Transfer Ilmu Pengetahuan dan Teknologi Produksi Kombucha Bunga Kupu-kupu Antidiabetes bagi Karang Taruna Katajanom di Kelurahan Jayengan Surakarta

Abstract

Type-2 Diabetes Mellitus (T2DM) remains the second highest non communicable disease burden in Surakarta City after hypertension, with regional facilities like Puskesmas Jayengan recording substantial patient visits. Principal risk factors include high sugar and calorie-dense diets, insufficient physical activity, advancing age, and hereditary predisposition. In response, a community service team, chaired by Tiara Ajeng Listyani with members Puguh Ika Listyorini and Anna Fitriawati, implemented an empowerment program for the Katajanom Jayengan Youth Organization (Karang Taruna), supported by the Directorate of Research and Community Service, the Directorate General of Research and Development, the Ministry of Higher Education, Science, and Technology, and Universitas Duta Bangsa Surakarta for the 2026 period. The program transferred knowledge and technology for producing butterfly pea flower (Clitoria ternatea) kombucha as a functional nutraceutical beverage with natural antidiabetic properties. Methods included healthy lifestyle education, self administered blood glucose screening training, SCOBY based fermentation technology transfer, mentorship in production standardization and halal certification, and pre-test/post-test evaluations with daily blood glucose monitoring of partners. Results showed successful development of a nutraceutical product prototype, achieving an initial production target of at least 50 liters of consumption-grade output, along with improved community health evidenced by a 15–20% reduction in blood glucose levels during routine monitoring. The program has broader implications for establishing a self-sustaining, community based production unit supporting community health independence, while opening pathways toward a youth driven creative economy grounded in locally sourced functional food products.
