<![CDATA[Sembalun Village has local resource potential in the form of beef and cattle hides, which have not yet been optimally utilized to produce value-added processed products. Cattle hides, for example, are often underutilized, despite containing collagen that can be processed into gelatin. The urgency of this community service activity lies in improving the village community’s economy through innovative processed products while promoting the sustainable utilization of local resources. The objective of this community service activity is to empower the people of Sembalun Village through training in the production of healthy, hygienic, and high-value-added gelatin-based meatballs. This activity is expected to enhance community skills, encourage creativity in micro-enterprise development, and create opportunities for marketing local products. The methods applied include: (1) training and demonstration on the production of gelatin from cattle hides and its processing into high-quality meatballs; and (2) technical assistance to ensure that participants are able to independently produce gelatin-based meatballs. The training was conducted using a participatory approach to actively engage the community in learning and directly applying the techniques provided.]]>
