Abstract

Brown seaweed is one of the abundant resources that grows on the reefs of Pohuwato, Gorontalo Province. This research was aimed to determine the characteristics of S. polycystum and P. minor as sources of salt for hypertensive patients. The research consisted of proximate analysis, minerals, heavy metals, extraction, phytochemicals, phenols analysis, and antioxidant activity. S. polycystum, P. minor had water content of 17.69-22.31%, ash 24.51-30.53%, fat 0.50-0.52%, protein 3.65-4.78%, carbohydrates 53.66-41.88 and crude fiber 3.81-6.52%. The seaweeds also contained  Mg 8.89-22.41 mg/g, Fe 0.50-1.00 mg/g, K 26.90-32.71%, Na 22.23-22.69 mg/g, Ca 18.06-32.91 mg/g and ratio Na:K 0.69-0.83 mg/g. Heavy metals were detected in low levels with the content<0.002-<0.004 ppm. Ethanol extract of S. polycystum contained flavonoid, saponin, streoid, alkaloid. Meanwhile ethanol extract of P. minor contained flavonoid, saponin, triterpenoid, stereoid, phenol, dan alkaloid. Total phenol level of S. polycystum was 173.6 mg GAE/g and P. minor was 568.7 mg GAE/g. The antioxidant IC50 of S. Polycystum was 77.58 mg/L while P. minor was 66.38 mg/L.

Abstract

Brown seaweed has the potential to be developed as a source of salt for hypertension, but the distinctive aroma of seaweed is still an obstacle in the final product. Activated carbon is a non-toxic material that can be used to reduce the aroma of S. polycystum and P. minor salts . The purpose of this research is to determine the concentration of activated carbon in the process of making S. polycystum and P. minor salts to produce salt that is acceptable to the public. The method used with different concentrations of activated carbon (0%, 0.50%, 0.75%, 1%, 1.25%, 1.50% (w/v)) in the salt making process ,Sensory test of aroma and characterization of seaweed salt. Salt characteristics include mineral content (Mg, Fe, Ca, Na, K), Na:K ratio, NaCl content and antioxidant activity. The optimum activated carbon concentration of S. polycystum salt is 1.50% with Mg 29.24 mg/g; Fe 0.15 mg/g; Ca 27.66 mg/g; Na:K ratio 0.87 mg/g; NaCl 33.87%; antioxidant activity 201.0 mg/L. The optimum concentration of activated carbon of P. minor salt is 1% with Mg 39.05 mg/g; Fe 0.03 mg/g; Ca 32.28 mg/g; Na:K ratio 1.97 mg/g; NaCl 28.34% and antioxidant activity 111.39 mg/L.

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh pra kondisi ikan tembang (Sardinella fimbriata) (kering, kukus, segar) dan konsentrasi asap cair 0,3%, 0,5%, 0,7%, 0,9%, 1,0% terhadap karakteristik kimia dan tingkat penerimaan produk ikan tembang (Sardinella fimbriata)asap cair. Penelitian ini dirancang menggunakan Rancangan Acak Kelompok Faktorial (RAKF) dan dianalisis menggunakan ragam ANOVA dua arah. Hasil penelitian menunjukkan kombinasi perlakuan pra kondisi (kering, kukus, segar) dan konsentrasi asap cair yang berbeda menunjukkan tidak berpengaruh nyata terhadap kadar air, akan tetapi memiliki pengaruh terhadap kadar fenol, pH, warna, rasa, aroma dan tekstur produk ikan tembang asap cair. Penerimaan panelis lebih menyukai produk ikan tembang asap cair yang diperoleh dari kombinasi perlakuan pra kondisi kering pada konsentrasi asap cair 1,0%. Karakteristik produk tersebut yakni memiliki tekstur yang kompak/padat, memiliki aroma keasap-asapan yang kuat serta warna kecoklatan yang mengkilap.

Abstract

Mustika Village is a village located in Paguyaman District, Boalemo Regency, Gorontalo Province. In facing the Asian Economic Community (AEC), each region must do more to improve its local economy, one way is to maximize its potential. One of the leading commodities and has the potential to be developed in Mustika village is corn which has agricultural waste that has not been utilized properly. The purpose of this activity is to empower the community in the process of utilizing corn cobs as a raw material for feed, in an effort to increase the selling value of underutilized corn cobs. The method used consists of three stages, namely the first stage of surveys and interviews; both socialization and material counseling; and third, training on corn cob waste processing. The results of this activity, starting with observations and interviews, data collection of farmer groups, preparation of activities according to the results of field observations, conducting counseling to provide new insights and information to the community; conduct training in improving community skills, as well as direct practical assistance to the community or farmer groups. The conclusion with this program is that the community, especially farmer groups, are able to process corncob waste into feed and compost in community development.

Abstract

Kwandang District has abundant fisheries resource potential. Therefore, it is necessary for the fisheries processing process to increase local community income to support the economy of the community in Kwandang District by utilizing Micro, Small and Medium Enterprises (MSMEs). The problem in society is that there is still a lack of experience in implementing sanitation and hygiene in MSMEs, such as sanitation and hygiene of raw materials, employees, facilities, infrastructure, products, final products, mutual contamination, and handling of the waste produced. The aim of this activity is to increase knowledge regarding good production methods by implementing correct sanitation and hygiene and creating quality products that are liked by the public that meet product quality standards. The method used consists of 3 stages. The first stage is conducting surveys and collecting data on the distribution of groups of MSME actors, the second stage is educational activities by providing material on sanitation and hygiene and the third stage is training on fishery product processing. The results of location observations show that there are 5 groups of fisheries processing MSMEs in Katialada Village, Kwandang District, and with socialization/counseling activities they can provide information to business actors regarding the importance of implementing sanitation and hygiene related to all processing facilities, cleaning facilities, personnel and the environment in the Processing Unit Fish (UPI). In addition, training was carried out by demonstrating frozen ebi furry shrimp processing techniques. Conclusion Educational activities with material on the application of sanitation and hygiene as well as fisheries processing techniques can increase the knowledge and skills of business actors. Implementing good and correct sanitation and hygiene in MSMEs can produce standard quality products that comply with Indonesian National Standards (SNI) and can expand marketing.

Abstract

Kerupuk merupakan salah satu olahan tradisional yang digemari masyarakat Indonesia. Selama ini kerupuk diolah dengan menggunakan bahan baku seperti udang dan ikan utuh. Oleh karena itu, fortifikasi kerupuk dengan tepung tulang ikan memiliki beberapa keunggulan antara lain kandungan nutrisi protein dan mineral kerupuk lebih baik, dapat menekan biaya produksi jika dibandingkan dengan menggunakan bahan baku ikan utuh atau udang dan limbah tulang tuna dari industri pembekuan ikan dapat dimanfaatkan. mengurangi jumlah sampah yang dibuang ke lingkungan

Abstract

Abon ikan seringkali mengalami kerusakan secara kimiawi dan fisik akibat oksidasi dan mikrobiologi. Oleh sebab itu diperlukan proses pengawetan untuk mempertahankan mutu dan kualitas abon, salah satunya proses pengasapan. Penelitian ini didesain menggunakan model Rancangan Acak Lengkap (RAL) sederhana yang terdiri dari 3 konsentrasi asap cair (3%,6%,9%) yang diujicobakan pada abon ikan tongkol (Euthynnus affinis). Hasil penelitian menunjukkan bahwa penggunaan konsentrasi asap cair yang berbeda pada abon ikan tongkol (Euthynnus affinis) memiliki kadar air berkisar antara 9,2%-13,1%, kadar abu 7,1%-7,4%, lemak 12,1%-13,2%, protein 32,3%-34,1% dan karbohidrat 33,9%-36,9%. Tingkat penerimaan panelis terhadap produk ikan asap (Euthynnus affinis) umumnya memberikan skor suka hingga sangat suka. Hasil analisis statistik menunjukkan bahwa penggunaan asap cair 3%, 6% dan 9% pada abon ikan tidak memberikan pengaruh (P0,05) terhadap karakteristik kimia dan tingkat penerimaan panelis. Rerata tingkat penerimaan panelis terhadap abon ikan (Euthynnus affinis) asap cenderung meningkat seiring kenaikan konsentrasi asap cair.

Abstract

This study aims to identify saponin compounds and test the antioxidant activity contained in the leaf extract of Thalassia hemprichii seagrass from Tomini Bay Coastal Waters. Seagrass contains various bioactive compounds, one of which functions as an antioxidant, and is rich in protein, fat, fiber and minerals. This research consisted of extraction, saponin test, and antioxidant activity tested using 2,2-diphenyl-1- picrylhydrazyl (DPPH). Thalassia hemprichii methanol extract has saponin compounds, ethyl acetate extract is not detected to have saponin compounds. Saponin content of methanol extract using the gravimetric method was 12.63%. The antioxidant activity value of IC50 T. hemprichii is 1.25 ppm or 1.25 mg/L.

Abstract

Sargassum polycystum merupakan salah satu jenis rumput laut coklat yang tumbuh secara alami di perairan Pulau Payata, Kabupaten Pohuwato. Meskipun melimpah, pemanfaatannya oleh masyarakat pesisir masih sangat terbatas. Padahal, jenis rumput laut ini memiliki potensi besar sebagai sumber pangan karena mengandung berbagai komponen nutrisi penting seperti protein, karbohidrat, dan mineral. Penelitian ini dilakukan untuk mengetahui kandungan gizi dan keamanan konsumsi S. polycystum melalui analisis proksimat, kandungan mineral, dan logam berat. Sampel S. polycystum segar diambil langsung dari habitat alaminya, dikeringkan, dan dianalisis di laboratorium menggunakan metode standar. Hasil analisis menunjukkan bahwa S. polycystum kering memiliki kadar air sebesar 12,80%, abu 31,87%, lemak 0,60%, protein 10,54%, serat kasar 7,42%, dan karbohidrat 44,20%. Kandungan mineral utama yang ditemukan antara lain kalsium sebesar 0,72%, magnesium 216 mg/kg, natrium 213 mg/kg, kalium 114 mg/kg, dan besi sebesar 690 mg/kg. Beberapa unsur mineral mikro lainnya seperti kromium juga terdeteksi dalam jumlah kecil, sedangkan selenium, seng, boron, dan kobalt berada di bawah batas deteksi alat. Selain itu, hasil pengujian logam berat menunjukkan bahwa kadar timbal, kadmium, dan merkuri dalam S. polycystum masing-masing <0,030 mg/kg, <0,005 mg/kg, dan <0,001 mg/kg, yang berarti masih berada jauh di bawah ambang batas aman konsumsi. Berdasarkan hasil tersebut, dapat disimpulkan bahwa Sargassum polycystum di perairan Pulau Payata, Kabupaten Pohuwato tidak hanya memiliki kandungan nutrisi yang cukup tinggi, tetapi juga tergolong aman untuk dikonsumsi. Potensi ini membuka peluang untuk pemanfaatannya sebagai bahan pangan alternatif atau bahan baku produk pangan fungsional yang bernilai ekonomi bagi masyarakat pesisir

Abstract

Ulva lactuca is a type of seaweed that grows in the coastal areas of East Sumba Regency and its use is still limited. One of the efforts made to increase its economic value is to use it as a raw material for nori. Nori made from seaweed has disadvantages such as not being elastic, easily tearing and cracking. Therefore, it is necessary to add Carboxylmethyl cellulose (CMC) which functions as an emulsifier and stabilizer so that it can reduce surface tension so that the resulting nori has good elasticity, does not crack or tear. The CMC concentrations used in this research were 1%, 3%, 5%. The research results showed that Ulva lactuca nori without CMC treatment (P0) had a fairly high crack or tear size, reaching 97.23 mm. In contrast, cracks were not identified in nori products treated with 5% CMC (P3). The proximate composition of Ulva lactuca seaweed nori with different CMC concentrations obtained an average value of water content ranging from 17.49%-30.69%, ash content 10.55%-14.55%, fat content 0.65%-3 .94%, protein content 2.12%-3.04% and carbohydrate content 48.87%-61.89%. Based on the results of statistical analysis, the use of different CMC concentrations had a significant effect (P0.05) on water content, ash content, fat content, protein and carbohydrate content. Optimization of the resulting nori was obtained using 5% CMC (P3) treatment, this is because the physical characteristics of the nori produced have a good level of elasticity (no cracks or tears), have a water content of 30.69%, ash 10.55%, lipid 0 .65%, protein 2.65% and carbohydrates 55.44%.
