Abstract

Lactic acid bacteria as probiotic are considered alternative to antibiotic growth promotor. The aims of this study wereto investigate inhibition of lactic acid bacteria isolated from completed feed silage based on corn silage (SRKJ), palm silage(SRKS) and cassava silage (SRKU) by products. Data from Factorial Completely Randomized Design were analyzedvariance followed by Duncan test. The result showed that the inhibition and number lactic acid bacteria isolated from SRKJ(0,38 cm, 6,05 cfu/gr) were higher (P<0,05) than those of SRKS (0,27 cm, 5,82 cfu/gr) and SRKU (0,22 cm, 5,14 cfu/gr).It is concluded that lactic acid bacteria from SRKJ was the best in term of number latic acid bacteria and inhibition ability.

Abstract

Meatball and sausage are two types of popular meat processing. This research was aimed to determine and comparethe palatability of meatball and sausage from fresh beef meat, frozen beef meat and commercial product. The research methodwas level of preference /acceptance of panelists with the organoleptic test included color, aroma, texture, elasticity and flavorof meatball and sausage with five criteria of hedonic scale of: 1 (strongly dislike), 2 (not like), 3 (neutral), 4 (like) and 5 (verylike). The values from panelists were statistically analyzed by using a non parametric Kruskal-Wallis method. The resultshowed that the characteristics of color, aroma, texture, elasticity and taste of the meatball and sausage from fresh meat,frozen meat or commercial product did not differ, although the panelists tended to be more like the meatball and sausage fromfresh meat.

Abstract

The research was conducted in August 2010 to October 2010 in Pekanbaru. Location of the research was focused attraditional markets included Palapa and Selasa market. This study aimed to determine the distribution patterns of birds thatare traded in traditional markets in order to describe the potential ways of the spread of Avian Influenza virus. This studyused survey methods, involved the poultry traders and buyers as the respondents of both markets. The poultry buyers weretaken by randomly and purposively. Interview to buyers poultry were conducted 1 time a week for 4 weeks. The variablesincluded 1) type of poultry sold, 2) area of origin of poultry for sale; 3) the number of poultry sold; 4) domicile poultry buyer,and 5) the need for buying poultry. Based on the results of the study and description of the discussion could be drawn someconclusions, as follow 1) the pattern of distribution of live poultry were traded at Palapa and Selasa market covered a range of Pekanbaru City area, outside the city of Pekanbaru and outside the Riau Province; 2) distribution of live poultry caused by the mobilization of traders and buyers of poultry has the potential for transmission, distribution and outbreaks of avian influenza, both among the animals (poultry) or to humans.

Abstract

Salted eggs are a source of animal protein foods suitable for children, adolescents, parents, people in the healing periodand pregnant women. This study aimed to determine the effect of oven temperature on protein content and taste of saltedeggs. This study uses pesisir duck eggs (Indian Runner) fresh 48 hour maximum age of 200 items weighing 65-70 g obtainedfrom a breeder in Anduring Padang, 3000 grams of brick powder, gray rub 2000 grams and 1000 grams of salt. Researchmethod used is the method of experiment with Random Design Group (RAK), which consists of 4 treatments and 5 groups asreplicates. Treatment A (oven temperature 70ºC), B (oven temperature of 80ºC), C (oven temperature of 90ºC) and D (oventemperature of 100ºC). Oven eggs done for 6 hours, then stored for 25 days. Observed variable is based on dry weight proteincontent and taste of salted eggs. The data obtained were statistically analyzed with F test, if influential followed by Duncan'stest. The results showed different effects very significantly (P<0,01) on texture, significantly different (P<0,05) proteinlevels, showing the influence of different flavors but not significant (P>0,05) to the aroma of salted eggs. Based on theresearch results can be concluded that the oven temperature best eggs after 25 days of storage is at a temperature of 90ºC witha 37,00% protein content, taste 2,47 (like), aroma 2,38 (neutral) and texture 2,66 (like).

Abstract

The objective of the study was to analyze the financial feasibility of the Karisa Broiler Farm based on Net PresentValue (NPV), Benefit Cost Ratio (BCR) and Internal Rate of Return (IRR). The research was conducted on May to June2010 at Karisa Broiler Farm located in Simpang Baru, Tampan, Pekanbaru, Riau. The data consisted of primary data andsecondary data. The primary data consisted of the respondent identity, the general condition of broiler farm, the reveniew, theneed of employee, the sallary of employee, the structure of reveniew, the production factors, the fixed cost and the variablecost. The secondary data was the data from the village office and the sector office. The method was case study. The location ofstudy was choosed directly where the Karisa Broiler Farm was a potentially broiler farm in Pekanbaru. The data was collectedas indept interview using questioner. The respondents were the owner and the employee of Karisa. The data was analyzedusing quantitative descriptive analysis and then showed using financial analysis model throught out project analysisapproach. The result showed that if the Karisa farm use the own capital, where the interest rates was 6,25%, then the NPVwas Rp 274.192.038,8,- and the BCR was 1,12 and if the Karisa farm use the loan capital, where the interest rate was14,5%, then the NPV was Rp 100.583.235,4 and the BCR was 1,06. The IRR of Karisa farm was 22,25%. Based on theeligibility criteria, where the NPV was possitive, the BCR more than one, and the IRR higher than the prevailing interestrate, then the Karisa farm financially feasible to be runed and to be continued.
