Abstract

Background: The COVID-19 pandemic disrupted global food systems, including those in Indonesia. However, evidence at the provincial level remains limited, despite the importance of regional variation in shaping vulnerability and recovery capacity. Objectives: This study examined changes in the Prevalence of Undernourishment (PoU), dietary quality assessed through Desirable Dietary Pattern (DDP) scores, energy and protein availability and consumption, and provincial recovery capacity using the Recovery Gap Index (RGI) before (2019) and during the pandemic (2020-2021). Methods: A quantitative study was conducted using secondary data from 34 provinces obtained from the National Food Agency for the period 2019-2021. Consumption variables were analyzed using RM-ANOVA, and PoU and availability indicators were tested using the Friedman test with Wilcoxon post-hoc comparisons. RGI was calculated as the difference between 2021 and 2019 values. Significance was set at p-value<0.05. Results: PoU increased significantly across years (p-value<0.001). DDP availability score differed between years (p-value=0.009), although the difference between 2020 and 2021 became non-significant after correction. DDP consumption score, availability of energy and protein, and protein intake remained stable (p-value>0.05). Energy consumption increased significantly from 2020 to 2021 (+29.7 kcal/capita/day; p-value=0.010). RGI showed that 32% to 74% of provinces experienced deterioration relative to pre-pandemic levels, especially for PoU. Conclusions: The COVID-19 pandemic increased PoU indicators and reduced dietary quality. Although energy consumption improved, recovery was uneven across provinces. These findings indicate the need for policies to strengthen PoU and dietary quality tailored to provincial contexts to reduce interregional disparities.

Abstract

Background: Low dietary diversity and physical inactivity among young adult females are contributing factors to the double burden of malnutrition. In Islamic boarding schools, students often face unique lifestyle patterns with limited physical activity and food choices restricted by available menu options. Objectives: This study aimed to analyze the relationships among dietary diversity, physical activity, body fat percentage and nutritional status of young adult females at the Ndalem Dongkelan Islamic Boarding School in Yogyakarta. Methods: This cross-sectional study used total sampling (n=103). Dietary diversity was assessed using the Minimum Dietary Diversity for Women (MDD-W) from three non-consecutive 24-hour dietary recalls. Physical activity was measured using the International Physical Activity Questionnaire Short Form (IPAQ-SF), and body fat percentage was assessed using the Omron HBF-375 BIA device. BMI determined nutritional status. Data analysis included univariate, bivariate (Chi-Square/Fisher’s Exact), and multivariate binary logistic regression. Results: A total of 85.44% of participants had low dietary diversity, 56.31% were moderately active, and 39.81% had high body fat percentage. Bivariate analysis showed p-values of 0.768 for dietary diversity, 0.001 for physical activity, and 0.001 for body fat percentage. The respective odds ratios were 1.42, 10.9, and 11.7. The 95% confidence intervals ranged from 0.41–4.84, 4.06–29.4, and 4.40–31.0. Multivariate analysis revealed that physical activity and body fat percentage significantly contributed to nutritional status. Conclusions: Physical activity and body fat percentage significantly affect the nutritional status among young adult females in boarding school settings.

Abstract

Background: More than 90% of adults with type 2 diabetes are overweight or obese. This condition is known to increase oxidative stress, which contributes to cellular damage and disease complications. As a functional food, kefir has long been recognized for its various health benefits, including anti-inflammatory, antioxidant, and antidiabetic properties. Objectives: This study aimed to analyze the potential of randu honey kefir in preventing oxidative stress in diabetic rats. Methods: This study employed a randomized block design with a 21-day intervention period. A total of 42 male Sprague Dawley rats aged 6–8 weeks were divided into six groups: KS (standard), KN (negative control), K1 (quercetin), K2 (metformin), P1 (randu honey kefir 1.8 mL/200g BW), and P2 (preventive group). Diabetes was induced using streptozotocin at 40 mg/kgBW combined with a high-fat diet. Malondialdehyde (MDA) levels were analyzed using spectrophotometry, while interleukin-6 (IL-6) and tumor necrosis factor-alpha (TNF-α) levels were measured using ELISA kits. Results: Significant differences (p-value<0.05) were observed in MDA, TNF-α, and IL-6 levels between the P1 and P2 groups compared with the KN group. Randu honey kefir groups showed mean oxidative stress marker levels comparable to those of quercetin and metformin treatments, including MDA (P1: 32.9 ± 29.35 nmol/mL; P2: 23.77 ± 11.63 nmol/mL), TNF-α (P1: 45.37 ± 31.25 pg/mL; P2: 37.81 ± 27.00 pg/mL), and IL-6 (P1: 64.81 ± 21.35 pg/mL; P2: 59.23 ± 14.95 pg/mL). Conclusions: Randu honey kefir intervention demonstrates potential in suppressing oxidative stress in diabetic rats.

Abstract

Background: The prevalence of obesity among adolescents in Indonesia continues to rise and has become a serious health concern due to its negative effects on both physical and psychosocial well-being. One contributing factor is the lack of early education on the principles of balanced nutrition. Objectives: This study aims to evaluate the effectiveness of the educational media Balanced Nutrition Puzzle for Obesity Prevention Education (GESIT) in improving early adolescents' knowledge, attitudes, and behaviors related to obesity prevention. Methods: This study employed a pre-experimental, one-group pre-test-post-test design. A total of 63 fourth- and fifth-grade students at Madrasah Ibtidaiyah Roudlatul Jannah were selected using purposive sampling. The educational medium used was the GESIT puzzle, which was validated by two experts: a content (material) expert and a media expert. The intervention consisted of two educational sessions using the GESIT puzzle, followed by students' independent practice for 5 days. The feasibility test results showed scores of 87.5% from the content expert and 85% from the media expert. Results: The study found increases in the proportions of participants in the high category for knowledge from 0% to 63.5%, attitudes from 55.6% to 81.0%, and behavior from 34.9% to 73.0% after the intervention. Improvements in knowledge, attitudes, and behavior were statistically significant (p-value<0.001). Conclusions: Thus, it can be concluded that the GESIT puzzle media is effective in improving early adolescents' knowledge, attitudes, and behavior.

Abstract

Background: In 2021, there were 19.5 million cases of diabetes mellitus, and it is predicted to rise to 28.6 million by 2045. Dietary modifications are necessary to prevent complications or the worsening of diabetes mellitus. An alternative can be using local food ingedients, rich in bioactive compounds and antioxidants, by combining food from job's tears, pumpkin that has been gound, with additional andaliman spices to enhance the flavor, called Schotel Jakunre. Objectives: Knowing the analysis of the physical and chemical quality of Jakunre Schotel as an alternative staple food for diabetes mellitus patients. Methods: The experimental research was conducted using a Completely Randomized Design (CRD) with 2 replications. The physical quality test of Schotel Jakunre products was carried out organoleptically, including texture, taste, aroma, and colour, also using a colour reader with a panel of 60 semi-trained participants. Analysis was done using ANOVA, followed by Duncan's test. The selected Schotel Jakunre formulation was tested for GI levels, total antioxidants, fiber, flavonoids, and zinc. Results: The acceptance test showed that treatment E, consisting of 300 g of jawawut flour, 100 g of pumpkin flour, and 100 g of small shrimp, was selected. Schotel Jakunre had a slightly brownish yellow colour, refreshing aroma, soft texture, and savory taste. Schotel Jakunre contained a GI of 61.52%, total antioxidants of 76.74 mg, fiber 6.67 g, flavonoids 7.75 mg, and zinc 0.3285 mg. Conclusions: Jakunre casserole with characteristics of slightly brownish yellow colour, soft texture and savory taste, as well as the fresh aroma typical of andaliman, contains high total antioxidants, fiber, flavonoids, and zinc. Additionally, it has a relatively low glycemic index, making the Jakunre casserole recommended for diabetes patients.

Abstract

Background: Data from the 2023 Indonesian Health Survey indicate that diabetes mellitus (DM) affects a substantial proportion of the Indonesian among populations aged ≥15 years (11.7%). Among individuals with type 2 diabetes mellitus (T2DM), diabetic dyslipidemia is a prevalent metabolic disorder, particularly characterized by reduced high-density lipoprotein (HDL) levels accompanied by elevated low-density lipoprotein (LDL) levels. Improvement in blood lipid profiles may be supported by the consumption of suweg tubers and Bambara groundnuts as local food sources with high dietary fiber content. Objectives: The present study evaluated the effectiveness of combined suweg tuber and Bambara groundnut flour formulation as dietary interventions to modulate lipid metabolism, specifically focusing on HDL and LDL levels, in rats with diabetes-inducted dyslipidemia. Methods: An experimental approach was conducted using a randomized control group with pre- and post-intervention measurements. Thirty male Sprague-Dawley rats were assigned into five groups: a negative control group (K-), a positive control group (K+), and three treatment groups (F1, F2, and F3) which received formulations at doses of 0.37 g, 0.39 g, and 0.42 g per 200 g BW, respectively. Fasting blood glucose (FBG), HDL, and LDL concentrations were assessed before and after the intervention. Statistical analyses included the Shapiro-Wilk normality test, paired t-test, homogeneity test, and one-way ANOVA, and Tukey Post Hoc analysis. Results: The F1 group had the highest HDL (77.2 ± 2.0 mg/dL) and lowest LDL (27.0 ± 1.5 mg/dL). These differences were statistically significant across groups (p-value < 0.001). Conclusions: The F1 formulation was effective in increasing HDL levels while reducing LDL levels, indicating the potential of suweg tuber and Bambara groundnut flours as functional dietary interventions for diabetic dyslipidemia.

Abstract

Background: Adolescence is a period of growth spurt, requiring optimal nutrient intake to support physical and cognitive development. Skipping breakfast increases the risk of growth faltering and reduced academic performance. In West Java, 6.1% of adolescents aged 13-15 years are underweight and 29.6% exhibit poor breakfast habits, which may hinder the achievement of the SDGs, particularly Zero Hunger and Good Health and Well-Being. Objectives: To analyze the organoleptic acceptability and nutritional content of cereal beverage formulated from soybeans, rolled oats, moringa leaves, and randu honey as a potential nutrient source for adolescents. Methods: A completely randomized design with three formulations was used. The ratio of soybean powder to rolled oats were F1 (20g:10g), F2 (15g:15g), and F3 (10g:20g). Each formulation was supplemented with 5 g of moringa leaf powder and 10 g honey. Organoleptic data were analyzed using Kruskal-Wallis and Mann-Whitney tests, while nutritional content from proximate and mineral analysis were evaluated using ANOVA and Duncan tests. Results: Significant differences were observed in color(p-value=0.048) and texture (p-value=0.012), while aroma and taste did not differ significantly (p-value>0.05). Nutritional analysis showed significant differences in ash (p-value=0.002), moisture (p-value=0.003), energy (p-value=0.002), protein (p-value<0.001), fat (p-value=0.001), carbohydrates (p-value<0.001), and calcium (p-value<0.001), whereas iron content showed no significant difference (p-value=0.102). Conclusions: F1 was selected as the best formulation, containing 23,79 g of protein per 100 g, making it a high-protein product. This cereal beverage shows potential as a practical and nutritious breakfast alternative for adolescents.

Abstract

Background: Adolescence is a transitional phase marked by increased nutritional needs. Anemia among adolescent girls is an important health problem that can influence growth, along with physical and mental performance. The 2023 Indonesian Health Survey reported that 15.5% of individuals aged 15-24 years were anemic. Limited knowledge of anemia and iron supplement tablets inadequate family support, and low Mid-Upper Arm Circumference (MUAC) contribute to the risk of anemia. Objectives: To analyze factors associated with anemia among adolescent girls at SMA Negeri 3 Jakarta. Methods: This research applied a quantitative approach with a cross-sectional method, involving 180 students from grades X and XI who were chosen using a stratified random sampling technique. Variables examined included MUAC status, knowledge of anemia, knowledge of iron supplementation tablets, and family support. The study collected data through questionnaires complemented by anthropometric measurement procedures. Determinant variables were identified using chi-square analysis and logistic regression methods. Results: Anemia was found in 43.0% of adolescent girls. Knowledge of iron supplementation tablets showed a significant association with anemia and was the most influential factor (p-value=0.002; OR=0.48). Conversely, MUAC status (p-value=0.12), knowledge of anemia (p-value=0.11), and family support (p-value=0.05) showed no significant association. Conclusions: Knowledge of iron supplementation tablets was observed to have a correlation with cases of anemia (p-value=0.032) and served as a determinant factor of anemia among adolescent girls. Mid-upper arm circumference (MUAC) status, knowledge of anemia, and family support showed no significant association with anemia incidence. Students with better knowledge regarding iron supplementation tablets were associated with a 52.0% lower probability of anemia than students with insufficient understanding, after controlling for other variables. Efforts to improve nutrition education and promote iron supplementation intake are crucial for anemia prevention.

Abstract

Background: Stunting is commonly associated with deficiencies in micronutrients such as zinc and iron, as well as low fat intake in children. The use of nutrient-rich Tongkol fish and Kepok banana blossom for producing meatballs has the potential to prevent stunting. Objectives: This study aims to determine the zinc, iron, fat content, and the organoleptic properties of Tongkol fish meatballs added with Kepok banana blossom. Methods: The study employed a completely randomized design with three treatments, consisting of different ratios of Tongkol fish to Kepok banana blossom in groups F1 (60%:40%), F2 (50%:50%), and F3 (40%:60%). The zinc and iron content were analyzed using Atomic Absorption Spectroscopy (AAS), fat content was determined using the Soxhlet method, and organoleptic properties were assessed through hedonic testing. Data were analyzed using One-Way ANOVA and the Kruskal-Wallis test. Results: The highest zinc and iron content was observed in group F2, with values of 243.42±4.89 ppm and 405.40±16.45 ppm, respectively, while the highest fat content was found in groups F1 and F3, both at 0.52%. Statistical analysis revealed significant differences in zinc content (p-value<0.001) and iron content (p-value=0.001), while no significant difference was found in fat content (p-value=0.283). There was a significant difference in taste (p-value=0.028), but no significant differences were observed in color (p-value=0.182), aroma (p-value=0.853), and texture (p-value=0.820). Conclusions: The treatment group F2 exhibited the highest levels of zinc and iron, while the fat content did not show statistically significant differences. There was a difference in taste; however, no significant differences were observed in color, aroma, and texture in the organoleptic tests.

Abstract

Background: Athletics and football are sports disciplines in Indonesia in which performance continues to fluctuate. This condition represents an important concern for the respective sports disciplines to identify strategies to maintain optimal athlete performance so that achievements can consistently improve. Objectives: This study aimed to analyze factors associated with performance among athletics and football athletes. Methods: This study employed a cross-sectional design with a sample of 103 athletics and football athletes enrolled in grades 7–12 at SKO Ragunan. Total sampling was applied using inclusion and exclusion criteria, namely athletes from athletics and football, in good health, and willing to participate as study respondents. Data analysis was conducted using the Chi-square test. Results: Bivariate analysis showed an association between physical fitness (p-value=0.001), lower limb muscle endurance (p-value=0.002), and body fat percentage (p-value=0.013) with athlete performance, while no association was found between doping knowledge (p-value=0.183) and branched-chain amino acid (BCAA) consumption (p-value=0.099) with performance among athletics and football athletes at SKO Ragunan, Jakarta. Conclusions: Physical fitness, lower limb muscle endurance, and body fat percentage were associated with performance among athletics and football athletes at SKO Ragunan, Jakarta, whereas doping knowledge and BCAA consumption showed no significant association.
