Abstract

Background : Gathotan and gathot are Indonesian cassava traditional fermented food from Gunungkidul, Yogyakarta. These fermented foods may be considered as an important component of a functional-foods based diet for management of type 2 diabetes mellitus (DM). Previous study found that gathotan and gathot hadve low glycemic index (GI). Fermentation processed using fungi and bacteria hadve potency to give many beneficial effects, such as prebiotic that gives contribution on the forming of short chain fatty acid (SCFA). SCFA gives many beneficial effects on metabolism and prognosis on DM type 2. However, there have been no study on the potency of gathotan and gathot as dietary fiber sources.Objectives: This study was designed to examine carbohydrate and dietary fiber content in gathotan and gathot as functional food for people with DM.Methods: Gathotan was made by spontaneous fermentation. Gathot was made by soaking overnight of gathotan, then steaming and drying. Carbohydrates content was calculated by using “carbohydrate by diference” method. Dietary fiber content was analyzed by using enzymatic gravimetri method.Results: The highest carbohydrate content was found in cassava (81,13%), followed by gathotan (68,32%), and gathot (39,03%), respectively. The highest dietary fiber content was found in gathot (17,36%), followed by gathotan (14%), and cassava (8,61%) respectively.Conclusions: Fermentation process of cassava to be gathotan and gathot are potential to increase dietary fiber and decrease carbohydrate content. KEYWORDS: gathotan, gathot, functional food, diabetes mellitus.

Abstract

ABSTRACTBackground: Salted egg is one of processed egg products which has a nutrient content that is comparable to the fresh egg, has a longer shelf life and can be consumed by all ages. The main process in the salted egg production is salting (NaCl) treatment that will give salty taste and acts as a preservative.Objectives: This study aimed to develop low-sodium salted eggs with an antioxidant potential through the innovations in the salting process.Methods: This was an experimental research. Salted eggs were produced with innovations in salting process using various concentration of teak leaf extract and potassium chloride (KCl) substitution. The sensory qualities of the salted eggs were determined using differential tests. Salted eggs with the best sensory quality were determined their nutritional quality with proximate measurements and their antioxidative potency by measuring total phenolic content and antioxidant activityResults: The research result showed that the KCl substitution did not affect the total phenolic content (TPC) of salted eggs, but it reduced the sensory qualities which include the quality of taste, color, flavor and overall. The addition of teak leaf extracts improved both the sensory quality and TPC of salted eggs produced with KCl substitutions. TPC  increased along with increased of teak leaf extract concentrations. KCl substitution or addition of teak leaves extract proved to increase the radical scavenging activity of salted eggs. The low-sodium salted egg with an antioxidant potential which was made using selected salting formulation had nutritional and sensory qualities which comparable to the salted eggs produced using sodium chloride (NaCl)Conclusions: The low-sodium salted eggs have antioxidant potential that can be produced by salting process innovation using teak leaf extract and KCl substitution.KEYWORDS:  salted egg, KCl, teak leaf extracts, antioxidants, sensory

Abstract

Background: Results of Riskesdas in 2013 showed the prevalence of stunting by 37%. Stunting is a growth disorders such as chronic malnutrition will cause linear growth of troubled children. Stunting apart from the impact of the development of IQ, cognitive and motoric sector but also on emotional development. Hyperactivity disorder or ADHD (Attention  Deficit  Hyperactivity Disorder) is one of the emotional problems in children.Objective: The general objective of this study was to determine the relationship between stunting with attention deficit hyperactivity disorder in children aged 36-59 months in the Sedayu Subdistrict, Bantul District, Yogyakarta in 2017.Methods: This study used a cross-sectional approach. The samples studied amount 185 samples retrieval techniques probability proportional to size (PPS). Variable examined included stunting and hyperactivity disorder.\Results: The prevalence of stunting in this study was 34,2%, meanwhile the prevalence of hyperactivity was 28,8%. Chi-square analysis showed no significant association between stunting with attention deficit hyperactivity disorder (OR=0,98; 95%CI: 0,50-1,91).Conclusion: there was no association between stunting and hyperactivity in young children. KEYWORDS: stunting, hyperactivity, ADHD, children

Abstract

ABSTRACTBackground: Education, diet plan, pharmacologically and physical exercise are factors that can change the status of blood glucose levels. A low level of knowledge can affect the wrong dietary habit. DM patients are suggested to consume fiber as much as 25 g/ day.  Objectives: The article aimed to analyze the level of knowledge, fibers intake and physical exercise of type 2 DM patients’ blood glucose levels at Internal Disease Polyclinic of RSUD Ulin Banjarmasin.Methods: This study used observational analytics method with cross- sectional design. The population of this study were type 2 DM patients and had been checked for the fasting blood glucose levels at Internal Disease Polyclinic of RSUD Ulin Banjarmasin in April 2017. There were 47 samples that were taken by using purposive sampling. To collect food intake data, questionnaire food recall. The data analysis used Spearman’s correlation test rank and regesi logistic (mulivariate ) with 95% of confidence level.Results: The result showed that 66% of blood glucose levels were uncontrolled, 40.4% of knowledge level were average, 68.1% of fibers intake was less, and 57.4% of physical exercises were less. Level of knowledge, intake of fiber, physical exercise contributed to blood glucose levels. The level of glucose levels closeness to the knowledge level was very strong with r = -0.7783 and that of to fiber intake and physical exercise were moderate level with r = -0.471 and r = -0.381.Conclusions: Fiber intake and physical exercise are significantly associated with blood glucose in patients with type 2 diabetes outpatient. KEYWORDS : DM type 2, the level of knowledge, fiber, physical exercise, blood glucose.

Abstract

ABSTRACTBackground: There was 9.5% of stunted infants aged 7-12 month changed to normal nutritional status at the age of 2 years. Integrated programs, health, hygiene, and stimulation have been successful to decrease the stuntingproportion by 17.2%. Objective: The aim of this study was to analyze the relationship between child care practice and changes in nutritional status from normal to stunting in under fivechildren.Methods: This study was a further analysis from the results of cohort data collection for 20 villages of the City and District of Tangerang in 2008-2011. The number of subject in this study were 571 n under  five childre. Data were analyzed by chi-square test. Result: The results showed that the child care practice (OR=1.63, 95% CI ), hygiene and environmental sanitation (OR=1.63, 95% CI ) and health care aspects (OR=1.76, 95% CI ) were significantly associated with changes in nutritional status from normal to stunting.Conclusion:  child care practice were associated with changes in nutritional status from normal to stunting in under five childrenKEYWORDS: stunting, child care practice, under-five children

Abstract

ABSTRACTBackground: Underweight in under five children was a nutritional problem that is often caused by inadequate food intake. Underweight could occur at 6-59 months or should had supplemental feeding and supplementary foods. Supplementary foods have contribute energy to the nutritional adequacy of under five childrenObjective: To know the effectiveness of kawista biscuits in increasing of bodyweight under five children in Gondokusuman II Primary Health Care.Methods: Subjects were underweight with the aged of 12-59 months, as much as 19 children. The study was conducted in the working area of Gondokusuman II Primary Health Center Yogyakarta City. This study was quasi experimental with purposive technique sampling. The effectiveness of biscuit kawista  a was analysed by paired t-test.Result: Based on the results of effectiveness test of biscuit kawista for 2 weeks showed significant changes in body weight children (p = 0.000) as much as 0.29 kg.Conclusion: kawista biscuit was significantly increase the weight of under five  children who suffer from malnutrition. KEYWORDS: kawista biscuit (limonia acidissima), underweight, gain weight
