Abstract

Moked fish is one of the processed products that can be used as raw material for processing together with the use of combinations and chemicals from fuel  combustion.  This research is to obtain the best time in the process of curing skipjack (Katsowonus pelamis) so that it can produce smoked fish meat with good quality.  The  purpose  of  this  study  was  to  determine  how  long  the  storing  capacity  of  smoked  skipjack  meat  and  its quality.  This study uses microbiological and organoleptic testing, namely to find out the color, taste, texture, aroma,  smell  by  using  statistical  analysis. Based  on  the  results  of  the  organoleptic  test  analysis  on  smoked skipjack meat on color, taste, aroma, appearance, and texture of the five treatments, the smoked fish products can  still  be  accepted  by  the  panelists  while  for  the  2nd  and  3rd day,  fish  meat  which  is  stored  seen  from  the quality  and  quality  and  taste  of  smoked  fish  has  been  contaminated  with  fungi  and  bacteria  on  the  day 4,5,6,7,8, and the 9th can not be consumed anymore, the temperature used for smoked smoked fish is 80-110 oC whereas storage in 4oC freerer and storage of smoked fish for 9 days. Microbiological testing parameters with the results of testing the Total Plate Number (ALT) for samples of smoked skipjack with three analyzes get the first sample with a small value of 31,508 while the second sample with a value of 32,905 and the third one is 35,801 so the small battery is the first sample.

Abstract

Disorders due to iodine deficiency (GAKI) are very serious nutrit ional problems, because they affect the survival and quality of human resources.  The effect that is well known to people due to lack of iodine is goiter, suffering from mental disability, namely midget, mute, deafness, and mental disorders. Central Maluku Regency has a very high IDD prevalence rate, which is 33.39%. The strategy is to reduce the search for local food  alternatives  such  as  seaweed.  Seaweed  contains  high  iodine  and  can  be  consumed  to  prevent  iodine deficiency.  Central  Maluku  Regency  has  abundant  and  high  quality  seaweed,  but  the  level  of  consumption directly by the people as food is still low, thus it is necessary to develop food technology that utilizes seaweed to produce snack / snack products such as cookies. Cookies are generally made from raw flour but can be replaced by  using  sago  flour  which  is  rich  in  carbohydrates  (starch).  The  purpose  of  this  study  was  to  determine  the effect of the type and concentration of seaweed in sago cookies on iodine levels of rats (Rattus norvegicus). The results  showed  that  rats  given  iodine  standard  rations  had  iodine  levels  with  moderate  deficiency,  and  mice given adequate iodine ration had normal iodine levels. The results also showed that the administration of ration cookies containing Sargassum crassifolium 20%, 30%, and 40%, as well as Eucheuma cottonii 30% and 40% could increase rat iodine levels to be optimal. Hypothesis test results showed that the treatment of seaweed type and concentration in the ration of cookies had a significant effect on rat iodine levels. The interaction of types of Sargassum crassifolium 40% was more influential in increasing rat iodine levels. Based on the results of this study it is recommended: Cultivation needs to be developed especially on the types of Eucheuma cottonii and Sargassum crassifoliumin the Central Maluku Regency.Disorders due to iodine deficiency (GAKI) are very serious nutritional problems, because they affectthe survival and quality of human resources. Abstract

Nutmeg is one of the mainstay potential export commodities of the North Maluku regional government, as a source of economic growth and regional income. To be able to maintain and enhance the role of the processing industry sector in national development, efforts are needed to determine the economic value of processed products. This study aims to analyze the processing of organic nutmeg at Galela Jaya Home Industry in Dokulamo Village, North Halmahera Regency. Analyzing financially organic nutmeg at Galela Jaya Home Industry in Dokulamo Village, North Halmahera Regency, using investment feasibility criteria, namely NPV, B/C ratio, IRR, PBP and  qualitatively using seed processing and nutmeg mace.  Based on the results of the analysis  it  can be said that the seed processing and nutmeg business carried out by the Galela Jaya Home Industry is feasible because it can provide benefits to the company, from the results of the analysis of financial feasibility at an interest rate of 9%, NPV is Rp. The amount of IDR 1 will provide a benefit of IDR 5%.
