Abstract

The filling ingredient commonly used in sausage production is tapioca flour. One alternative to tapioca flour is durian seed flour. Durian seed flour can be used as a filling ingredient in processed chicken products because it contains 88.68% starch. The addition of durian seed flour is one alternative that can be used to increase sausage variety and improve sausage quality. The method used to solve the problem was an institutional approach, namely a process of continuous guidance and assistance throughout the activity. There were 20 participants involved in this activity, consisting of women from the Paraita Women Farmers Group (KWT). The assistance was focused on guiding and assisting the KWT women in applying the technology of processing livestock products in the form of sausages. The community service activity was carried out by conducting counseling, followed by training and mentoring for the women of KWT in Pulliwa Village, Bulo District, Polewali Mandar Regency. This activity provided information to KWT that sausage can be made not only with tapioca flour, but also with cheaper durian seed flour, thus opening up business opportunities to increase members' income. The community service activity through counseling, training, and mentoring for the women of the Paraita Women Farmers Group (KWT) in Pulliwa Village, Bulo District, Polewali Mandar Regency successfully increased the knowledge and skills of the participants in processing livestock products into sausage products with the innovation of adding durian seed flour as a filler.

Abstract

Limited access to healthcare facilities and low health literacy remains significant challenges, particularly on Hiri Island, North Maluku. SMP Negeri 10 Ternate City is one of the schools on Hiri Island equipped with a school health unit (UKS) room, yet it has not been utilized optimally. This community service initiative aimed to promote health independence among school members by providing education on Clean and Healthy Living Behavior (CHLB) and training in the use of basic medical tools. The methods included CHLB education for students and mentoring for teachers in the operation of sphygmomanometers and digital thermometers, which were also provided as support for the UKS facility. Evaluation was conducted through a pre-test and post-test using a questionnaire consisting of 10 true/false questions. The analysis revealed a significant improvement in students knowledge (p 0.05) regarding CHLB, with average scores increasing from 57.89 (pre-test) to 73.68 (post-test). Furthermore, students enthusiasm during the activities indicated that an interactive educational approach can foster awareness of the importance of healthy living habits. This program not only yielded short-term benefits but also paved the way for sustainability and replication in other schools.

Abstract

Ensuring a safe and health-promoting school environment requires adequate teacher competence in first aid management. However, limited teacher knowledge and practical skills in providing first aid remain a critical concern in many elementary schools. This community service initiative aimed to implement community nursing care through educational interventions and first aid demonstrations focusing on injury and choking management, thereby improving teachers knowledge and preparedness. The activity employed the community nursing process comprising assessment, diagnosis, planning, implementation, and evaluation. A windshield survey revealed frequent minor injuries among students, insufficient first aid facilities, the absence of a School Health Unit (UKS), and several environmental risk factors for injuries. Interviews with the principal and UKS instructor indicated that while injuries were common and choking incidents had occurred within the past six months, teachers had not previously received formal training or procedural guidance. The intervention included lectures and demonstrations delivered to three UKS instructor teachers, utilizing PowerPoint slides, leaflets, teaching aids, and guidebooks. Knowledge and skills were evaluated using pre-test and post-test instruments and an observation checklist. Results indicated a substantial increase in knowledge from 33.3% to 100%, with wound management skills rated as good (100%) and choking management skills rated as good in most participants (66.7%). In conclusion, educational and demonstrative interventions effectively enhanced teachers first aid competence. The program has potential for replication by schools, community health centers, and education authorities as a promotive and preventive strategy at the elementary school level.
