Abstract

This study aims to analyze the organoleptic and chemical characteristics of sweet bread substituted with seaweed flour (Eucheuma cottonii) and taro flour (Colocasia esculenta L. Schott). The research used four treatments with different ratios of seaweed flour to taro flour, namely P1 (0%:100%), P2 (30%:70%), P3 (35%:65%), and P4 (40%:60%), each with two replications. The parameters tested included fat content, protein content, moisture content, ash content, and organoleptic tests using the hedonic method. The study was designed using a Completely Randomized Design (CRD). Chemical data were analyzed using ANOVA and further tested with Duncan's test, while organoleptic data were analyzed using the Kruskal-Wallis test. The results showed that the P4 treatment (40% seaweed flour: 60% taro flour) provided the best results in organoleptic tests. The Kruskal-Wallis test results indicated that the different proportions of seaweed flour and taro flour significantly affected the appearance, aroma, color, texture, and taste of the resulting sweet bread. The chemical characteristics of the sweet bread in the best treatment (P4) were 2.58% fat content, 8.69% protein content, 27.07% moisture content, and 1.75% ash content. This research indicates that the substitution of seaweed flour and taro flour can produce sweet bread with good sensory quality and a chemical composition that is potential for food product diversification.

Abstract

Vannamei shrimp farming requires the proper application of technology and management to enhance productivity and sustainability. This study aims to analyze the application of the best technology and management practices by vannamei shrimp (Litopenaeus vannamei) farmers in Mananggu District, Boalemo Regency, Gorontalo Province. The methods used include observation and interviews with 8 out of 11 farmers, with data collected through questionnaires focusing on six indicators of Best Management Practices (BMP): pond preparation, feed management, seed management, water quality management, pest and disease monitoring, and harvesting. The results show that 7 out of 8 farmers implemented technology during the pond preparation stage. Education level also influenced practices, with 62.5% of respondents having higher education (high school to bachelor's degree). The application of BMP plays a crucial role in improving the efficiency of vannamei shrimp farming in this area.

Abstract

The present study aimed to identify the Octolasmis spp. ectoparasite's intensity and prevalence in mud crab in Pohuwato Regency. It employed survey and site observation methods with sampling technique of mud crabs in Pohuwato Regency. The research was carried out in three different sites: site 1 (Pohuwato Timur Village), site II (Bulili Village), and site III (Mootilango Village). The results showed that the parasites infesting mud crab in the three separate locations are Octolasmis angulata and Octolasmis cor. The highest intensity rate was at site III, which was dominated by Octolasmis cor. The prevalence of the parasite in sites I, II, and III was 60%, 40%, and 60% in consecutive order. Moreover, the parasite has a 100% and 46% prevalence in female and male crabs, respectively. The water quality indicator (involving temperature, pH level, and soluble oxygen) was at the appropriate rate for mud crab farming.

Abstract

Color is one of the reasons ornamental fish are in demand by the community, so farmers need to maintain the color of ornamental fish. This study aims to determine the effect of carrot juice on the color of goldfish. This research was conducted from December to January 2023. The method used was an experimental method with Complete Randomized Design (RAL) with four treatments and three repeats in each test group. Testing is carried out by giving feed with a mixture of carrot juice with different doses. The results showed that the color values in goldfish were different, namely, P0 treatment without giving carrot juice with a color value of 18.54, P1 treatment (10 g/100 ml aquades) with a color value of 18.4, P2 treatment (20 g/100 ml) with a color value of 19.35, P3 treatment (30 g/100 ml) with a color value of 17.67. Analysis of Variance (ANOVA) showed that the effect of carrot juice on the color of goldfish had no significant effect on each treatment with FHitung (0.11) > FTabel (4.07). Water quality parameters during the study were still in normal conditions for the growth of goldfish.

Abstract

The present rescarch aimed to analyze the sensory characteristics and moisture content of smoked skipjack tuna using modern smoking equipment at different smoking times. The research method used was an experimental research method with two replications. Besides, the treatment factor was the length of smoking times which consisted of three levels:  one hour, three hours, and five hours. The moisture content test was done through non-factorial completely randomized design analysis and Duncan’s multiple range test, In contrast, the sensory quality test was analyzed descriptively using the Rasch Model method. The findings revealed that different lengths of smoking had a significant effect (p 0,05) on the moisture content of smoked skipjack tuna. Based on the results of the Rasch Model analysis, it was found that the panelis preferred the sensory quality of smoked fish in treatment B (three hours).

Abstract

Pemanfaatan Rumput Laut khususnya di wilayah perairan Teluk Tomini masih belum maksimal. Terlebih untuk jenis rumput laut coklat (Sargassum, sp.). Sargassum, sp. masih dianggap sebagai sampah oleh masyarakat karena hanya terbawa oleh arus dan gelombang ke daerah pesisir pantai. Sehingga perlu dilakukan edukasi yang lebih maksimal untuk meningkatkan pengetahuan masyarakat mengenai rumput laut coklat. Tujuan dilakukannya pengabdian ini yaitu untuk mengedukasi masyarakat mengenai manfaat lain dari Sargassum, sp. dengan cara memberikan penyuluhan dan sosialisasi dengan media proyektor dan brosur. Dan juga tanya jawab. Dengan penyuluhan dan sosialisasi tersebut, masyarakat antusias untuk mendengarkan serta menambah literasi masyarakat mengenai Sargassum sp.
