Abstract

Local foodstuffs, including sago worms, contain high nutrients and are widely available in Indonesia, but until now have not been optimally utilized. Through food technology efforts, substituting sago worm into flour is very good for developing local food biscuits. This study aims to analyze the effect of Local Functional Flour (TFL) substitution on biscuits' sensory quality and moisture content. The study used a completely randomized design (CRD) with a one-shot group design. The TFL formulation consisted of sago worm, soybean, mung bean, and carrot. The best biscuits were selected using the weighting method on the sensory aspects of color, texture, aroma, and taste. Statistical analysis used the Kruskal-Wallis test at 95% CI. The results showed that there was no effect of TFL substitution on the sensory quality of biscuits from the aspects of color (p= 0,086), texture (p= 0,818), aroma (p= 0,126), and taste (p= 0,516). Biscuits with the best sensory quality were with 20% local flour substitution. Textural changes occurred in the biscuits during storage using plastic packaging in the second week of storage. The water content of biscuits stored in plastic packaging increased by 2,12 to 2,53%. In conclusion, TFL substitution did not affect the sensory quality of biscuits. Biscuits' sensory quality and water content can be maintained through storage in watertight containers.

Abstract

Poor home sanitation can increase the risk of stunting in children. The study aims to analyze the risk factors for stunting based on house conditions, sanitation facilities, and occupant behavior. Observational research using a case-control study design was carried out in September–December 2020. The sample size was 60 toddlers (30 cases and 30 controls) taken randomly by simple arithmetic. Case samples are stunted toddlers based on e-PPGBM data. The control sample is a typical toddler who is the closest neighbor to the case with age equivalence. Respondents were mothers of toddlers. Data on the physical condition of the house and sanitation facilities were obtained through direct observation, while data on the behavior of the house occupants were obtained through interviews. Data processing was carried out by cleaning and editing, coding for categorical variables, entry and data processing. Data were analyzed using the Chi-square test and odds ratio at 95% CI. The house's physical condition (p= 0,058; OR= 8,83) and the behavior of the householder in managing sanitation are risk factors for stunting (p= 0,002; OR= 6,91). In conclusion, toddlers who live in houses with physical conditions that do not meet health requirements are at risk of experiencing stunting 8,83 times. Residents of houses whose behavior does not meet sanitation requirements risk 6,91 times experiencing stunting in toddlers.

Abstract

Increased colonization of Candida, especially C. albicans can occur in children with ASD and cause the severity of symptoms. One of the triggers for increased colonization in ASD children is the consumption of carbohydrates. This study aimed to identify Candida species in the faeces of ASD children who diet and nondiet carbohydrates from schools with special needs in Jember, East Java. The research design is a true experimental laboratory. The sample consisted of 26 ASD children and 13 healthy children as controls, with different subjects calculated using the Krejcie and Morgan formula. The test samples were identified for fungi by examining germ tube morphology, chlamydospores, and Candida species and compared with controls. The results showed differences in Candida species in the two test groups. Species C. albicans, C. dubliniensis, and C. tropicalis were found in almost all the faeces of ASD children with noncarbohydrates diet. The species C. parapsilosis, and C. albicans were found in a small proportion of the faeces of ASD children's carbohydrate diet. In contrast, the species found in the control group were C. albicans, C. dubliniensis, C. parapsilosis, and C. glabrata. In conclusion, carbohydrate consumption can affect the Candida species in the faeces of children with ASD.

Abstract

Gout is a disorder caused by inflammation of the joints due to the deposition of uric acid crystals stored in the joints. The causative factors are age, excessive purine intake, obesity, alcoholic beverages, and lack of physical activity. Various efforts can be made to overcome this, including nutritional counseling and physical activity, such as gymnastics. The study aims to provide descriptive information regarding the effect of nutritional counseling on a low-purine diet and ergonomic gymnastics in reducing uric acid levels in patients with gout. Literature review research was conducted using the keywords "Counseling, Ergonomic Exercise, Uric acid, and Gout" on the Google Scholar search engine and other electronic databases, namely Proquest, BMC, and Cochrane review. Scientific articles are published in national and international journals that can be accessed openly, published between 2010-2020. From these results, 13 articles were selected for review. The literature review was conducted in an unsystematic narrative review. The results of the study state that providing counseling using various media can be one solution to help reduce pain and reduce one's uric acid levels, namely through counseling or nutrition counseling and ergonomic exercises. Counseling can provide insight or knowledge related to a low-purine diet, while ergonomic exercises provide the impact of physical fitness on the patient's health. The combination of providing nutritional counseling and ergonomic exercises can reduce uric acid levels in patients with gout.

Abstract

Indonesia is one of the countries with high nutritional problems caused by inadequate feeding practices. A minimum acceptable diet (MAD) is used to assess feeding practices in children with low achievement (53,6%) aged 6-23 months. This study aimed to determine the factors influencing MAD in children aged 6-23 months in Indonesia. This study uses a cross-sectional study design to use secondary data from the 2017 IDHS. The subjects in this study were 4.783 children aged 6-23 months. Data were collected using the 2017 IDHS and WHO UNICEF 2010 questionnaires in assessing feeding practices. Statistical tests used were Chi-square, Spearman, and Multiple logistic regression. This study showed that the prevalence of MAD was 53.7%. Factors influencing MAD were the location of residence (p= 0,001), wealth index (p<0,001), mother's occupation (p= 0,007), father's education level (p= 0,022), mother's education (p= 0,003), media exposure (p= 0,012), geographic area (p<0,05), child's age (p<0,001), and birth order (p<0,05). The dominant factor influencing MAD is the education level of mothers who do not attend school. In conclusion, there is an influence between socio-demographic and economic characteristics and the characteristics of children with MAD in Indonesia.
