Abstract

Abstract

Abstract

Pineapple is a perishable fruit, has a short shelf life which is only lasted 7 days at room temperature conditions (28oC - 30oC). To overcome this problem, it is necessary to do postharvest processing of pineapple as a form of pineapple diversification, so that it can maintain the value of pineapple sales during the pineapple season and abundant pineapple. One diversification of pineapple that can be done is to make pineapple chips. Making pineapple chips is done by 2 methods, namely making chips with pineapple that was previously in the freezer first and making chips with fresh pineapple. Characteristics of fresh fruit and pineapple chips are tested in a laboratory, including test parameters: proximate (water content, ash content, fat content, protein content and carbohydrate content), total acid, vitamin C, reducing sugar, pH, total dissolved solids and% parts which is eaten. Pineapple chip shelf life test is carried out on two treatments namely freezer (through cooling) and fresh (without freezer). Each treatment was tested with a mass stored in pp-Al foil and full Al-foil packaging. Each treatment in each package was tested for ALT-bacteria and MPN coliform. From the results of the ALT Bacterial Laboratory Test it was seen that for fresh pineapple chips and freezer pineapple chips with full aluminum foil or half aluminum foil (pp-al foil) packaging there was no difference in results where bacterial growth was still 0 (no bacteria growing, only MPN Coliform but still below the eligibility standard that is <2). This proves that pineapple chips made are suitable for consumption in a storage period of 1 month.

Ariadi Z, Nurwahyudi MA, Efriandi E, Defriyanti WT. 2022. The determination of horticultural clusters using superior commodity approach in South Sumatra. In: Herlinda S et al. (Eds.), Prosiding Seminar Nasional Lahan Suboptimal ke-10 Tahun 2022, Palembang 27 Oktober 2022. pp. 954-962. Palembang: Penerbit & Percetakan Universitas Sriwijaya (UNSRI).The implementation of horticultural development by regional governments in South Sumatra still has various obstacles, such as a large number of production centers with the same commodity, production adequacy, and budget constraints. Therefore, it is important to focus on the development of horticultural clusters. This study aimed to determine the horticultural clusters using the superior commodity approach in South Sumatra. We use horticultural production data series as data sources. We also use Location Quotient (LQ), Shift Share analysis, and Klassen Typology as analysis methods. The results showed that each horticultural commodity tested had a comparative advantage and was spread over the districts/cities. The same conditions also occurred for competitive advantage. Another result showed that only 8 (eight) commodities simultaneously had comparative and competitive advantages in a district/city. Thus, it was determined that the district/city area where the two advantages are located is designated as a horticultural cluster. These clusters were the shallot clusters in Ogan Komering Ulu and Pagar Alam, the chili cluster in Ogan Komering Ilir, the potato cluster in Pagaralam, the duku clusters in Musi Rawas Utara, the durian cluster in Musi Rawas, Ogan Komering Ulu Selatan, and Musi Rawas Utara, the citrus clusters in Ogan Komering Ulu, Musi Rawas Utara, and Pagar Alam. mango cluster in Musi Rawas Utara and banana cluster in Muara Enim.

Abstract

Fish is one of the sources of animal protein that many people consume because it is relatively easy to obtain and the price is affordable. Because of the many fish there are, so we need a way to preserve them. One way that has been done is by developing fish processed products. The purpose of developing processed fish products is to process river / freshwater fish into long-lasting processed products, and to find out the types of good packaging for the shelf life of processed fish products. Sampling was carried out in Air Itam Village, PALI Regency, on the SMEs that make stir-fry and non-stir-fry pekasam. The method used is a laboratory test method to determine microbiological tests (Total Plate Figures), and determination of pH. From the test results it can be seen that stir-fried pekasam is not suitable for direct consumption with a shelf life of more than 5 days if stored at room temperature when viewed from the number of bacteria and fungi that have passed the standard food standard, but if it is reprocessed before consumption (sauteed) it may still be feasible because some bacteria and fungi that can't stand the heat will die. Saute Pekasam is not suitable for consumption with a shelf life of more than 5 days if stored at room temperature (because the sample is tested after 5 days of manufacture, the sample is not tested on Day 0 to Day 5, which may still be fit for consumption before day 5 ). In order to produce processed fish products in the form of durable pekasam, the process of making pekasam can be done hygienically so that it can inhibit the growth of bacteria and fungi.
