari kunyit dan madu), P1 = 1% (campuran sari kunyit dan madu), P2 = 2% (campuran sari kunyit dan madu) P3 = 3% (campuran sari kunyit dan madu) melalui air minum. Parameter yang diamati meliputi pH daging, daya ikat air (DIA), susut masak, susut mentah dan warna daging. Peningkatan level pemberian sari kunyit dan madu cenderung meningkatkan warna daging akibat zat kurkumin yang meresap ke dalam jaringan. Nilai pH daging masih berada dalam kisaran normal (5,6–5,9), yang menunjukkan bahwa daging dalam kondisi baik dan layak konsumsi. Daya ikat air (27-32%), susut masak (33-34%), dan susut mentah (12-14%) masing- masing juga berada dalam rentang normal, dengan kecenderungan peningkatan daya ikat air pada perlakuan dengan kunyit dan madu. Dari aspek warna, terjadi penurunan kecerahan (L*) dan kemerahan (a*) pada perlakuan sari kunyit dan madu dibanding kontrol, meskipun tidak signifikan. Namun, nilai kekuningan (b*) pada P3 mengalami penurunan signifikan, yang kemungkinan disebabkan oleh degradasi pigmen kurkumin dalam dosis tinggi.

Abstract

This study aimed to determine the effect of adding a mixture of turmeric extract (Curcuma domestica Val.) and honey (Apis sp.) through drinking water on the performance of broiler chickens, as well as to identify the optimal supplementation level. The research was conducted in Cengolo Village, Tabanan District, Tabanan Regency, for a duration of 25 days. A Completely Randomized Design (CRD) was used, consisting of four treatments and five replications, with each treatment containing four broiler chickens. The study utilized a litter-type housing system, with each pen measuring 80 cm in length and 90 cm in width, and the pen dividers were made of plywood. The broilers were assigned to four treatment groups: P0 (without turmeric extract and honey), P1 (1% mixture of turmeric extract and honey), P2 (2% mixture), and P3 (3% mixture), all administered through drinking water. Observed variables included feed intake, water intake, initial and final body weight, weight gain, and feed conversion ratio (FCR). The results showed that supplementation with a 2% mixture of turmeric extract and honey significantly increased (P<0.05) weight gain and final body weight. However, there were no significant differences (P>0.05) observed in feed intake, water intake, and feed conversion ratio compared to P0, although the values were numerically higher. It can be concluded that supplementation with a 2% mixture of turmeric extract and honey through drinking water can improve weight gain and final body weight in broilers. ABSTRAK Penelitian ini bertujuan untuk mengetahui pengaruh pemberian campuran sari kunyit (Curcuma domestica Val.) dan madu (Apis sp.) melalui air minum terhadap performa broiler serta menentukan level pemberian yang terbaik. Penelitian dilaksanakan di Desa Cengolo, Kecamatan Tabanan, Kabupaten Tabanan, berlangsung selama 25 hari, menggunakan rancangan acak lengkap (RAL) dengan empat perlakuan dan lima ulangan serta setiap perlakuan diisi dengan 4 ekor ayam. Kandang yang digunakan dalam penelitian ini adalah kandang litter. Setiap petak kandang memiliki panjang 80 cm dan lebar 90 cm dan sekat pada kandang terbuat dari triplek. Broiler diberikan perlakuan dengan empat kelompok, yaitu P0 (tanpa penambahan sari kunyit dan madu), P1 = 1% (campuran sari kunyit dan madu), P2 = 2% (campuran sari kunyit dan madu) dan P3 = 3% (campuran sari kunyit dan madu) melalui air minum. Variabel yang diamati meliputi konsumsi ransum, konsumsi air minum, bobot badan awal dan akhir, pertambahan bobot badan, dan feed convertion ratio. Hasil penelitian menunjukkan bahwa penambahan sari kunyit dan madu melalui air minum pada level 2% dapat meningkatkan secara nyata (P<0,05) pertambahan bobot badan dan bobot badan akhir broiler, namun pada variabel konsumsi ransum, konsumsi air minum, dan feed convertion ratio menunjukan hasil yang tidak berbeda nyata (P>0,05) lebih tinggi dari P0. Dapat disimpulkan bahwa penambahan campuran sari kunyit dan madu dengan level 2% melalui air minum dapat meningkatkan pertambahan bobot badan dan bobot akhir broiler.

Abstract

Broiler meat is a strategic commodity that has shown increased production alongside milk, eggs, and beef. One of the advantages of modern broiler chickens is their rapid growth rate. However, this rapid growth comes with the consequence of increased body fat accumulation, particularly in the abdominal area. Excess abdominal fat not only reduces the percentage of carcass meat preferred by consumers but also decreases the economic value and health of broiler chickens. This study aimed to determine the effect of mangosteen peel juice (Garcinia mangostana L.) administered through drinking water on the abdominal fat of broilers. The study was conducted on Jalan Jalak Putih, Dajan Peken Village, Tabanan Regency, and lasted for 35 days. A completely randomized design (CRD) was used with four treatments and four replications, with each treatment unit consisting of 4 broilers, totaling 64 broilers. The observed variables included slaughter weight, cushion fat, mesenteric fat, gizzard fat, and abdominal fat. The treatments consisted of drinking water supplemented with 0% mangosteen peel juice (P0) as a control, 1% (P1), 2% (P2), and 3% (P3). The results showed that abdominal fat in broilers given P1, P2, and P3 treatments was not significantly different (P>0.05) from the control (P0). Based on these results, it can be concluded that adding mangosteen peel juice to drinking water at concentrations of 1%, 2%, and 3% does not have a significant effect on the abdominal fat of broilers. ABSTRAK Daging broiler merupakan komoditas strategis yang sedang menunjukkan kenaikan produksi disamping produk susu, telur dan daging sapi. Salah satu keunggulan ayam broiler modern adalah laju pertumbuhan yang sangat cepat, namun pertumbuhan yang pesat ini memiliki konsekuensi berupa akumulasi lemak tubuh, terutama di bagian abdominal. Lemak abdominal yang berlebih tidak hanya mengurangi persentase daging karkas yang disukai konsumen, tetapi juga menurunkan nilai ekonomis dan kesehatan ayam broiler. Penelitian ini bertujuan untuk mengetahui pengaruh pemberian jus kulit manggis (Garcinia Mangostana L.) melalui air minum terhadap lemak abdominal broiler. Penelitian ini dilaksanakan di Jalan Jalak Putih, Desa Dajan Peken, Kabupaten Tabanan yang berlangsung selama 35 hari. Penelitian menggunakan rancangan acak lengkap (RAL) dengan empat perlakuan dan empat ulangan dan setiap unit perlakuan terdiri dari 4 ekor broiler, sehingga digunakan 64 ekor broiler. Variabel yang diamati adalah berat potong, lemak bantalan, lemak mesentrium, lemak empedal dan lemak abdominal. Perlakuan yang diberikan adalah pemberian air minum yang ditambahkan 0% jus kulit buah manggis (P0) sebagai kontrol, 1% (P1), 2% (P2), dan 3% (P3). Hasil penelitian menunjukkan bahwa lemak abdominal broiler pada perlakuan P1, P2 dan P3 tidak berpengaruh nyata (P>0,05) dibanding P0. Berdasarkan hasil penelitian dapat disimpulkan bahwa penambahan jus kulit buah manggis dalam air minum menunjukkan dengan dosis 1%, 2%, dan 3% tidak memberikan pengaruh nyata terhadap lemak abdominal broiler.

Abstract

Turmeric is known to have antibacterial and antioxidant properties, while honey contains antimicrobial and immunostimulant compounds that have the potential to increase the growth and quality of broiler carcasses. This study aims to evaluate the Physical Composition of Broiler Carcasses Given a Mixture of Turmeric Juice (Curcuma domestica Val.) With Honey (Apis sp.) Through Drinking Water. The study used a completely randomized design (CRD) consisting of four treatments and five replications. The treatments consisted of P0 = 0% mixture of turmeric juice and honey, P1 = 1% mixture of turmeric juice and honey, P2 = 2% mixture of turmeric juice and honey, and P3 = 3% mixture of turmeric juice and honey. The variables observed included carcass weight, carcass percentage, meat percentage, bone percentage, and fat and skin percentage. The results showed that the administration of a mixture of turmeric juice with honey had an effect on broiler carcass variables. The highest broiler carcass weight in treatment P2 was (1671.00g/head). The highest carcass percentage was also found in P2 (81.07%), significantly different between treatments (P>0.05), the highest meat percentage was found in P2 (59.91%), but not significant (P>0.05). The lowest bone percentage was found in P2 (28.93%), with a non-significant difference (P>0.05). The lowest subcutaneous fat percentage including skin was also found in P2 (11.16%), but the difference was not significant (P>0.05). The conclusion of this study is that giving a mixture of turmeric juice and honey through drinking water as much as 2% can improve the physical composition of broiler carcasses. ABSTRAK Kunyit dikenal memiliki sifat antibakteri dan antioksidan, sementara madu mengandung senyawa antimikroba dan imunostimulan yang berpotensi meningkatkan pertumbuhan dan kualitas karkas broiler. Penelitian ini bertujuan untuk mengevaluasi komposisi fisik karkas broiler yang diberikan campuran sari kunyit (Curcuma domestica Val.) dengan madu (Apis sp.) melalui air minum. Penelitian menggunakan rancangan acak lengkap (RAL) terdiri dari empat perlakuan dan lima ulangan. Perlakuan terdiri dari P0= 0% campuran sari kunyit dan madu, P1= 1% campuran sari kunyit dan madu, P2= 2% campuran sari kunyit dan madu, dan P3= 3% campuran sari kunyit dan madu. Variabel yang diamati meliputi berat karkas, persentase karkas, persentase daging, persentase tulang, dan persentase lemak dan kulit. Hasil penelitian menunjukkan pemberian campuran sari kunyit dengan madu berpengaruh terhadap variabel karkas broiler. Berat karkas broiler tertinggi perlakuan P2 sebesar (1671,00g/ekor). Persentase karkas tertinggi juga ditemukan pada P2 (81,07%), berbeda nyata antar perlakuan (P>0,05), persentase daging tertinggi terdapat pada P2 (59,91%), namun tidak signifikan (P>0,05). Persentase tulang terendah ditemukan pada P2 (28,93%), dengan perbedaan yang non signifikan (P>0,05). Persentase lemak sub kutan termasuk kulit terendah juga terdapat pada P2 (11,16%), tetapi perbedaannya tidak signifikan (P>0,05). Kesimpulan dari penelitian ini adalah pemberian campuran sari kunyit dengan madu melalui air minum sebanyak 2% mampu memperbaiki komposisi fisik karkas broiler.

Abstract

This study aims to determine the effect of commercial ration substitution with shellfish shell flour and fish oil on the percentage of broiler carcass pieces. This research was carried out at Farm Sesetan, Faculty of Animal Husbandry, Udayana University which is located on Jalan Raya Sesetan, Denpasar, and lasted for 35 days. The design used was a Complete Random Design (CRD) consisting of 4 treatments and 4 replicas, each replica consisting of 4 one-day-old broilers. The treatment consisted of P0 (feed without the addition of shellfish meal and fish oil), P1 (feed with an additional 1% shellfish meal and 0.5% fish oil), P2 (feed with an additional 1% shellfish meal and 1% fish oil), and P3 (feed with an additional 1% shellfish meal and 1.5% fish oil). The variables observed included slaughter weight, the percentage of the carcass, and the percentage of pieces of the broiler carcass, namely the breast, upper thighs, drum stick, wings, and back. The data was analyzed using analysis of variance and if there were significant differences it was followed by the Duncan test. The results showed that the combination of shellfish shell flour and fish oil had a significantly effect (P<0.05) on the slaughter weight, but no significantly (P>0.05) on the percentage of carcasses and other commercial pieces. Based on the results of the study, it was concluded that the combination of 1% shellfish flour and 1% fish oil could increase sloughter weight of the broiler but not effect on the percentage of carcass pieces. ABSTRAK Penelitian ini bertujuan untuk mengetahui pengaruh substitusi ransum komersial dengan tepung kulit kerang dan minyak ikan terhadap persentase potongan karkas broiler. Penelitian ini dilaksanakan di Farm Sesetan, Fakultas Peternakan Universitas Udayana yang berlokasi di Jalan Raya Sesetan, Denpasar, dan berlangsung selama 35 hari. Rancangan yang digunakan adalah Rancangan Acak Lengkap (RAL) yang terdiri dari 4 perlakuan dan 4 ulangan, masing-masing ulangan terdiri dari 4 ekor broiler berumur satu hari. Perlakuan yang diberikan yaitu, P0 (pakan tanpa penambahan tepung kulit kerang dan minyak ikan), P1 (pakan dengan tambahan 1% tepung kulit kerang dan 0,5% minyak ikan), P2 (pakan dengan tambahan 1% tepung kulit kerang dan 1% minyak ikan), dan P3 (pakan dengan tambahan 1% tepung kulit kerang dan 1,5% minyak ikan). Variabel yang diamati meliputi bobot potong, persentase karkas, serta persentase potongan karkas broiler yaitu dada, paha atas, paha bawah, sayap, dan punggung. Data dianalisis menggunakan sidik ragam dan jika terdapat perbedaan yang nyata dilanjutkan dengan uji Duncan. Hasil penelitian menunjukkan bahwa pemberian kombinasi tepung kulit kerang dan minyak ikan berpengaruh nyata (P<0,05) terhadap bobot potong, namun tidak berpengaruh nyata (P>0,05) terhadap persentase karkas dan potongan komersial lainnya. Berdasarkan hasil penelitian disimpulkan bahwa pemberian kombinasi 1% tepung kulit kerang dan 1% minyak ikan dapat meningkatkan bobot potong broiler tanpa mengubah persentase potongan karkas secara signifikan.

Abstract

This study aims to determine the effect of fermented pineapple peel extract (Ananas Comous L.Merr) on the performance of Balitnak Superior Village Chickens (KUB). This study was conducted at Sesetan Farm, Faculty of Animal Husbandry, Udayana University, located at Jalan Raya Sesetan, Gang Markisa No. 6, Denpasar, Bali for 8 weeks. The design used was a Completely Randomized Design (CRD) with 4 treatments and 5 replications, so there were 20 experimental units. Each experimental unit contained 3 two-week-old KUB chickens. The four treatments were the level of fermented pineapple peel extract in drinking water for each treatment P0 0%, P1 11%, P2 12% and P3 13%. The variables observed were ration consumption, water consumption, initial and final body weight, body weight gain, feed conversion ratio (FCR). The results of the study showed that the performance of KUB chickens in treatments P1, P2, and P3 was not significantly different (P>0.05) compared to P0. Based on the results of the study, it can be concluded that the administration of fermented pineapple peel extract (Ananas Comous L.merr) through drinking water at a level of 11% can optimize feed consumption and feed conversion through FCR for Balitbangtan Superior Village Chickens (KUB). ABSTRAK Penelitian ini bertujuan untuk mengetahui pengaruh pemberian ekstrak kulit buah nanas (Ananas comosus L. Merr) terfermentasi terhadap performa Ayam Kampung Unggul Balitnak (KUB). Penelitian ini dilaksanakan di Farm Sesetan, Fakultas Peternakan Universitas Udayana, yang berlokasi di Jalan Raya Sesetan, Gang Markisa No. 6, Denpasar, Bali selama 8 minggu. Rancangan yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan 4 perlakuan dan 5 ulangan, sehingga terdapat 20 unit percobaan. Setiap unit percobaan berisi 3 ekor ayam KUB berumur dua minggu. Keempat perlakuan tersebut adalah level ekstrak kulit buah nanas terfermentasi dalam air minum masing-masing untuk perlakuan P0 0%, P1 11%, P2 12% dan P3 13%. Variabel yang diamati adalah konsumsi ransum, konsumsi air, bobot badan awal dan akhir, pertambahan bobot badan, feed convertion ratio (FCR). Hasil penelitian menunjukkan bahwa performa ayam KUB pada perlakuan P1, P2, dan P3 secara statistik berbeda nyata (P>0,05) dibandingkan dengan P0. Berdasarkan hasil penelitian dapat disimpulkan bahwa pemberian ekstrak kulit nanas (Ananas Comous L.merr) terfermentasi melalui air minum pada level 11% dapat mengoptimalkan konsumsi pakan serta konversi pakan melalui FCR terhadap ayam Kampung Unggul Balitbangtan (KUB).

Abstract

This study aims to determine the effect of replacing commercial feed with cricket flour (Gryllus mitratus Burm) on broiler digestibility. The method a completely randomized design (CRD) was used, consisting of four treatments and four replicates, with each replicate containing four broilers. The treatments administered were: commercial feed without cricket flour replacement (P0/control); replacing 2% of the commercial diet with cricket flour (P1); replacing 4% of the commercial diet with cricket flour (P2); and replacing 6% of the commercial diet with cricket flour (P3). The results showed that treatments P1, P2, and P3 did not show a significant effect (P>0,05). The results of the study can be concluded that replacing commercial feed with cricket flour at a level of 6% can increase. ABSTRAK Penelitian ini bertujuan untuk mengetahui pengaruh penggantian ransum komersial dengan tepung jangkrik (Gryllus mitratus Burm) terhadap kecernaan broiler. Metode yang digunakan adalah Rancangan Acak Lengkap (RAL) yang terdiri atas empat perlakuan dan empat ulangan, setiap ulangan berisi empat ekor broiler. Perlakuan yang diberikan adalah ransum komersial tanpa diganti tepung jankgrik (P0/kontrol); penggantian 2% ransum komersial dengan tepung jangkrik (P1); penggantian 4% ransum komersial dengan tepung jangkrik (P2); penggantian 6% ransum komersial dengan tepung jangkrik (P3). Hasil utama menunjukkan bahwa penggantian ransum komersial dengan tepung jangkrik pada level 6% dapat meningkatkan kecernaan bahan kering dan bahan organik, dan penggantian ransum komersial dengan tepung jangkrik sampai level 6% dapat meningkatkan kecernaan protein, namun tidak mempengaruhi kecernaan serat kasar pada ransum broiler.
