Abstract

This work is based on the synthesis, structural characterization and biological activity of somedithiocarbamate-based complexes. The free dithiocarbamate ligand was prepared via several synthetic routesincluding the formation of Schiff-base. The reaction of 2,6-diaminopyridine with benzaldehyde resulted in theformation of Schiff-base which reduced to the corresponding diamine by methanolic NaBH 4 . The reaction ofdiamine with CS 2 in a methanolic solution of KOH resulted in the preparation of the free dithiocarbamateligand. Macrocyclic complexes were formed from the reaction of the appropriate metal chloride with the ligandin an ethanolic medium. The suggested geometries around metal centres were determined using a range ofphysicochemical and spectroscopic techniques. The analytical and spectroscopic data revealed the formationof four and six coordinate complexes. Complexes of the general formula [M(L)] 2 (where M= Fe(II), Co(II) andZn(II) indicated metal centres adopt tetrahedral geometries. Complexes with the general formula [M(L)(H 2 O) 2 ] 2(where M= Mn(II), Ni(II), Cu(II) indicated octahedral structures around metal centres. Biological activity of theligand and its complexes against four strains of bacteria (Escherichia coli (E. coli), Pseudomonas aeruginosa,Bacillus cereus and Staphylococcus aureus) and antifungal activity against two types of pathogenic fungi,Aspergillus niger and Aspergillus parasiticus are tested. Keywords: Dithiocarbamate ligand; Transition metal complexes; Spectral characterization; Biological activity.

Abstract

Pigmented potato (Solanum tuberosum L.) varieties are a rich source of anthocyanins, in particular acylated derivatives. The potato products such as French fries, chips, balls etc. are also fried products which absorb high amount of oil. These products though taste good, pose health problems due to high calorie and cholesterol intake. The consumers prefer to low fat and fatfree fried foods. This research has been focused on different parameters of blanching, coating, frying, kind of frying oil for minimum oil absorption and sensory palatability while maintaining the most phytochemical components such as total phenolic, total flavonoid and anthocyanin during preservation. Results revealed that blanching 95oC in 30 seconds with ascorbic acid of 0.05 g/100g potato, coating with carrageenan 0.20%, frying 4 mm of potato crisp in sunflower oil heating at 155oC in 2 minutes was appropriated. Fried potato crisp could be preserved for 12 weeks at ambient 4oC. Moisture and oil content, as well as colour and texture are important quality attributes of fried potato products which were significantly affected by blanching.  Reducing the oil content of fried potato slices by application of coating is an effective method. Frying of potato crisps is carried out to convert the tubers to value added products. Frying method brings out unique flavor and texture to the products that improve their overall acceptability. Kind of oil used for frying also positively affected to oxidative reaction in fried potato crisps. The present study has examined various technical aspects to minimize the oil uptake in fried foods still retaining the desirable texture and flavor of the final product. Keywords: Potato crisp, Blanching, Coating, Frying, Shelf life, Anthocyanin, Flavonoid, Carrageenan.

Abstract

Thin films of copper tetra-tert- butyl Phthalocyanine (CuPc) have been prepared from their solution in chloroform using spin coating technique. Films then heated to (100, 200 and 300) oC to study the effect of annealing temperature on the characteristics of the prepared films. UV-visible spectrophotometer was used to investigate the absorption properties of the materials as well as the optical energy gaps. The morphology characteristics have been carried out utilizing atomic force microscopy (AFM). To demonstrate the sensing properties of CuPc films, I-V measurements were carried out using Keithly 2400 instrument to calculate the resistance before and after exposure to ammonia odorant. The prepared samples show a decrease in the resistance values after exposure to the contaminated air. Time dependency was also carried out to investigate the response and recovery time of the prepared device. Keywords: Copper phthalocyanine, Thin films, Gas sensor, Ammonia detection.
