Abstract

In Minahasa, North Sulawesi, the people in the villages of Minahasa has an annual harvest-related celebration called Pengucapan Syukur or Thanksgiving celebration of the people of Minahasa. According to a research in South Minahasa, this Christian celebration that has been practiced at least since 1940 has gone through changes along the way. This tradition has developed as such in line with the dynamics of the Minahasans. Thanksgiving used to be celebrated only in the villages in some parts of Minahasa, but nowadays this tradition has also been celebrated in the capital city of Minahasa, Manado. This local thanksgiving tradition clearly focuses on the food being served on the thanksgiving table. In this celebration they have to serve abundant food of traditional taste, championing nasi jaha and dodol. Each and every household has special budget that allows them to prepare abundant food for this occasion. This is a qualitative research using ethnographic approach. Schechner’s performance theory is used to understand the meaning of the thanksgiving table.

Abstract

Jakarta as a metropolitan city provides various types of public space. This paper focused on culinary spaces in urban Jakarta. Food is not only basic necessity for human, it also delivers symbolic messages. Through public dining areas, we could reveal various problems regarding social class of the visitors. On this paper, we will analyze three public dining areas: Plataran Dharmawangsa, Waroeng Solo, and Warung Mbak Yati which are considered to represent the upper, middle, and lower social classes. This paper uses Bourdieu’s distinction, arena, and capital and Lefebvre’s concept of space -which is specified by Low and Smith. This paper reveals that Bourdieu’s notions explained several things about culinary spaces and social class in urban Jakarta. Sebagai kota metropolitan, Jakarta menyediakan banyak jenis ruang – dalam berbagai arti – kepada penduduknya. Ruang yang didiskusikan dalam tulisan ini adalah ruang kuliner di urban Jakarta. Makanan bukan hanya kebutuhan, tetapi juga menyampaikan pesan simbolis. Dengan demikian, melalui ruang tempat makan sebagai ruang publik dapat diungkap berbagai hal terkait kelas sosial pengunjungnya. Dengan melihat tiga jenis tempat makan: Plataran Dharmawangsa, Waroeng Solo, Warung Mbak Yati yang dianggap mewakili kelas sosial atas, menengah, dan bawah, penelitian kecil ini akan mencoba mengungkap relasi tempat makan dan kelas sosial dalam masyarakat Jakarta. Analisis menggunakan pemikiran Bourdieu tentang distingsi (distinction), arena, dan kapital sementara konsep ruang didasarkan kepada Lefebvre yang dispesifikkan oleh Low dan Smith. Penelitian kecil ini mengungkap bahwa pemikiran Bourdieu menjelaskan beberapa hal tentang ruang kuliner dan kelas sosial di urban Jakarta.

Abstract

As it concerns the sense of sight, visual culture puts its focus on everything of visual nature. Specific for food, visual culture has played an important role in the development of culinary culture. Corresponding to the rising of visual turn, visual perception has earned its specific role in culinary scene. Regarding this research, it is of great importance to recognise that food has both the visual and gustatory side. Visual relates to the aesthetic side, which is about its visual appearance and gustatory side is about the taste. In food industry led by the Western world with its famous chefs, visual perception is key. When food is served in high-end premises or special places for tourism purpose, visual perception is significant. For Indonesia, one of the tourist attractions is the regional food. Indonesian regional foods certainly have its own unique appearance, but are they acceptable for international culinary standard? Do Indonesian regional foods need to change their visual appearances in accordance with the requirement of the international standard? Using food images taken from the Internet, this article delves into the opposition and negotiation of visual and gustatory perception.

Abstract

Pengucapan syukur Minahasa merupakan tradisi panen yang dirayakan setiap tahun, yang mempertemukan ritual religi Kristen dan ritual religi tradisional masyarakat Minahasa pra-Kristen. Ritual-ritual yang sakral maupun yang profan melibatkan makanan yang berlimpah. Tradisi pengucapan syukur merupakan wujud rasa bersyukur kepada Tuhan Yang Maha Besar (Opo Empung Wailan Wangko) atas berkat keberhasilan panen. Terkait makanan dalam tradisi panen ini, nasi jaha yang dimasak dalam bambu dan dodol merupakan makanan yang wajib dihadirkan untuk dimakan di tempat perayaan dan/atau dibawa pulang sebagai oleh-oleh. Artikel ini mendiskusikan bagaimana kuliner tradisional Minahasa, terutama yang dimasak dalam bambu, menjadi salah satu unsur yang membuat tradisi ini tetap bertahan kendati ada kendala-kendala dalam perayaan tahunan. Penelitian ini memperoleh data melalui kajian kepustakaan, wawancara, dan observasi di lapangan yang dilengkapi dokumentasi.
