Abstract

Madura Island is the largest salt-producing area with a potential land area of 15 thousand ha. In 2018 the total salt production of Madura reached 768,136.22 tons or 39.45% of national production. Its large production contribution has an impact on the coastal communities of Madura, namely: in addition to providing employment opportunities also increase income. But the potential nationally has not significantly decreased salt imports. This is evident that still, high imports in 2020 reached 2.61 million tons. Because domestic production is still not enough to provide its needs, especially salt industrial needs. The causes are very complex and occur in almost every salt-producing region including Madura are: low productivity, process technology is still traditional, salt quality is low, dependence on weather, erratic salt prices, narrow land area, lack of empowerment of salt farmers, capital, education, supply chain, and infrastructure. Solving it requires priority and known related relationships, and systematic analytical thinking is needed. Therefore the purpose of this study is to illustrate how the interrelationships between variables in the system, and their key factors. One of the methods used is the MICMAC (Matrix of Crossed Impact Multiplications Applied to a Classification) method. Through this method, it will be illustrated more clearly the strength of the relationship between factors and the key to a more structured and specific solution. This research was conducted in Sampang Regency, Pamekasan Regency, and Sumenep Regency. Based on the results of the MICMAC analysis it is known that the key factors that play an important role and influence on other variables are capital, distribution, and technology variables. While variables that have very high dependency tend to be influenced by other variables are price, capital, and market expansion

Abstract

The aim of this review is to determine the profile of yam tubers and their potential for food products. Yam (Dioscorea alata) is one of potential plants producing carbohydrate-rich tubers with short and coarse root hairs. The flesh color of the yam tubers can vary greatly, including white and purple. The carbohydrate content of yam tuber is high, ranging from 72.6-80.2% of the dry weight. Besides containing carbohydrates, yam tubers also contain bioactive components such as dioscin, dioscorin, allantoin, choline, polyphenols, and diosgenin. The granular shape of yam is generally oval, triangular, round and polygonal with the size ranging from 10-41.5 µm. The highest chemical composition of yam tubers was moisture and starchy component. Yam starch can be applied in various processed products such as instant noodles, analog rice, and ice cream. The low glycemic index of the yam can be beneficial for development of low GI instant noodles compared to other types of instant noodles. In addition, yam tubers can also be processed into analogue rice with a fairly high carbohydrate content.

Abstract

Perkembangan produk berbasis herbal semakin meningkat seiring dengan meningkatnya permintaan akan produk kesehatan. Hard candy berbahan dasar jahe dapat menjadi produk yang menjanjikan karena populer dan terjangkau, serta dapat diproduksi dengan menggunakan teknologi sederhana. Upaya pengembangan produk olahan jahe yang telah umum adalah dalam bentuk minuman, manisan dan bahan dasar campuran jamu yang hanya dikonsumsi oleh kalangan dan usia tertentu. Bentuk olahan jahe selain yang telah ada  perlu dikembangkan lagi terutama untuk memperluas penikmat jahe sebagai makanan sehat untuk semua kalangan. Sehingga tujuan dari pembuatan hard candy dalam pengabdian masyarakat ini lebih difokuskan pada: melakukan pemberdayaan masyarakat Desa Murtajih, pemanfaatan sumber daya alam jahe dan penerapan teknologi tepat guna pembuatannya. Metode yang digunakan adalah melakukan sosialisasi (diseminasi) dan praktek teknologi pasca panen jahe, pengolahan  dan pembuatan hard candy jahe  Lokasi pengabdian adalah Desa Murtajih, Kabupaten Pamekasan. Berdasarkan hasil sosialisasi dan praktek pembuatan yang dilakukan antusiasme masyarakat sangat baik. Hal ini ditunjukkan oleh tingginya partisipasi masyarakat untuk ikut serta. Jawaban masyarakat terhadap kemanfaatan program pengabdian ini terutama untuk mau membuat dan berusaha sendiri cukup besar yaitu masing-masing sebesar 93 % dan 90 %. Alasan yang mendasar adalah desa Murtajih selain didukung oleh pariwisata juga sumber daya jahe cukup besar serta teknologi pembuatannya yang relatif sederhana.

Abstract

Piper retrofractum Vahl. have the potential to be developed into standardized medicinal ingredients. However, the extraction process of the active compounds in Piper retrofractum Vahl. needs further exploration to get the right method. This is necessary because previous studies state that conventional extraction requires a long time, while modern extraction technology has the disadvantage of being difficult to apply in society. Therefore the aim of this study was to obtain the PEF pre-treatment conditions in the extraction process which affected the quality of the Piper retrofractum Vahl. extract obtained. The stages in this study included the pre-treatment of Piper retrofractum Vahl. with PEF at a voltage (T1 = 5000, T2 = 5000, and T3=6000 volt) and an exposure time (W1=240 and W2=480 seconds), and was macerated using 96% ethanol solvent. The results of Piper retrofractum Vahl. extract with PEF pre-treatment produced a thick extract, dark brown color, characteristic odor, and spicy taste with a yield of 10.64±1.67%, water content 6.30±0.18%, total ash content 0.14±0.03%, acid insoluble ash content 0.25±0.01%, essential oil content 3.00±0.00% and piperine content of 40.38±2.44%.

Abstract

Pendahuluan: Pencemaran plastik telah menjadi permasalahan lingkungan yang serius di banyak negara, termasuk Indonesia. Sampah plastik yang terakumulasi di lingkungan berdampak buruk bagi ekosistem dan kesehatan masyarakat. Untuk mengatasi masalah ini, diperlukan upaya pengolahan sampah plastik yang efektif dan berkelanjutan. Salah satu solusi yang dapat diterapkan adalah penggunaan mesin pencacah plastik di tingkat masyarakat. Kegiatan ini bertujuan untuk mendeskripsikan diseminasi mesin pencacah plastik yang dilaksanakan di Desa Taddan, Kecamatan Camplong, Kabupaten Sampang, Jawa Timur. Metode: Metode yang digunakan dalam kegiatan ini adalah metode deskriptif kualitatif. Data dikumpulkan melalui observasi, wawancara, dan dokumentasi selama kegiatan diseminasi. Hasil: Evaluasi kegiatan menunjukkan bahwa mayoritas 84% peserta belum pernah mengikuti kegiatan sosialisasi pengolahan limbah dan 53% peserta sedikit familiar dengan mesin pencacah plastik. Lebih lanjut, sebanyak 74% peserta merasa kegiatan ini sangat berguna dan perlu dilakukan kegiatan serupa di masa depan. Namun, kendala utama masyarakat untuk merealisasikan usaha pengolahan sampah plastik terletak pada kurangnya pengetahuan teknis (68%) dan sangat penting nya peran pemerintah (89%) dalam mewujudkan usaha tersebut. Kesimpulan: Kegiatan diseminasi ini diharapkan dapat mempromosikan adopsi teknologi pengolahan sampah plastik berbasis masyarakat dan mendorong terwujudnya ekonomi sirkular yang berkelanjutan di Desa Taddan.
