Zootec is a scientific periodical journal published by the Faculty of Animal Sciences, Sam Ratulangi University in 1995 with the print ISSN number 0852 – 2626. The focus of articles on Animal Sciences includes 1. livestock production, 2. Animal Feed and Nutrition, 3. Livestock Socio-Economics, 4. Animal Product Technology, 5. Animal Health, and 6. Potential pet wildlife Animal. Since its publication in Volume 38 number 1 of January 2018, it has been accredited with Rank 5 at the Ministry of Research, Technology and Higher Education Republic of Indonesia, Number SK 28/E/KPT/2019 with eISSN number 2615-8698. Starting Volume 41 No 2 of July 2021 the Zootec Journal has changed the writing template from the previous writing template. The Zootec journal has been indexed by Google Scholar, SINTA, Crossref, Garuda. Although the livestock sub-sector contributes significantly to the economic growth of North Sulawesi, but to date not include leading commodity in the agro-industry development. The problems to be studied in livestock development efforts is the absence of the establishment / implementation of appropriate strategies to be able to maximize the potentials that exist that allow livestock into a competitive industry. The study was conducted through the following steps: - Conducting searches of information sources that can give an idea of ​​the limitations, the principal research, development and problems in the sub-sector prternakan, regional understanding, understanding strategic management, then set formulations for the purpose of research towards implementation. - Conducting a survey of experts to examine and define the elements / sub-elements associated with the development strategy of the farm estate sector agro-industry. - Designing systems structuring with a review / determination of the development of key elements, with Interpretative Structural Modeling (ISM). Based on the results of expert assessments set by 4 elements and 12 sub-elements that have a strong interaction with the development of animal husbandry in North Sulawesi. Into elements have analyzed the level of interaction with the ISM-VAXO technique. The first stage is to study contextual relationships in matrix form SSIM-VAXO. This method has been able to classify all of elements into four quadrants based on the value Drive Power and DependenceI and in a hierarchical structure based on rank and level, which then informs the development of animal husbandry sub key elements namely: Provision of sub-elements of human resources with knowledge and skills appropriate breeding (7) and sub-elements Improved managerial skills training programs (8). ABSTRACT ANALYSIS OF LIVESTOCK PRODUCT DEMAND AT TAWAANG VILLAGE, TENGA DISTRICT SOUTH MINAHASA REGENCY. The purpose of this study was to determine the number of  *Alumni Fakultas Peternakan Unsrat **Jurusan Sosial Ekonomi Peternakan  livestock product demand in Tenga district. The problem this study was how far demand factors such as prices of chicken meat, pork, beef meat, fish, tofu and fermented soybean (tempe) affected the level of demand for livestock products in Tenga district.The total number of samples used in this study were 45 respondents of households. Data collection was conducted during 3 months using the survey method. The analysis used was the model of SUR (Seemingly Unrelated Regression) using the equation of the demand function. The results showed that the numbers of livestock product demand in the Tenga district were chicken meat of 3.04 kg/quarter, pork of 3.24 kg/quarter, beef of 1.29kg/quarter, and egg product of 64.56 eggs/quarter. Therefore; factor of the prices of chicken meat, pork, beef, fish, tofu and fermented soybean (tempe) influenced the demand of livestock products. Keywords: Demand, prices, animal product.

THE CHEMICAL QUALITIES OF FERMENTED DUCK IMMERSED WITH DIFFERENT LEVELS OF L. plantarum AND STORED UNDER LOW TEMPERATURE. The objective of this research was study the effect of soaking time on chemical (pH, water content, acetic acid content and total lactic acid bacteria) of duck meat fermentation using L. plantarum. Ducks was done by soaking duck meat in culture L.plantarum and stroraged at cooling temperature. Soaking was done with different level of L. plantarum. This experiment was arranged in a completely randomized design consisted of five levels of L. plantarum. Data were analyzed by variance analysis. Significantly difference treatment effects on variable measures were tested using honestly significant difference (HSD). The result showed that treatments had significantly difference (P<0,01) on pH and total lactic acid bacteria of duck meat fermentation, but did not affect significant (P>0,05) on water content and acetic acid content of duck meat fermentation. Therefore, it can be concluded that soaking at 15% level of L. plantarum and storage at cooling temperature can conserve duck meat until 16 days and ducks fermentation were still constant. ABSTRACT PROFIT ANALYSIS OF BEEF FARMING AROUND SULUUN TARERAN DISTRICT IN SOUTH MINAHASA REGENCY. Generally, communities of Suluun Tareran district were household farmers. Beef cattle populations in this area were about 308 head spreading at eight villages. The problem was how much the production cost (feeding, labor, and other feed supplement) do affect the profit of beef farming around this area. The objective of this study was to evaluate effect of production cost on income and profit of beef farming system in Suluun Tareran district of South Minahasa regency. Research was conducted using survey method. Data were found from two sources including primer and secondary data sources. Samples of respondence were determined by purposive sampling method. The total of 30 household farmers were used in this study. Results showed that grass feeding of the animals was not bought by farmers, except in dry season. Average production cost of beef cattle at research location were Rp. 6,756,215,67 per year of 3-4 animals consisted of feed cost (50,20%), labor cost (46,36%) and feed supplement (1,44%). Production cost affected significantly (tcalc. = 0.0003) profit level of beef cattle farming in Suluun Tareran district. ABSTRACT STORAGE TIME OF BROILER MEAT THAT WERE GIVEN KASTURI LIME JUICE (Citrus madurensis Lour.)The purpose of this research was to determine the effect of storage time in a temperature range of -2°C to 4°C towards the pH value, moisture content, water holding capacity, and cooking loss of broiler meat that were given Kasturi lime (Citrus madurensis Lour.) juice. This research used the completely randomized design with 5 treatments which were (P1) = without storage; (P2) = 3 days of storage; (P3) = 6 days of storage, (P4) = 9 days of storage; (P5) = 12 days of storage and 4 repetitions. The variables observed were pH value, moisture content, water holding capacity, and cooking loss. The results showed that the storage time of broiler meat that were given Kasturi lime juice did not effect moisture content, water holding capacity, and cooking loss however it effect the pH value of the broiler meat. We concluded that storage of broiler meat in a temperature range of -2°C to 4°C retained the pH value, moisture content, water holding capacity, and cooking loss until 12 days.  Keywords      : Broiler meat, storage time, kasturi lime

SPEED AND BODY HEIGHT REPEATABILITIES OF RACING HORSE AT DIFFERENT AGE IN OFFSPRING FROM “MANGUNI MAKASIOUW†MALE PARENT WITH INTRACLASS CORRELATION . This study was conducted to determine the repeatability values of speed and body height at different ages of the offspring from “Manguni Makasiouw†male parent using intraclass correlation method. Data used in this study were the records of speed to run with various distance of race horse resulting from racehorse competition in North Sulawesi and national PORDASI competition. Running speed data were tabulated using the method of analysis of variance process to obtain the values of repeatabilities. Based on the research and discussion, running speed of racehorse was the highest in the age of five years old and the lowest in the age of two years old. The repeatability values in this study were relatively low, ranging from 0.029-0.047 (running speed) and from 0.029-0.05 (body height). The value of the correlation between running speed and body height at age 2-5 years had high correlation values ​​(0.760 to 0.961), indicating that the higher the body height, the higher the level of horse running speed. FERMENTATION PERIOD EFFECT OF BANANA LEAF IN RATION ON BROILER FEED EFFICIENCY. This study was done to evaluate the fermentation period effect of banana leaf in ration on broiler feed efficiency. Animals used in this study were sixty broilers (Hubbard strain) at the age of three week old. Research was conducted using completely randomized design involving four treatments with five replications in each treatment. Treatments used were as follows: Ration containing banana leaf without fermentation (R0), Ration containing banana leaf fermented at five days (R1), Ration containing banana leaf fermented at ten days (R2), and Ration containing banana leaf fermented at fifteen days (R3). Data were analyzed by variance analysis. Significantly difference treatment effects on variable measures were tested using honestly significant difference (HSD). Variables measured were feed consumption, average daily gain, and feed efficiency. Results showed that that treatments had significantly difference (P<0,01) on feed consumption, average daily gain and feed efficiency. It can be concluded that ration containing banana leaf fermented at ten days produce the best feed efficiency of broilers. Keyword : Fermented banana leaf, feed efficiency, broiler

ABSTRACT RELATIONSHIP BEWEEN ECONOMICAL SOCIAL FACTOR AND HOUSEHOLD PERSEPTION ON DAIRY FARM DEVELOPMENT IN TOMOHON MUNICIPALITY. Dairy farm development was importantly connected with household farmer. Each household farmer had different economical social background. The objective of this study was to evaluate the relationship between economical social factor and household perception on dairy farm development in Tomohon municipality.This study was conducted at four districts in Tomohon municipality using thirty respondents of household farmers. Samples were determined by purposive sampling method involving three districts. Primer secunder data were used in this study. Results showed that household farmers at ages of 43 to 54 years old were 40 percents. The education period of the animal household was ranging from 12 to 16 years (46.7%). The experiemces as animal household of dairy cattle were ranging from 2 to 3 years. The frequency attending extension and skill training were ranging from 1 to 2 times (76.6 %), and 90 percents of animal household had income from Rp. 1,350,000 to Rp. 3,499,800 per month. Perseptions of animal household on dairy farm development in Tomohon municipality were generally good. Period of animal farm highly correlated  with the perception household farmer in development of dairy farm in Tomohon municipality. ABSTRACT DESCRIPTION OF TANGKASI BEHAVIOR (Tarsius Spectrum) WHEN ENTERING THEÂ Â HOLE NEST TREE IN TANGKOKO NATURE RESERVE. Tarsier in Tangkoko Nature Reserve Batuangus many inhabit cavities in trees or root piles. Tarsier nest is a place that is safe from predators. This study aims to obtain data regarding some behavior that appears when Tarsier Tarsius activity around the nest tree at Tangkoko Nature Reserve. To determine the percentage of respective behavior that tarsiers in the show in the morning, afternoon and evening. The variables measured were some behaviors that arise between them. Grooming behavior, resting behavior, seeking shelter behavior, play behavior, data were analyzed and presented in a descriptive, which describes and explains the general description of the results of direct observations, the results showed that more Tangkasi doing grooming on morning with a percentage of 37.15%. during the day with a percentage of 31.19% early evening with a percentage of 31.19%. Tangkasi resting behavior is most prevalent during the day ie 38.70%. At night with a percentage of 32.25%, in the afternoon with 29.03% percentage. Sheltering behavior more activity in the morning with a percentage of 38.07% and the time of day with the percentage of 33.02%. While in the afternoon with a percentage of 28.89% behavior played almost evenly in each time. On the morning after finished foraging Tangkasi playing with percentage of 30, 18%, and the percentage of time during the day with 32.88% and a maximum in the late afternoon with a percentage of 37.38%. EFFECTIVITY OF COOKING METHOD ON PHYSICAL CHARACTERISTIC OF COOKERY WILD PIG MEAT. The objective of this study was to evaluate the physical characteristic of cookery wild pig meat with different cooking methods. Research was done using completely randomized design with three treatments of coocing method (bamboo cooker apparatus, stainless cooker apparatus and soil cooker apparatus) and five replications in each treatment. All treatments were added with spicy ingredients of cabai, daun bawang, kamangi, sereh, jahe, and daun jeruk. Physical characteristics were including pH, water content and water holding capacity, analized at animal product technological laboratory. Data were analyzed by analysis of variance model with Duncan statistical test for significant F test. Result study showed that different cooker apparatus affected significantly physical characteristics of cookery wild pig meat in term of pH, water content and water holding capacity. It can be concluded that cooking method using bamboo cooker apparatus yield thye best physical characteristics of cookery wild pig meat.
