Abstract

The Adolescents are an age group in transition from children to adults, experiencing a period of development and growth characterised by rapid psychological, cognitive and physical changes. Adolescents' nutritional knowledge can influence their food choices to meet their body's nutritional needs. In this modern era, there are many fast foods that are favoured by teenagers and supported by very attractive advertisements, so fast food is very fast in marketing, but the habit of consuming fast food can cause various health problems such as overweight. This study aims to determine the description of nutritional knowledge and consumption habits of fast food in adolescents at SMAN 10 Jambi City and was conducted in April-August 2024. This study is a quantitative descriptive study data collection by distributing nutrition knowledge questionnaires and FFQ questionnaires. The sample size was 85 adolescents. Data analysis in this study used univariate analysis to determine the description of nutritional knowledge and fast-food consumption habits. The results showed a picture of poor nutritional knowledge in as many as 44 respondents (51.8%), moderate in as many as 29 respondents (34.1%) and good in as many as 12 respondents (14.1%). The picture of fast-food consumption habits as many as 80 respondents (94.1%) do not usually consume and as many as 5 respondents (5.9%) usually consume. It can be concluded that there are still adolescents who do not understand nutritional knowledge and usually consume fast food. It is expected that the school must control the consumption of fast food among adolescents in school by educating the vendors in the school canteen, namely to sell snacks that are good and healthy for adolescents and to reduce the types of snacks and foods related to fast food.

Abstract

hetic food colouring is usually used in steamed biscuits to create attractive colours that appeal to consumers. In an effort to diversify food products through the use of mangosteen rind juice, further processing is being undertaken, one of which is the use of mangosteen rind juice as a natural colouring agent on steamed biscuits. The purpose of this study was to determine the acceptability and nutritional content of steamed sponge cake with the addition of mangosteen rind juice as a natural colour. This research is an experimental study using a completely randomised design (CRD) with four treatments of adding (0ml, 10ml, 20ml, 30ml) mangosteen rind juice. Acceptability was tested using a hedonic method organoleptic test conducted by 30 untrained panelists. Nutritional content was tested, namely water content, ash content and vitamin C content. Acceptability test data were analysed using SPSS one-way ANOVA and Duncan's post hoc test. The acceptability of the steamed sponge cake with mangosteen juice added gets the best mean value preferred by the panelists, namely A4 (mangosteen juice added 20 ml) with a mean value of 4.01 (category likes). With a water content of 30.93%, an ash content of 1.11% and a vitamin C content of 14.05 mg/100g.  From the results of this study, it can be concluded that the addition of mangosteen peel juice to steamed sponge cake is significantly different in the aroma and flavour parameters, while the texture and colour parameters are not significantly different.

Abstract

Mung beans are generally only processed into mung bean porridge or filling in snacks such as onde-onde and bakpia. However, mung beans can be processed into flour which is used as an ingredient in processed steamed biscuit products. Therefore, there is a need to develop steamed sponge products using local food ingredients that are readily available at affordable prices but have full nutritional value, especially protein and water content and low gluten content compared to steamed sponge in general. The aim of this study was to determine the effect of replacing wheat flour with roasted mung bean flour on the acceptability, moisture content and protein content of steamed sponge. This research is an experimental study using a completely randomised design (CRD) with 4 treatments of steamed sponge cake substituted by wheat flour and roasted mung bean flour. The organoleptic test was carried out by 30 untrained panelists, then the organoleptic test results were analysed using SPSS one-way ANOVA and Tukey's post hoc test. This study shows that the acceptability and nutritional value of the steamed sponge cake substituted by wheat flour and roasted mung bean flour obtain the best average value preferred by the panelists, namely in sample P2 (75% wheat flour: 25% roasted mung bean flour) both in terms of colour 4.07 (like), aroma 3.63 (rather like), texture 4.10 (like) and taste 3.94 (rather like). From the results of this study it can be concluded that the substitution of wheat flour and roasted mung bean flour has a significant effect on the acceptability of the texture parameters of steamed sponge cake and has no significant effect on the aroma, colour and taste of steamed sponge cake. The P2 treatment (75% wheat flour: 25% roasted mung bean flour) is the best formulation treatment, while the nutritional value of the steamed sponge cake is not affected.

Adolescent nutritional status can be influenced by various factors, one of which is body image. Body image is a person's attitude about feeling satisfied or dissatisfied with his body, resulting in a negative or positive assessment of himself. Based on the results of Riskesdas 2023, it shows that the prevalence of nutritional status of adolescents in Indonesia aged 16-18 years is 1.4% very thin, 6.7% thin, 78.3% normal 9.5% fat and 4.0% obese. Abstract

The prevalence of overweight among adolescents is a significant health issue that can be influenced by various factors, including nutrition knowledge, family socioeconomic status, and consumption of sugar-sweetened beverages (SSBs). This study was conducted at JHS 9 in Jambi City to explore the relationships between these factors and overweight status among adolescents. The aim of this research is to analyze the relationship between nutrition knowledge, family socioeconomic status, and SSB consumption with overweight status among adolescents at JHS 9 in Jambi City. The study used a correlational analytical design with a sample of 39 adolescents. Data were collected through questionnaires to assess nutrition knowledge, socioeconomic status, and SSB consumption, as well as anthropometric measurements to evaluate overweight status. The majority of respondents had inadequate nutrition knowledge (76.9%), low socioeconomic status (61.5%), and high SSB consumption (87.2%). Data analysis revealed no significant relationships between nutrition knowledge, socioeconomic status, and SSB consumption with overweight status among the adolescents at the study site. These findings suggest that nutrition knowledge, socioeconomic status, and SSB consumption are not significantly related to overweight status among adolescents at JHS 9 Jambi City. This indicates the need for further exploration of other factors that might contribute to overweight status, as well as a more comprehensive approach in future research
