Abstract

Consumption of snacks with high sugar and low fiber content can cause degenerative diseases at a young age. The purpose of this study was to formulate black rice which was converted into brood and red beans in the form of a snack bar that has a low glycemic index. This study used a completely randomized design with one red bean substitution treatment factor with levels of F0 (0%), F1 (10%), F2 (20%) and F3 (30%). The determination of the best snack bar uses an organoleptic test with semi-trained panelists and a food glycemic index test using the iAUC method. The results showed that the 30 g serving weight of the snack bar contained 140 kcal of energy, 4 g of fat, 2 g of protein, 22 g of carbohydrates, and 2 g of dietary fiber. In addition, the black rice and red bean snack bar has a glycemic index of 35.91% and a glycemic load of 7.9 which is included in the low category. Based on the blood glucose response curve, it shows that the snack bar of black rice and red beans causes glucose levels to tend to be stable and hypoglycemia after 2 hours of blood glucose sampling.

Abstract

Obesity is a nutritional problem in adolescents nowadays. Obesity can increase risk of non-communicable diseases such as hypertension, cardiovascular disease, diabetes mellitus, cancer, osteoporosis and others which have implications for decreasing productivity and life expectancy. One factor of obesity is the lack of knowledge and information related obesity. Therefore, nutrition education using media that has been close to adolescents must be utilized in order to prevent obesity in adolescents. This research was a quasy experimental study with a non-equivalent control group design in 68 X-grade Labschool Kebayoran teenagers. Subjects were divided into 2 groups: 34 subjects as experimental group and 34 subjects as control group. In the experimental group podcasts and booklets were given for 1 week. Whereas, the control group was given a booklet without podcasts. Knowledge and attitude data related to balanced nutrition messages about obesity in adolescents were obtained from primary data in the form of questionnaires. The results of the study showed that there was influence of increased knowledge in the experimental group and the control group. There was an effect of increasing attitude in the experimental group and the control group. Meanwhile, there was difference in the effect of the experimental group with the control group on knowledge but there was no difference in the effect of the experimental group with the control group on attitudes. As conclusion that both the podcast and booklet media and without the podcast media related balanced nutrition messages about obesity in adolescents can improve knowledge and attitudes. Therefore, podcasts and booklets are considered as an effective media in providing nutrition education for balanced nutrition messages about obesity in adolescents.

Abstract

Tamarillo popping boba drinks with green tea extract is an alternative product that has been developed which has a high antioxidant content of phenolic compounds so it can reduce blood glucose levels. The purpose of this study was to analyze the effect of tamarillo popping drink with the addition of green tea extract on post-prandial blood glucose levels. This study used an experimental study design method with 11 healthy adults as the subject. There were two groups in this study i.e the control group who only consumed glucose solution and the treatment group who consumed glucose solution together with the tamarillo popping drink with the addition of green tea extract. Measurement of blood glucose response was performed using the Oral Glucose Tolerance Test (OGTT) method. The results of the intervention showed that the average blood glucose level in the treatment group was lower than the control group. The results of the paired t-test broad AUC also showed that the treatment group was significantly different and lower than the control group. The results of the% PKGD calculation were 13.63%. Thus, it can be concluded that giving boba popping drink with the addition of green tea extract is effective in reducing blood glucose levels.

Abstract

The number of pathogenic bacteria Escherichia coli which increases in the digestive tract can cause infectious diseases in humans. One of the pathogenic bacteria in the digestive tract, especially the small intestine, which often causes digestive disorders is Enteropathogenic Escherichia coli (EPEC). EPEC bacteria in the digestive tract can damage the intestinal mucosa causing infectious diseases in humans. This study aimed to determine the effect of synbiotic yogurt (made from Lactobacillus bulgaricus, Streptococcus thermophilus, Bifidobacterium bifidum and purple sweet potato juice) on the number of E. coli in mice. A total of 24 male wistar rats were used in this study which consisted of 4 groups, namely (1) negative control, (2) positive control, (3) synbiotic yogurt, (4) synbiotic yogurt + EPEC. Yogurt was given orally using a sonde from day 1 to 21, with a population of lactic acid bacteria 107 CFU / ml. EPEC infection was carried out orally using a sonde from day 8 to 14, with a population of 106 CFU/ml. On the 22nd day, rat feces were collected and the number of bacterial colonies identified as E. coli was carried out on Mac Conkey Agar (MCA) selective media with a Spread Count Method. EPEC infection caused diarrhea, both in the positive control group mice and the synbiotic yogurt + EPEC group. The positive control group of rats had the highest number of E. coli colonies and was significantly different from the other groups of mice. Giving synbiotic yogurt (both in the synbiotic yogurt group and the synbiotic yogurt group + EPEC), significantly decreased the number of E. coli colonies in mice). Synbiotic yogurt can prevent diarrhea.

Abstract

The incidence of Heart Failure (HF) continues to increase worldwide, but the prognosis remains poor. Nutrition is a lifestyle factor involved in the prevention of heart failure, unfortunately the effects of macro and micronutrients and dietary patterns in the development and treatment of heart failure are still minimal. This is reflected in the lack of nutritional recommendations in all HF clinical guidelines. This literature review uses 40 literature references in searching for diet and nutrition in heart failure patients. In this mini review, we will discuss the implications of diet for sodium restriction, calorie restriction, supplementation of fats, protein, and micronutrients in the management of HF. So it can be concluded that nutritional knowledge is needed for holistic management of heart failure patients starting from sodium restriction procedures, recommended diet, calorie restriction to supplementation.

Abstract

Obesity is one of five death risks globally. This is worsened by the increasing sedentary nature of work, where adults spend most of their time. The ongoing COVID-19 pandemic causes many employees to work from home. Online exercise in home or tele-exercise may potentially manage this. The purpose of this study was to analyze the effectiveness of tele-exercise on decreasing body weight of obese employee, or if it must be combined with nutrition tele-counseling. The design of this study is Pre-Post-Test Quasi-Experimental. This study was conducted on obese office employee in Jakarta with two intervention groups, one who receive tele-exercise intervention and the other who receive tele-exercise and nutrition tele-counseling. Subjects were divided into tele-exercise (n=25) and tele-exercise and nutrition tele-counseling (n=38). Subjects received tele-exercise 30 minutes per session, three sessions per week for six weeks. Tele-counseling was done by WhatsApp application every day, consisting of balanced nutrition education and calorie restriction for weight loss. Paired t-test was done on subject’s body weight before and after intervention. The group who received tele-exercise and tele-counseling experienced weight loss significantly with average bodyweight from 77.36±11.83 kg to 75.49±11.58 kg (Δ=-1.87 kg, p<0.05), while the same didn’t happen on another group (Δ=0.36, p>0.05). This research showed that tele-exercise is not very effective on decreasing obese office employee’s body weight, but must be combined with nutrition tele-exercise to achieve significant weight loss.
