Abstract

A popular and nutrient-rich fish jelly product called milkfish meatballs also includes saturated fatty acids and amino acids that are linked to an increased risk of cardiovascular disease. The goal of this study was to create milkfish meatballs with the best and desired chemical, physical, amino acid, fatty acid, and cholesterol profiles by adding legume protein isolate. The study's nine treatments included milkfish meatballs with soy protein isolate, sword kara protein isolate, and cowpea protein isolate added in amounts of 0%, 15%, and 30%, respectively. The produced meatballs underwent physical (texture, folding test, color test), chemical (proximate), and preference analysis. After analyzing the fatty acid profile, amino acid profile, and cholesterol before and after in vitro digestion, the two most popular treatments (milk meatballs with the addition of sword kara protein isolate/cowpea protein isolate or milkfish meatballs with the inclusion of sword kara protein isolate) were chosen. The milkfish meatballs that received the best treatment were those with the addition of 15% soy protein isolate and 30% swordfish protein isolate, with ratios of omega-6 to omega-3 of 2.176 and 1.811, respectively, and ratios of arginine to lysine of 1.49 and 0.99, respectively. This study's findings suggest, milkfish meatballs with the addition of 30% karapel protein isolate have the best preference value and the ability to serve as a functional diet to prevent hypercholesterolemia

Abstract

In the culinary industry, the classification of red chili pepper types is used to identify varieties that differ in terms of flavor, pungency, or other uniqueness. This enables their proper use in various recipes and meals. In the market, the classification of red chili pepper types helps in pricing, variety selection, or quality standards applied. For this reason, the purpose of this research is to classify red chili peppers using HSV Feature Extraction and Naive Bayes Clasifier. The stages carried out include: data collection, preprocessing, feature extraction and classification. Red chilies are grouped into 4 classes, namely large red chilies, cakplak red chilies, curly red chilies and chili red chilies. The red chili data used is 119 training data and 123 testing data. In the preprocessing, the image is converted to grayscale, then converted to binary image with the thresholding method. Furthermore, feature extraction is done with the HSV method. Finally, classification is done with Naive Bayes. The results of the study provide an accuracy value for training data of 92.43% and for testing data obtained an accuracy of 92.69%. This method is suitable for use in classification because it gives good results

Abstract

The sheer amount of tourism attractions in North Sumatra makes it difficult for visitors to choose where they wish to travel. Tourists can select the ideal place, but they must also deal with a number of issues, such as time and financial limits, which can significantly influence the selection. Therefore, the goal of this study is to assist travelers in selecting the top tourist destination in North Sumatra based on their time and financial constraints. The Simple Attribute Rating Technique (SMART) technique is employed in this study to choose tourist attractions based on four criteria: the measurement of the distance to tourist locations from the city center, the quantity of public tourist facilities, the cost of entrance tickets to attractions, and the daily average of visitors to attractions. The study's findings show that the Decision Support System is competent at handling data and making the best suggestions for tourism attractions. The findings revealed that Sibolangit Forest was the superior alternative in general. Sipiso-piso In addition, waterfall was chosen as the best substitute for places with waterfalls, Lake Toba was chosen as the best substitute for destinations with lakes, and Dua Rasa River was chosen as the best substitute for destinations with rivers. One piece of advice is to compare it to other decision support system techniques and add other factors, such as cleanliness, safety, age, tour kind, and ease of access to tourist attractions

Abstract

Mango trees are a common plant in Indonesia. In 2021, 2.84 million tonnes of mangoes were produced in Indonesia, according to the Central Statistics Agency (BPS). You can eat mangoes either ripe or unripe. Additionally, this fruit can be turned into meals and beverages. Many farmers grow mango plants, however, Some illnesses can infect mangoes and lead to crop failure or poor fruit quality. Fungal infections like anthracnose and black fungus, often known as black fungus, affect mango plants, but many farmers continue to mistakenly believe they are identifying plant illnesses and pests. To the type of disease in mango plants, the Convolutional Neural Network (CNN) method was applied in this study. It has been demonstrated that CNN is a very efficient way of processing images and identifying key elements for intricate pattern recognition. A total of 1,405 leaf photos from three different categories—525 anthracnose images, 656 black sooty mold images, and 224 healthy images—were used as samples for CNN to identify illnesses in mango plants. This image data was taken from the kaggle.com website. The CNN model is trained using distinct datasets into training data and validation data after data collection and preprocessing. On training data, the model is 95% accurate, while on validation data, it is 98% accurate. By feeding photos of mango leaves into the model and evaluating the predictions, the detection is put into practice. Action can be taken to control the illness in these mango trees based on prediction findings showing the presence of disease with a decent amount of confidence

Abstract

In a time when both the quantity and number of medical records are growing, protecting medical information has taken on particular significance. Medical data security and privacy are still compromised by the current system, which leaves room for manipulation and data leaks. Prior research has suggested techniques to safeguard medical data using encrypted algorithms like Blowfish and Vigenere. Nonetheless, this study suggests blockchain technology as a remedy for medical data security and decentralized data protection solutions this work, we implement decentralized data protection and medical information security using smart contracts. Smart contracts are blockchain-encoded agreements that, under specific circumstances, guarantee the contract's execution. In medical information management, smart contracts are used to control how patients, physicians, and healthcare organizations may utilize information. By doing this, patients can consent to the secure and encrypted use of their medical data, guaranteeing that only individuals with the proper authorization can access the information. In this work, we leverage smart contracts and blockchain technology to enhance the security of medical data stored in hospitals or outpatient clinics. The study's findings demonstrate that the data held in blockchains is distributed among several nodes, making them resistant to malware attacks and making the technology hard to alter

Abstract

The development of 2G, 3G, 4G, WiFi, and other advancements that provide greater reliability and coverage and are focused on high data rates and low latency has led to the development of 5G technology. We must, however, overcome a number of obstacles before we can deploy 5G in Indonesia, particularly in terms of choosing the appropriate frequency. This assessment can help in assessing and resolving issues with spectrum, infrastructure, and other technical factors while also helping to understand the demands and characteristics of urban areas and determine the best spectrum allocation to fulfill the increasing demand for connectivity in urban areas. This study's methodology include a qualitative literature evaluation and mini-review of related studies. This study attempts to review 5G technology and discuss the difficulties and barriers that must be overcome for it to be used in urban settings. The findings of this study point to significant difficulties and barriers in the deployment of 5G networks in Indonesia. If rules are in place to support them, particularly those regarding the frequency band designated for 5G, all hurdles and obstacles will turn into possibilities. The primary frequency range needed for 5G implementations, particularly the 700 MHz (low band) frequency, 3.3–4.2 GHz (mid band), and 24.2–29.5 GHz (high band), must be able to access enough spectrum to meet the demands expected of 5G implementations. In order to increase outdoor capacity in cities with high user concentrations, high-band radio frequency offers convenience in satisfying user needs according to user density and area distribution. for instance, near other public areas, the major business district, and train and bus stations. In comparison to high band radio frequency, low band and medium band radio frequency have a greater coverage area, making them more suitable for use in rural areas with low population densities but strong demand for network services. The requirement for network infrastructure has the same issues as 4G network services, including a lack of coverage for all of Indonesia. Urban areas have more internet users than rural areas, therefore there is a need for suitable infrastructure to expand the reach of 5G technology, which has extremely low latency, address network capacity issues, improve coverage, and offer superior 5G NR services

Abstract

The Kapuas Hulu Regency is home to several fascinating tourist spots, yet finding directions inside the regency can be challenging for visitors. The Held-Karp Algorithm can be used to find the fastest route between any two cities with only one stop, which is known as the Traveling Salesman Problem (TSP). Bellman, Held, and Karp created this dynamic program in 1962 with the goal of minimizing travel time and expenses. The number of cities to be visited (forming nodes in the graph), the point of origin (the starting node in the graph), and the distances between the cities (weights between the nodes) must all be specified in the model of the TSP problem before the Held-Karp Algorithm can be applied. The focus of this study will be tourist destinations in West Kalimantan's Kapuas Hulu Regency. A system that uses the Held-Karp Algorithm to find the shortest paths between different tourist spots in Kapuas Hulu Regency will be built as part of this project. As a result, this technology will help tourists plan their trips effectively and minimize their expenditures for both time and transportation

Abstract

Frozen storage methods in bakery products have been widely applied to maintain quality and extend shelf life. Early cooking by steaming followed by frozen storage on bread is an effective way to slow down the spoilage process. The length of time frozen storage affects the physical, chemical, microstructure, thermal, and sensory reception properties. The purpose of this study is to evaluate the quality of bread by pre-cooking steaming during frozen storage and after re-cooking. The research was carried out with the storage time treatment factors, time of 0, 14, 28, 42, 56 and 70. Parameters analyzed in frozen bread include texture testing, volume expansion rate, moisture content, dissolved protein content and crumbs (SEM), thermal properties with Differential Scanning Calorimatry, as well as the level of preference. The result showed that the longer the frozen storage, the harder the texture, the level of volume development, the lower the water and dissolved protein content and the smaller the pores of the bread. Bread texture increased in hardness along with the lenght of frozen storage, namely 8.70 N increased to 17.44 N, while the water content decreased from 30.02% (w/w) to 26.70% (w/w). the highest soluble protein content was obtained on the 14th day which was 1.53% and the lowest was on the 70th day, which was 1.31%. The result of the SEM test showed that there was a reduction in the pore size of bread compared to on day 0. The results of DSC thermogram showed that the longer the frozen storage of bread with the initial cooking of steaming, the lower the gelatinization and enthalpy temperatures, and the smaller the pore size is small. Storage of frozen bread until day 56 resulted in bread quality that has nor changed and is still accepted by the panelists.

Abstract

Along with the increasing popularity of online shopping in Indonesia, the E-retailing business has increased in recent years in Indonesia. This research aims to analyze the trends and developments of e-retailing in Indonesia and globally. This research is a type of literature study research with a qualitative approach. The analysis technique used is bibliometric analysis and systematic literature review using VOS viewer software. The results showed eight main clusters related to e-retailing: chatbot, customer satisfaction, purchase intention, customer experience, artificial intelligence, social media, and mobile commerce. This shows that chatbots, customer satisfaction, purchase intention, and customer experience are important factors that influence the success of e-retailing. This research also shows that e-retailing is still new and needs to be continuously developed. This can be seen from the low density of research related to this topic.

Abstract

Every business, but particularly those in the industrial sector, have what is known as inventory. In order for the business to survive and carry on with production, inventory is crucial. Inventory control makes sure that products and resources don't run out of stock or become overstocked, which could lead to higher inventory costs and a halt in production. A business engaged in manufacturing is called PT. X. Hinge Upper Assy is one of the products that PT. X manufactures. Overproduction of raw materials caused issues for the hinge upper assembly material during the process, raising the overall cost of inventory. The EOQ (Economic Order Quantity) approach is one inventory control technique that determines overall inventory costs. The EOQ approach takes into account the frequency of orders, the amount of orders per order, safety stock, and reorder points in addition to inventory costs. The purpose of this study was to determine the overall cost of inventory at PT. X using the EOQ approach, as well as the frequency and quantity of orders, safety stock value, and reorder points. The study's findings indicate that the overall cost of inventory with EOQ is IDR 2,500,752.00, with a frequency of orders placed twice and a quantity per order of 20167 pieces, safety stock of 3242.28, and a reorder point of 3257 pieces. When comparing the EOQ approach to the company's traditional method, there was a 63% savings in total inventory expenses.
