Abstract

Background: In food hygiene and sanitation activities in hospitals, hygiene of foodstuffs processed as food for inpatients. Diseases transmitted through food may cause mild disease and severe and even lead to death of them caused by the application has not been good as SOP (Standard oprating Procedure). Objective: To describe efforts to implement hygiene and sanitation in the hospital holistic nutrition installation purwakarta. Methods: The study design was observational descriptive design. 13 research subjects food handlers 2 nutritionists and 11 food handlers in the installation of Holistic Nutrition Hospital Purwakarta. Data execution of hygiene and sanitation installations home nutrition tabulated data and analyzed descriptively. Results: The observation of hygiene and sanitation requirements 100% memmenuhi Decree No. 1096/Menkes/Per/VI/2011 and SOP (Standard oprating procedure). Physical acceptance tests for hygiene and sanitation at the plant nutrition Holistic Hospital Purwakarta getting the 83 or 92% according to the group B, the minimum value of the maximum 83 92, or ranking 83-92%. Conclusion: Environmental sanitation: building, room food processing, sanitary aspects hospitals, materials sanitaiser, sanitaiser equipment and hygiene of food handlers: Health handlers, use of PPE, behavior penjamaha food already eligible under Decree No. 1096/Menkes/Per/VI/2011 and SOP (Standard oprating procedure). Acceptance and implementation of hygiene and sanitation jasanoga class B, a minimum of 83 maximum value of 92, or ranking 83-92%.

Abstract

Background: Diabetes mellitus (DM) is a state of chronic hyperglycemia accompanied by various disorders due to hormonal disturbances that cause a variety of chronic complications in the eyes, kidneys, nerves, and blood vessels. Family support is very important to motivate patients in performing the treatment of diabetes mellitus or diet. Objective: To examine the relationship of knowledge and family support for diet adherence DM outpatient clinic Bhakti Husada Purwakarta. Methods: This study is observational research with cross sectional design. Subjects were patients with DM Clinic Bhakti Husada Purwakarta amounting to 24 people. The data collected is the level of knowledge, family support, and dietary compliance. Data obtained through questionnaires. Analytical data using Chi-Square test. Results: The majority of respondents' knowledge level was classified as less (64.3%), and family support respondents to compliance in therapy of type 2 diabetes diet is good (50%). There is a relationship between knowledge and adherence diet DM patients (p = 0.008), but there is no relationship between family support compliance DM patients (p = 0.408). Conclusion: There is a relationship between knowledge with type 2 diabetes diet adherence.

Abstract

Background: Muscle strength is very important to do activities, not exception for school-aged children. It’s influenced by characteristics of the subject, nutrient intake, and physical activity. Objective: To analyze the correlation between subject’s characteristic, nutrient intake, and physical activity with muscle strength of school-age children in Purwakarta Regency. Method: This study used cross sectional design. Subjects of the study were the students of Junior High School 5 Purwakarta which amounted to 44 people. Muscle strength was measured using a Hand Dynamometer, lean body mass (LBM) using Bio Impedance Analysis (BIA), nutritional intake using a 2x24 hour Food Recall Form, and physical activity using a 24-hour Physical Activity Recall Form. Data analysis using Pearson Product Moment and Mann-Whitney Test. Result: Most of subjects' physical activity was mild (75%). There is no correlation between age (p = 0,228); gender (p = 0,102); LBM (p = 0.350); total energy (p = 0.770); carbohydrate intake (p = 0.968); protein (p = 0.663); sodium (p = 0.890); potassium (p = 0.737); calcium (p = 0.768); magnesium (p = 0,800); and physical activity (p = 0,682) with muscle strength of subjects. Conclusion: There is no correlation between subject’s characteristics, nutrient intake, and physical activity with muscle strength.

Abstract

Background: Physical fitness levels of students can maximize their mind and energy for school activities. Running speed is part of physical fitness. Nutrition is one of the biological factors that influence in supporting fitness .. Adequacy of nutrients, especially macro nutrients as a source of energy and micro nutrients is closely related to the pattern of consumption. To maintain nutritional adequacy, nutritional structuring needs to be done, including the improvement of nutritional status, maintenance of nutritional status, nutrition matching and recovery of nutritional status. Objective: Analyzing factors related to the speed of running students of class VII junior high school. Method: The type of this research is cross sectional research with purposive sampling technique. The number of samples is 42 students of class VII junior high school 5 Purwakarta. Data analysis was performed by Rank-spearman test technique. Result: There is a significant relationship between energy sufficiency level, protein adequacy level and carbohydrate adequacy level with running speed with p value <0,05. There was no significant relationship between fat sufficiency level, intake of Fe, calcium intake, potassium intake, sodium intake, intake of Zink and magnesium intake with runway rate with p> 0,05 . Conclusion: The level of energy adequacy, the level of protein adequacy and the level of carbohydrate adequacy associated with running speed. The level of fat sufficiency, intake of Fe, calcium intake, potassium intake, sodium intake, intake Zink and magnesium intake not related to the level of running speed.

Abstract

Background: The high incidence of Chronic Energy Deficiency (CED) in pregnant women in Indonesia could result in risks and complications in pregnant women and children they contain such as maternal anaemia, LOW BIRTH WEIGHT in infants, susceptible to infection, abort, terhambatnya Fetal brain growth and will increase maternal mortality. Purwakarta Regency, Incidence figures in Chronic Energy Deficiency (CED) in pregnant women, one of whom is still high in the area Work UNIT for Clinics Jatiluhur Purwakarta Year 2017 the number of pregnant women BEING BEATEN as many as 74 people or (5.07%). Objective: Describe the factors related to the incidence of Chronic Energy Deficiency (CED) in pregnant women in areas of Work UNIT for Clinics Jatiluhur Purwakarta year 2017. Method: Design research is a cross sectional. The subject is pregnant with Chronic Energy Deficiency (CED) in the working area health centers UNIT for Jatiluhur Purwakarta Year 2017 of 35 people, and the magnitude of the comparison samples of pregnant women do not Work in the area of DOMESTIC VIOLENCE UNIT for Clinics Jatiluhur As many as 35 people so it purwakarta total sample overall as much as 70 people of pregnant women. Data collection using a questionnaire containing questions about total energy, protein intake, smoking habits, alcohol consumption, parity, age, pregnancy, infectious diseases, physical activity, level of education, knowledge, income, and index the time body (IMT). Analysis of test data using the Chi-Square. Result: Factors related to the incidence of chronic less energy is the Total energy of pregnant women (p = 0,004, PR = 0,410), protein intake (p = 0.001, PR = 2,053) that can be said to be two-fold risk of VIOLENCE in pregnant women when the intake of protein ( < 68%), parity (p = 0,024, PR = 0,410), whereas the factors that are not related to VIOLENCE in pregnant women is the distance of pregnancy (p = 0,148, PR = 0,666), age (p = 0,087, PR = 1,6), infectious diseases (p = 0,156, PR = 1,521), level of education (p = 0.000, PR = 0.703), knowledge (p = 0,148, PR = 0,666), and income (p = 0.000, PR = 0,703). Conclusion: There is a relationship between Total energy, Protein intake, and Parity with Chronic Energy Deficiency (CED) in pregnant women.

Abstract

Background: Adolescence is characterized by changes in body composition caused by hormonal conditions and lifestyle. These conditions have an influence on the pattern of food intake consumed by adolescents. Objective: To describe and analyze the correlation of nutritional intake and body composition of adolescents. Method: This study used cross sectional design. Subjects of the study were adolescents in Purwakarta Regency which selected randomly amounted to 44 people. Nutritional intake data used Food Recall Form 2x24 hours and body composition measurement used Bio Impedance Analysis (BIA). Data analysis used Rank Spearman Test. Results: Mean of subjects’s body weight and lean body mass (LBM) were 43.7±8.6 kg, 33.8±5.2 kg, respectively. Most of level of energy intake of subjects were less (59.1±37.8%), so did calcium (159.4±502.9 mg). Intake of energy, carbohydrate, protein, and fat correlated with body composition of subjects (p<0.05), while intake of iron (Fe), calcium (Ca), Potassium (K), Sodium (Na), Magnesium (Mg), and Zinc (Zn) not sigificantly correlated with body composition of subjects (p>0.05). Zn was being the only micronutrient which correlated to fat mass (p=0.032). Conclusion: Macronutrients have significantly correlated with body composition among adolescents in Purwakarta Regency.

Abstract

Background: Physical fitness has an important roles for college students, especially for support the learning achievement, work on assignments, learning practices and organizational activities. The impact of lack of physical fitness can decrease the level of concentration of students and it can reduce learning achievement. The purpose of this study was to determine the description of physical activity and physical fitness in female college students in Purwakarta Regency. Method: This study was an analytic observational study used a cross sectional design. Subjects in this study were 66 female college students with major of health in Purwakarta Regency. Physical activity was measured using 1x24 hour physical activity recall and physical fitness was measured by the Harvard Step Test method. Analysis of the data used descriptive analysis, including mean, frequency and percentage. Result: Most of subjects (72.7%) had a light level of physical activity, while 43.9% and 34.8% of subjects had less and very less physical fitness levels, respectively. Subjects with light physical activity tend to have less physical fitness. Conclusion: Female health college students in Purwakarta Regency tend to have less physical activity and less physical fitness.

Abstract

Background: School-age children are vulnerable to nutrient deficiencies. The proportion of school-age children with an energy deficit of 83.9%, 64.4% of energy classified as heavy (<70% AKE) and protein deficit of 17.8% are classified as severe (<70% of PPA). lack of energy and protein in children will increase the increase in learning, increased body immunity, and growth is not optimal. One effort that can be done to meet the energy and protein needs of school-age children is by providing healthy snacks that can meet the protein needs of school-age children, one of which is a snack bar, red rice, rice flour, and green beans. Objective: To analyze the acceptability and protein content of snack bars, red rice flour and green beans Method: An experimental study using a completely randomized design with one factor, namely the ratio of the ratio of red rice flour and green beans and 3 repetitions. The research consisted of making dried green beans, making snack bars, analyzing protein content using the kejdahl method, accepting tests with a preference scale test, determining the chosen formula and protein contribution to RDA in school-age children. There were 60 panelists from Karangmukti Elementary School students. Statistical analysis using Crucial Wallist Test and One Way ANOVA. Results: There was no effect of the ratio of brown rice flour and green beans to the aroma (p = 0,473), taste (p = 0.725) and texture (p = 0.335) snack bar, but there was an influence on the color of the snack bar (p = 0.004). There is an effect of the ratio of brown rice flour and green beans to the protein content of snack bars (p = 0.00). Conclusion: the difference in the ratio of red rice flour and green beans does not affect the acceptability of aroma, taste, texture and there is an effect there is a difference in the ratio of red rice flour and green beans to the protein content of snack bars. But there is an influence on the color parameters.
