Aims Jurnal Nukleus Peternakan purposes to publish original research and reviews articles on tropical veterinary medicine and domesticated animals such as dog, cat, cattle, buffaloes, sheep, goats, pigs, horses, poultry, as well as Indonesian wild life. Scope Jurnal Nukleus Peternakan cover a broad range of research topics in animal production and fundamental aspects of genetics, reproduction, socioeconomic of livestock, nutrition, physiology, and preparation and utilization of animal products. Articles typically report research with beef cattle, goats, horses, pigs, and sheep; however, studies involving other farm animals, aquatic and wildlife species, endangered animals, and laboratory animal species that address fundamental questions related to livestock and companion animal biology will be considered for publication.

Abstract

The aim of the experiment was to evaluate the effect of increamental level portulaca flour (Portulaca oleracea L) inclusion into commercial ration on total cholesterol, omega 3 and omega 6 of broiler meat. One hundred DOC were used in this experiment. Method used was completely randomized design (CRD) four treatments withfive replicates. The treatments were Kr00= commercial ration without portulaca flour, Kr25= commercial ration + 2,5% portulaca flour, Kr50= commercial ration + 5%portulaca flour, and Kr75= commercial ration + 7,5% portulaca flour. The results showed that including portulaca flour into commercial ration inhibit cholesterol formation resulted in a lower total cholesterol concentration by 24% in the meat. Increasing level of portulaca flour in the ration did not have effect on omega 3 concentration, but significantly reduced omega 6 concentration from 410,44 mg/100 g meat to195,52 mg/100 g meat.It can be concluded that inclusion of portulaca flour in the ration can reduce total cholesterol concentration and improve the ratio of omega 6 : omega 3 in the meat of broiler chicken. ABSTRAK Suatu penelitian bertujuan untuk mengkaji pengaruh penambahan tepung krokot (Portulaca oleracea L) dalam ransum terhadap kandungan total kolesterol, omega 3 dan omega 6 dalam daging ayam broiler. Penelitian ini menggunakan 100 ekor ayam broiler. Metode yang digunakan adalah metode percobaan Rancangan Acak Lengkap (RAL) yang terdiri dari 4 perlakuan dan 5 ulangan. Empat perlakuan tersebut Kr00= ransum komersial tanpa tepung krokot, Kr25= ransum komersial + 2,5% tepung krokot, Kr50= ransum komersial + 5% tapung krokot, dan Kr75= ransum komersial + 7,5% tepung krokot. Hasil penelitian menunjukan bahwa penambahan tepung krokot dalam ransum menghambat pembentukan kolesterol sehingga menurunkan total kolesterol sebesar 24%. Kandungan asam lemak omega 3 dalam daging tidak nyata dipengaruhi oleh level tepung krokot, sebaliknya asam lemak omega 6 menurun secara drastis dari 410, 44 mg/100 g daging ke 195,52 mg/100 g daging, sehingga terjadi penurunan rasio omega 6 : omega 3 dari 6,43 ke 3,77. Disimpulkan bahwa penambahan tapung krokot dalam ransum komersial untuk broiler dapat menurunkan kadar kolesterol daging dan menyebabkan rasio omega 6 : omega 3 menjadi lebih baik

Abstract

Each farm animal species has its own physiological comfort zone, in which energy expenditure was at minimal level, constant and independent ofambient temperature. When ambient temperature increased and resulted in excessive amount of head load, animal would try to maintain body thermal balance by modifying behavior, feed and water intake pattern, and certain physiological processes. Heat stress consistently resulted in decreased feed intake and increased water intake. Besides that, heat stress also has effects on animal physiology both through its direct effect and indirect effect due to decreased feed intake. Physiological changes due to heat stress included changing in nutrients digestibility and metabolism, increased production of free radicals, decreased concentration of Na+, K+ and Cl-, increased concentration of cortisol and decreased concentration of thyroxine, increased risk of alkalosis and, eventually, affected the responses of cell mediated immunity and humoral immunity. ABSTRAK Setiap spesies ternak memiliki suatu zona nyaman fisiologis, yaitu keadaan dimana pelepasan energi berada pada tingkat minimal, konstan dan bebas dari pengaruh suhu lingkungan. Bila suhu lingkungan meningkat dan menyebabkan tambahan beban panas yang berlebihan bagi ternak maka ternak akan berusaha mempertahankan keseimbangan panas tubuhnya dengan melakukan perubahan-perubahan tingkah laku, pola konsumsi pakan dan air serta perubahan fisiologis tertentu. Cekaman panas secara konsisten menyebabkan penurunan konsumsi pakan dan peningkatan konsumsi air. Di samping itu, cekaman panas juga berdampak pada fisiologi ternak baik melalui pengaruh langsungnya maupun pengaruh tidak langsung sebagai akibat penurunan konsumsi pakan. Perubahan-perubahan fisiologis akibat cekaman panas meliputi perubahan kecernaan zat makanan dan metabolisme, peningkatan produksi radikal bebas, penurunan konsentrasi Na+, K+ dan Cl-, peningkatan konsentrasi cortisol dan penurunan thyroxine, peningkatan potensi terjadinya alkalosis dan, pada akhirnya, berpengaruh buruk terhadap tanggapan kekebalantermediasi sel maupun tanggapan kekebalan humoral.
