Abstract

Exposure to elevated temperatures during food preparation, cooking, or storage leads to various alterations that impact the quality and stability of food. This article thoroughly examines how high temperatures affect the nutritional, chemical, physical, sensory, and microbiological features of food. Although heat treatments are effective in improving food safety and prolonging shelf life, they frequently cause nutrient loss, chemical changes, modifications in texture, and shifts in sensory characteristics like flavor, smell, and visual appeal. High temperatures can trigger processes such as Maillard browning and lipid breakdown, which affect taste and can lead to the creation of potentially harmful substances. Physical changes can include protein unfolding, starch gelatinization, and moisture evaporation, all of which significantly modify the structure and texture of food. Temperature-related loss of volatile substances and flavor quality also diminishes sensory attributes. While heat processing is effective for eliminating microbes, it needs to be managed carefully to maintain food quality. The article further discusses the promise of non-thermal and hurdle technologies as viable alternatives or complements to conventional thermal methods, designed to achieve a balance between food safety and the preservation of nutritional and sensory qualities.

Abstract

The halal food industry is experiencing rapid growth between 2021 and 2025, triggered by the increasing awareness of global consumers on the importance of food that is safe, healthy, and in accordance with ethical and religious principles. This article reviews the key trends and challenges in the halal industry, covering aspects of market growth, technological influence, and food safety issues. The increasing Muslim population and their purchasing power are the main drivers, along with non-Muslim consumers' interest in halal products. On the other hand, challenges such as disharmony in certification standards, product counterfeiting, and lack of experts are major concerns. Technologies such as blockchain, Internet of Things (IoT), and data analytics are solutions to improve transparency and traceability of the halal supply chain. The government and industry players are encouraged to collaborate in strengthening policies, regulations, and consumer education. In this digital era, the halal industry is no longer limited to fulfilling religious obligations, but rather a symbol of quality and global trust. Therefore, strengthening halal food safety aspects is the main strategy to answer market demands and maintain industry sustainability

Abstract

This article discusses the rise of artificial intelligence (AI) based video production through the Google Veo 3 platform that highlights and criticizes police performance. The purpose of this article is to analyze how AI videos are used as a medium for social criticism, the narratives they construct, and the public's response to the content. The results of the study show that AI videos are used as an alternative space for expression in voicing disappointment with the performance of the police, especially in issues of abuse of authority and corruption. Although the videos are fictional and artistic in style, their visual and narrative power has a significant impact on public perception. This article concludes that generative AI such as Google Veo 3 opens up space for the democratization of criticism, but also raises ethical and regulatory challenges in the digital ecosystem so that there must be additional regulatory recommendations related to this.

Abstract

Stress menunjukkan ketidakseimbangan akibat respon awal terhadap stressor sehingga menghasilkan berbagai perubahan dalam fisiologis organisme. Respon stress memiliki pengaruh terhadap sistem kekebalan tubuh, hal ini mengacu pada durasi dan presistensi paparan stressor. Pada respon awal terhadap stress, pelepasan katekolamin dapat meningkatkan kinerja sel-sel sistem pertahanan tubuh. Sedangkan pelepasan kortisol terbukti memiliki efek penekanan terhadap kinerja sel-sel imun, hal ini menyebabkan peningkatan kerentanan ikan terhadap serangan patogen. Selain stress secara fisiologis, terdapat stress oksidatif yang diakibatkan ketidak seimbangan antara terbentuknya radikal bebas dengan kinerja antioksidan. ROS diproduksi oleh mitokondria, sel sel pertahanan tubuh dan lingkungan termasuk polutan. Pemaparan polutan dengan intensitas tinggi menunjukkan pengaruh peningkatan ekspresi sitokin pro inflamasi.

Abstract

Infeksi pathogen baik bakterian maupun virus merupakan tantang terbesar dalam industry Akuakultur di dunia. Untuk itu pemahaman akan mekanisme infeksi maupun resistensi terhadap pathogen perlu ditingkatkan agar dapat dijadikan dasar dalam menyelesaikan tantanngan tersebut. Transkriptomik merupakan metode yang dapat memuat semua gen yang terekpresi dalam regulasi tertentu, dalam analisa transkriptomik banyak digunakan rna-seq karena efektifitas dan akurasinya. Saat ini transkriptomik banyak digunakan untuk mempelajari mekanisme sistem pertahanan tubuh dalam merespos infeksi dan resistensi ikan terhadap pathogen tertentu. Informasi transkriptomik tersebut sangat berguna untuk pengembangan metode diagnostic, peningkatan Kesehatan dan sekelsi strain yang memiliki ketahanan terhadap pathogen tertentu.

Abstract

Tulisan ini bertujuan untuk mengkaji fenomena sosial terkait maraknya pengibaran bendera bajak laut dari serial anime One Piece menjelang perayaan Hari Kemerdekaan Indonesia pada 17 Agustus 2025. Dari studi media sosial seperti Instagram, Youtube dan Tiktok menunjukkan bahwa pengibaran bendera Jolly Roger lebih mencerminkan ekspresi budaya pop, identitas komunitas, dan bentuk "nasionalisme alternatif" di kalangan generasi Z, dibandingkan dengan niatan untuk merusak simbol negara. Diskusi menyoroti pergeseran makna simbolik dan tantangan dalam membangun kesadaran kebangsaan di tengah globalisasi budaya. Oleh karena itu pentingnya pendekatan edukatif dan partisipatif dalam memahami ekspresi kebudayaan anak muda tanpa menekan kreativitas mereka.

Abstract

Bioremediation is an environmentally friendly approach to addressing pollution, particularly that caused by organic waste. Anaerobic bacteria play an important role in this process, especially in oxygen-depleted environments such as sediments and wastewater. This study aims to identify the role and mechanisms of anaerobic bacteria in the bioremediation process. The results of the study indicate that various types of bacteria, such as methanogens, sulfate reducers, hydrolytic bacteria, acidogenic bacteria, and acetogenic bacteria, are capable of breaking down complex organic compounds into simpler and safer compounds. Additionally, some species also play a role in addressing heavy metal contamination through biosorption and bioprecipitation processes. Metabolic processes such as fermentation, acetogenesis, and methanogenesis are key to the success of anaerobic bioremediation. This indicates that the utilization of anaerobic bacteria can serve as a sustainable, effective solution that aligns with the principles of a circular economy.

Abstract

The tradition of "bedah ​​rumpon" is a fishing technique passed down through generations by the people of Ajibarang, Banyumas. This paper aims to examine this practice ethnographically and ecologically as part of local wisdom in managing inland water resources. This paper demonstrates that bedah rumpon functions not only as a fishing technique but also has strong social and cultural dimensions, including elements of mutual cooperation, seasonal rituals, and local water conservation. Although its effectiveness has declined due to declining fish populations due to environmental degradation, this practice is still maintained as part of local identity.

Abstract

Peanuts (Arachis hypogaea L.) are globally significant legumes that play an important role in food technology, human nutrition, and sustainable agriculture. As the fourth most important oilseed crop worldwide, peanuts contribute substantially to global food security, particularly as an affordable source of plant-based protein and energy. This review highlights the nutritional composition of peanuts, emphasizing their high content of proteins, unsaturated fatty acids, dietary fiber, essential vitamins, minerals, and diverse bioactive compounds such as polyphenols, phytosterols, and resveratrol. These components support cardiovascular health, metabolic regulation, and the prevention of chronic degenerative diseases. The paper also discusses the growing utilization of peanuts and their by-products in food technology, including the development of functional foods, protein-rich ingredients, and nutraceuticals through innovative and sustainable processing technologies. Furthermore, the valorization of peanut by-products aligns with circular economy principles by reducing waste and enhancing resource efficiency. Overall, peanuts represent a multifunctional food crop with significant potential to improve nutrition, public health, and sustainable food systems.

Abstract

The human gut microbiota plays a vital role in maintaining overall health by regulating digestion, nutrient metabolism, immune function, and protection against pathogenic microorganisms. Imbalances in gut microbial composition, known as dysbiosis, have been strongly linked to the development of chronic diseases such as obesity, type 2 diabetes, inflammatory bowel disease, and cardiovascular disorders. Modern dietary patterns characterized by high intake of ultra-processed foods and low dietary fiber are major contributors to microbial dysbiosis. Prebiotics and probiotics have gained attention as functional food components capable of beneficially modulating gut microbiota composition and activity. Probiotics introduce beneficial microorganisms that enhance intestinal barrier function, suppress pathogens, and regulate immune responses, while prebiotics selectively stimulate microbial growth and promote short-chain fatty acid production. The synergistic use of prebiotics and probiotics supports gut integrity, immune balance, and metabolic health. Their integration into daily diets represents a promising strategy for preventive nutrition and long-term disease risk reduction
