Abstract

The process of making durian fermentation in Indonesia has many variations, including the addition of salt and turmeric with a shelf life of 3-5 days. These different processing methods can affect the growth, type, amount and production of lactic acid from LAB bacteria. This study aims to determine the type of LAB in durian fermentation added with salt, turmeric and a combination of both. Isolation was done aseptically using MRS media and incubated at 370C for 48 hours. Furthermore, identification was carried out, namely morphological observations and biochemical tests. Based on the test results, one type of LAB isolate was obtained, namely Lactobacillus casei.

Abstract

The aim of this study were to determine the content of phytochemical compounds from tree parts of nutmeg (flesh, mace and seed),to compare the inhibitory effect of the extracts from the tree parts of the nutmeg (flesh, mace and seed) and the concentration that were effective in inhibiting the growth of the fungus Candida albicans. The extraction method was the maceration, the phytochemical testing was carried out qualitatively, and the antifungal activity was tested using punch hole method with concentrations of 25, 50, 75 and 100 %, positive control using ketoconazole and negative control using steril distilled water The result of this study showed that the etanol extract of nutmeg flesh was effective in inhibiting the growth of the fungus Candida albicans at concentration 75 % dan 100%. While the seed extract of nutmeg had a low inhibition zone. The etanol extract of nutmeg flesh and mace can be potential as antifungal.

Abstract

The peel of the kepok banana (Musa paradisiaca L.) has been found to contain bioactive compounds that have the potential to accelerate wound healing. The objective of this study was to ascertain the efficacy of a cream formulated from kepok banana peel extract in the healing of incision wounds in mice (Mus musculus). The present study employed a completely randomised design (CRD), with 21 mice divided into seven treatment groups: control cream, sulfadiazine, and banana peel extract cream at concentrations of 3%, 6%, 9%, 12%, and 15%. The treatment was administered for a period of seven days, after which the thickness of the epithelial layer and the density of collagen were measured. The data were analysed using a one-way analysis of variance (ANOVA) and Duncan's test. The results demonstrated that the banana peel extract cream had a significant effect on wound healing (p<0.05). The greatest epithelial thickness was observed at a 3% concentration (69.42 ± 4.45 µm), while the highest collagen density was observed at a 15% concentration (44.10 ± 1.80%). The study concluded that banana peel extract cream is effective in accelerating the healing of incision wounds in mice.
