Safe, nutritious, quality, diverse and adequately available food is one of the main prerequisite systems in forming a food system that protects health and improves people's welfare. Food security in Indonesia itself is still not implemented optimally and efficiently because the community is still not ready and has no efforts to implement food security for individuals and primary needs at home. Natural potential that can be used as a form of food security is Ganyong Tuber. This tuber can be processed into flour that has a texture like wheat but low in gluten so it is easily digested and very good for health. Because of these various advantages, canna flour can be used as an alternative to wheat flour. By integrating food processing in the climate village program, a close relationship can be created between food security, climate change mitigation, and sustainable development for the Palasari Community.
