Abstract

ABSTRAK Gangguan siklus menstruasi dapat mengakibatkan penurunan performa pada atlet. Asupan yang tidak seimbang, beratnya latihan, status gizi tidak normal dan stress dapat meningkatkan risiko terjadinya gangguan. Penelitian ini bertujuan menganalisis hubungan asupan, status gizi, aktivitas fisik dan tingkat stres terhadap gangguan siklus menstruasi pada atlet bulutangkis. Penelitian ini menggunakan jenis penelitian kuantitatif dengan desain penelitian cross sectional dan sampel berjumlahkan 20 atlet. Data diperoleh melalui online google form yaitu data asupan karbohidrat, protein, lemak, zat besi, folat dan vitamin C dengan Food Record 3x24 jam, status gizi dengan IMT/U, aktivitas fisik dengan lembar IPAQ, tingkat stress dengan lembar kuesioner HARS, dan siklus menstruasi. Analisis data menggunakan uji Korelasi Spearman Rank. Hasil Penelitian menunjukkan ada hubungan antara hubungan asupan karbohidrat (p = 0.015, r = 0.535) asupan protein (p = 0.021, r = -0.513), asupan lemak (p = 0.021, r = -0.513), vitamin C (p = 0.048, r = 0.447) dan gangguan siklus menstruasi pada atlet bulutangkis. Namun tidak ditemukannya hubungan antara zat besi, folat, status gizi, aktivitas fisik dan tingkat stress terhadap gangguan siklus menstruasi pada atlet bulutangkis (p > 0.05). Ada hubungan yang bermakna antara asupan karbohidrat, protein, lemak, vitamin C dan gangguan siklus menstruasi pada atlet bulutangkis putri. Kata Kunci : Atlet putri, bulutangkis, gangguan siklus menstruasi ABSTRACT Menstrual cycle disorder can result in decreasing athletes’ performance. Unbalanced intake, strenuous exercise, abnormal nutritional status and stress can increase the risk of disorders. This study aims to analyze the relationship between intake, nutritional status, physical activity and stress levels on menstrual cycle disorders in badminton athletes. This research uses quantitative research with cross sectional research design and a sample of 20 athletes. Data obtained through online google form, namely data on intake of carbohydrate, protein, fat, iron, folate and vitamin C with Food Record 3x24 hours, nutritional status with BMI/U, physical activity with IPAQ sheets, stress levels with HARS sheets, and menstrual cycles. Data analysis uses the Spearman Rank Correlation test. The results showed a relationship between intake of carbohydrate (p = 0.015, r = 0.535), protein (p = 0.021, r = -0.513), fat (p = 0.021, r = -0.513), vitamin C (p = 0.048, r = 0.447) and menstrual cycle disorders in badminton athletes. However, there was no relationship between iron, folate, nutritional status, physical activity and stress levels on menstrual cycle disorders (p> 0.05). There is a significant relationship between intake of carbohydrates, protein, fat, vitamin C and menstrual cycle disorders in female badminton athletes. Abstract

ABSTRAK Dewasa ini kedelai tidak bisa dipisahkan dari kehidupan masyarakat karena diolah menjadi tahu dan tempe sebagai pengganti lauk. Usaha pengolahan tahu dan tempe juga memberikan keuntungan bagi pelakunya. Tujuan penelitian ini adalah untuk mengetahui biaya produksi, penerimaan, pendapatan dan nilai tambah kedelai yang diolah menjadi tahu dan tempe pada Perusahahaan UD Bintang Barokah di Kelurahan Laiworu Kecamatan Batalaiworu Kabupaten Muna Provinsi Sulawesi Tenggara. Metode penelitian menggunakan metode deskriptif kualitatif. Penentuan sampel ditentukan secara purposive dengan pertimbangan bahwa lokasi usaha berada diwilayah perkotaan dan relatif berkembang di Kabupaten Muna. Data yang digunakan dalam penelitian ini yaitu data primer yang diambil secara cross sectional. Metode pengambilan data menggunakan teknik observasi, wawancara, dan dokumentasi. Analisis data yang digunakan yaitu analisis pendapatan dan persentase. Analisis nilai tambah dilakukan dengan membandingkan nilai awal kedelai dengan nilai pendapatan setelah diolah menjadi tahu dan tempe. Hasil penelitian menunjukkan biaya produksi pengolahan tahu setiap kali produksi pada UD Bintang Barokah yaitu sebesar Rp 926.085, penerimaan sebesar Rp 1.530.000, pendapatan sebesar Rp 603.915, dan nilai tambah sebesar 100,65%. Biaya produksi pengolahan tempe setiap kali produksi yaitu sebesar Rp 1.225.306, penerimaan sebesar Rp 3.465.000, pendapatan sebesar Rp 2.239.694, dan nilai tambah sebesar 248,85%. Biaya produksi pengolahan kedelai menjadi tahu memerlukan tambahan biaya sebesar 33,58%, sedangkan diolah menjadi tempe memerlukan tambahan biaya sebesar 26,55%. Nilai tambah kedelai diolah menjadi tempe lebih menguntungkan dibanding diolah menjadi tahu. Kata Kunci : kedelai, nilai tambah, pengolahan tahu, dan tempe ABSTRACT Today, soybeans cannot be separated from people’s lives because they are processed into tofu and tempeh as a substitute for side dishes. The tofu and tempeh processing business also provides benefits for the perpetrators. The purpose of this study was to determine the cost of production, revenue, income and added value of soybeans which are processed into tofu and tempeh at UD Bintang Barokah in Laiworu Village, Batalaiworu District, Muna Regency, Southeast Sulawesi Province. The research method used a qualitative descriptive method. The sample is determined purposively with the consideration that the business location is in an urban area and is relatively developed in Muna Regency. The data used in this study are primary data taken by cross sectional. The data collection method uses observation, interview, and documentation techniques. The data analysis used is the analysis of income and percentage. Value added analysis is done by comparing the initial value of soybeans with the value of income after being processed into tofu and tempeh. The results showed that the production cost of tofu processing each time the production at UD Bintang Barokah was Rp. 926,085, the income was Rp. 1,530,000, income was Rp. 603,915, and added value was 100.65%. The production cost of processing tempe for each production is IDR 1,225,306, revenue of IDR 3,465,000, income of IDR 2,239,694, and added value of 248.85%. The production cost of processing soybeans into tofu requires an additional cost of 33.58%, while processing it into tempe requires an additional cost of 26.55%. Abstract

ABSTRAK Anemia merupakan keadaan dimana jumlah kadar hemoglobin (Hb) di dalam darah berada di bawah normal. Remaja putri beresiko mengalami anemia defisiensi zat besi. Edukasi pengetahuan gizi dapat meningkatkan pengetahuan gizi dan mencegah anemia pada remaja putri. Desain penelitian ini menggunakan quasi experimental pre-post test. Subyek penelitian sebanyak 58 remaja putri SMA N 2 Semarang yang dipilih secara simple random sampling. Edukasi gizi dengan menggunakan metode kombinasi antara ceramah dan Team Game Tournament (TGT). TGT adalah jenis tipe pembelajaran kooperatif yang tiap kelompok belajar beranggotakan 5 hingga 6 orang. Pengetahuan terkait anemia dan gizi diukur dengan kuesioner yang telah teruji reliablitasnya. Kadar hemoglobin diukur menggunakan alat hemoglobinometer digital (Easy Touch). Analisis data meliputi analisis univariat, analisis bivariat menggunakan uji Chi-square. Rerata status IMT 20,80±3,42 kg/m2 dan rerata kadar Hb 13,28±2,52 g/dL. Edukasi pencegahan anemia pada remaja putri dengan menggunakan metode kombinasi ceramah dan TGT dapat meningkatkan pengetahuan sebesar 36,1 %. Metode kombinasi ceramah dan TGT efektif untuk kegiatan edukasi gizi. Kata Kunci : anemia, remaja putri, pengetahuan, team game tournament ABSTRACT Anemia is a condition in which the amount of hemoglobin (Hb) in the blood is below normal. Adolescent girls are at risk of iron-deficiency anemia. Nutrition education can increase nutrition knowledge and prevent anemia in adolescent girls. The design of this study uses a quasi-experimental pre-post test. The subjects of the study were 58 teenagers of SMA N 2 Semarang who were selected by simple random sampling. Nutrition education using the combination method between discourse and Team Game Tournament (TGT). TGT is a type of cooperative learning that each study group consists of 5 to 6 people. Knowledge related to anemia and nutrition is measured by a questionnaire that has been tested for reliability. Hemoglobin levels are measured using a digital hemoglobinometer (Easy Touch). Data analysis includes univariate analysis, bivariate analysis using the Chi-square test. The average IMT status was 20.80 ± 3.42 kg / m2 and the average Hb level was 13.28 ± 2.52 g / dL. Education for the prevention of anemia in adolescent girls using a combination of discourse and TGT methods can increase knowledge by 36.1%. The method of combination of discourse and TGT is effective for nutrition education programmes. Key words : anemia, adolescent girls, knowledge, team game tournament

Abstract

ABSTRAKPerforma atlet sangat dipengaruhi oleh berbagai faktor antara lain asupan gizi seimbang dan asupan cairan yang sesuai. Tingkat pengetahuan atlet tentang gizi seimbang dan asupan cairan masih banyak yang belum sesuai. Pentingnya pemberian edukasi tentang gizi seimbang dan asupan cairan yang tepat pada atlet dengan mempertimbangkan jumlah, jenis, dan waktu pemberian agar terjadi peningkatan keberhasilan atlet saat latihan atau bertanding. Penelitian ini bertujuan untuk mengetahui perubahan pengetahuan tentang gizi seimbang dan asupan cairan pada atlet sepak bola di SSB Baturetno. Penelitian ini dilakukan dengan memberikan edukasi gizi tentang gizi seimbang dan asupan cairan kepada atlet sepak bola di Sekolah Sepak Bola (SSB) Baturetno pada bulan Mei 2018 di Kantor Sekretariat SSB Baturetno, Banguntapan, Bantul, Yogyakarta. Analisis data dengan software statistik menggunakan uji paired t-test. Tingkat pengetahuan atlet sebelum pemberian edukasi adalah 50,31 ± 15,75, sedangkan tingkat pengetahuan atlet setelah edukasi adalah 74.38 ± 15,59. Ada perubahan yang signifikan tingkat pengetahuan sebelum dan setelah pemberian edukasi pada atlet sepak bola di SSB Baturetno (p=0,001). Dapat disimpulkan bahwa pemberian edukasi gizi secara efektif dapat meningkatkan pengetahuan tentang gizi seimbang dan asupan cairan pada atlet sepak bola di SSB Baturetno. Kata Kunci : pengetahuan, gizi seimbang, asupan cairan, atlet, sepak bola ABSTRACT Athlete’s performance is strongly influenced by various factors, including balanced nutritional intake and fluid intake. The level of knowledge of athletes about balanced nutrition and fluid intake is still not appropriate. The importance of providing education about balanced nutrition and proper fluid intake to athletes by considering the amount, type and time of administration can increase the success of athletes when training or competing.This research aims to determine knowledge of soccer athletes at SSB Baturetno about balanced nutrition and fluid intake.This research was conducted by providing nutrition education about balanced nutrition and fluid intake to soccer athletes at Baturetno Soccer School (SSB) on May 2018 at SSB Baturetno Secretariat Office, Banguntapan, Bantul, Yogyakarta. Data were analyzed using statistical software with paired t-test.The level of knowledge of athletes before education was 50.31 ± 15.75, while the level of knowledge of athletes after education was 74.38 ± 15.59. There was a significant change in the level of knowledge before and after giving education on soccer athletes at SSB Baturetno (p=0.001).The nutrition education can effectively increase knowledge about balanced nutrition and fluid intake in soccer athletes at SSB Baturetno. Abstract

ABSTRAK Pengetahuan pengaturan makan sesuai periode latihan dapat diberikan oleh pelatih kepada atlet. Pihak terkait seperti atlet, orang tua dan pelatih menjadi faktor penentu pengaturan makan atlet yang optimal untuk menunjang prestasi. Tujuan penelitian ini untuk menggali permasalahan secara mendalam pelatih sepak bola atlet junior mengenai pemenuhan gizi yang baik pada atlet melalui fokus grup diskusi. Penelitian yang besamaan dengan pengabdian masyarakat ini dilaksanakan 27 September 2020 di Sekretariat Lapangan Sepak Bola Wiyoro, terhadap 11 pelatih atlet sepak bola junior SSB Baturetno. Sementara pengabdian masyarakat SSB Real Madrid UNY dilakukan terhadap 16 pelatih atlet sepak bola junior SSB Real Madrid UNY pada 29 September 2020 secara daring/ online melalui media zoom meeting. Kegiatan yang dilakukan yaitu melakukan fokus grup diskusi kepada pelatih atlet. Secara keseluruhan, sebagian besar pelatih atlet sepak bola junior SSB Real Madrid UNY dan SSB Baturetno mengetahui adanya perbedaan antara pengaturan makanan sesuai periode latihan. Dapat disimpulkan, prestasi atlet dapat dicapai dengan dukungan semua pihak baik pelatih, pembina, orang tua dan atlet dimulai dari pengetahuan gizi yang baik hingga pengaturan makanan sesuai periode latihan atlet. Kata Kunci : fokus grup diskusi, pelatih atlet, pengaturan pola makan ABSTRACT Knowledge of eating arrangements according to the training period can be provided by trainers to athletes. Related parties such as athletes, parents and coaches are the determining factors for optimal athlete eating arrangements to support performance. To explore the problems in depth for junior athlete soccer coaches regarding the fulfillment of good nutrition in athletes through focus group discussions. Research and community service was carried out on September 27, 2020 at the Wiyoro Football Field Secretariat, with 11 coaches of SSB Baturetno junior soccer athletes. Meanwhile, the SSB Real Madrid UNY community service was carried out to 16 coaches of SSB Real Madrid UNY junior football athletes on September 29, 2020 online through the media zoom meeting. The activity undertaken is to conduct focus group discussions with the athlete coach. Overall, most of the SSB Real Madrid UNY and SSB Baturetno junior soccer athletes coaches are aware of the differences between the food arrangements according to the training period. Athlete’s achievements can be achieved with the support of all parties including coaches, coaches, parents and athletes starting from good nutritional knowledge to dietary arrangements according to the athlete’s period of time. Abstract

Cereal is an instan food can be consumed as breakfast or as a side dish. The development of corn cereal products is an effort to modify ingredients and diversify local food. The aim of substation addition was to increase the protein and fiber content to reduce the glycemic index value so that it can control blood glucose levels. The study purpose was to describe the glycemic index of mung bean corn cereal and red bean corn cereal. The method was pre-post test control group design. The subjects were 10 students. Subjects were given treatment three times, namely pure glucose, mung bean corn cereal and red bean corn cereal. Each treatment was given a gap of 2 days. Each treatment was checked for blood glucose five times, namely at minute 0 (fasting glucose, the subject had fasted for 8 hours), and after treatment at minutes 30, 60, 90, 120. Determination of the portion of glucose and cereal products was 50 g carbohydrates based on TKPI 2019. The results are the glycemic index of mung bean corn cereal is 28.68 while the glycemic index of red bean corn cereal is 20.32. Both corn cereal products are included in the low category (<50).

Abstract

Nutritional problems that occur in school-age children are very short, very thin, and obese. The Covid-19 outbreak has resulted in monitoring nutrition and school health in Semarang unable to be carried out optimally. Such conditions further trigger the emergence of nutritional problems in elementary school children. This study aims to determine the effect of using interactive e-book media on the nutritional knowledge of school children in the new normal era of covid-19. This type of research is experimental with a one group pre-post test design. The sampling method used cluster sampling by randomly selecting one sub-district from 16 sub-districts in the city of Semarang. Gunungpati sub-district was chosen as the target of taking research subjects by selecting 20 students from the Nongkosawit State Elementary School 01 Semarang City as research subjects.The results showed that elementary school children were still found to be short, overweight, and obese. The Wilcoxon test showed that there was a significant difference in nutritional knowledge between before the use of the e-book compared to after its use (p<0.05), 3 subjects’ knowledge decreased, 1 remained, 16 increased.

Abstract

Cookies are a practical food, easy to make, and can be stored for a long time. The main raw material for making cookies is wheat flour. Considering that the nutritional content of sorghum is not inferior to wheat flour, sorghum has the opportunity to replace wheat in food processing. The purpose of this study was to analyze the nutritional content and antioxidant activity of cookies substituted with sorghum flour. The design used an experimental study using the RAL (Completely Randomized Design) method. Cookies formulation carried out as many as 4 formulas.The best cookies were analyzed descriptively with the mean value and one-way-anova. The nutritional content of cookies was analyzed by gravimetric and titrimetric methods and the antioxidant activity test was analyzed by the DPPH method. The nutritional content of cookies substituted with sorghum flour obtained was the value of carbohydrates (49.9%), protein (5.69%), and fat (25.2%) and the antioxidant activity value of cookies substituted with sorghum flour was 104.48 ppm. The nutritional content of cookies has met the quality requirements of cookies based on SNI. 2793-2011 and the value of antioxidant activity on cookies substituted with sorghum flour is in the medium category based on the IC50 value.

Abstract

Diarrhea is a health problem in Indonesia that can cause death in toddlers. Weak immune system causes toddlers attacked by diarrhea easily. Factors affecting diarrhea in toddlers are mother’s knowledge, parenting and environmental sanitation. This study aimed to determine the correlation between mother's knowledge of diarrhea and parenting with the incidence of diarrhea in toddlers. The design of this study used Cross sectional with 36 subjects of toddlers affected by diarrhea. The results were analyzed using Rank spearman correlation test and multiple linear regression test. There is a negative and significant correlation between mother’s knowledge of diarrhea and the incidence of diarrhea in toddlers, means that the lower mother's knowledge of diarrhea, the higher the incidence rate of diarrhea (Rs = -0.47). There is a negative and significant correlation between mother’s parenting and the incidence of diarrhea in toddlers, means that the lower mother’s parenting, the higher the incidence of diarrhea (Rs = -0.647). There is a negative and significant correlation between mother’s knowledge about diarrhea and parenting with the incidence of diarrhea in toddlers (Y = 4.009 – 0.114x1-0.056x2), means that the lower mother's knowledge of diarrhea and parenting, the higher the incidence of diarrhea in toddlers.

Abstract

Lack of knowledge and attitudes about balanced nutrition in adolescent girls can cause nutritional problems such as Chronic Energy Deficiency, anemia, obesity, overnutrition. One of the efforts to increase knowledge and attitudes is through nutrition education with video media. Video media is expected to be able to stimulate the senses of hearing and sight during the process of delivering educational materials. The purpose of this study was to determine the effect of balanced nutrition education with videos on the knowledge and attitudes of adolescent girls. The design of this study was quasi-experimental with a one-group pretest-posttest design. The number of samples as many as 24 people who were selected by purposive sampling. The intervention provided education about balanced nutrition with video media. Knowledge and attitude data based on scores obtained through Google Form. Data analysis using Paired T test. The results showed that the average knowledge score increased by 16.04 and the attitude score increased by 4.42. There was a difference in the score of knowledge (p=0.0001) and attitude (p=0.001) before and after the intervention in adolescent girls.
