Abstract

Larutan pulsing merupakan suatu larutan nutrisi sebagai sumber karbohidrat dan dapat melindungi tangkai bunga dari serangan mikroorganisme penyebab penyumbatan dan mampu mempertahankan mutu bunga mawar potong. Tujuan penelitian ialah untuk memperoleh cara pengemasan dan penyimpanan yang tepat dalam upaya memperpanjang masa kesegaran bunga mawar potong. Bunga mawar dipanen di daerah Sukabumi, Jawa Barat, pada pagi hari pukul 07:00 dengan stadia kuncup dua petal terluar terbuka, kemudian direndam dalam 20 ppm AgNO3 + 5% gula pasir + 320 ppm asam sitrat selama 12 jam. Selanjutnya bunga mawar dikemas dalam kantong plastik PE dengan ketebalan 0,03 mm sebagai kemasan primer. Setelah itu dimasukkan ke dalam kotak karton ukuran 75 x 20 x 8 cm sebagai kemasan sekunder. Sebagai kontrol digunakan bunga tanpa perlakuan perendaman. Selanjutnya disimpan dalam ruang dingin suhu 5–10oC. Penelitian dilakukan di Kebun Percobaan Balai Penelitian Tanaman Hias Pasarminggu, dari bulan Agustus 2006 sampai dengan Maret 2007 menggunakan rancangan acak kelompok pola faktorial dengan dua faktor, yaitu cara pengemasan (A), enam taraf  terdiri atas (a1) pengemasan dalam kantong plastik PE dengan ketebalan 0,03 mm, 16 lubang mikro, kapasitas 10 tangkai bunga mawar potong; (a2) pengemasan dalam kantung plastik PE dengan  ketebalan 0,03 mm, 16 lubang mikro, kapasitas satu tangkai bunga mawar potong; (a3) pengemasan dalam kantong plastik PE dengan  ketebalan 0,03 mm, tanpa lubang, kapasitas 10 tangkai bunga mawar potong; (a4) pengemasan dalam kantong plastik PE dengan  ketebalan 0,03 mm, tanpa lubang, kapasitas 1 tangkai bunga mawar potong; (a5) tanpa pengemasan (langsung dimasukkan ke dalam kotak karton); dan (a6) tanpa pulsing dan pengemasan. Lama penyimpanan (B), tiga taraf terdiri atas (b1) penyimpanan 2 hari; (b2) penyimpanan 4 hari; dan (b3) penyimpanan 6 hari dengan tiga kali ulangan. Hasil penelitian menunjukkan bahwa pengemasan primer dengan kantong plastik PE 0,03 mm, dalam kotak karton single corrugated (ukuran 75 x 20 x 8 cm) dengan lama penyimpanan 2 hari, memberi hasil yang terbaik dengan masa kesegaran mencapai 6,81 hari (2 hari lebih lama dibanding kontrol) dengan diameter bunga berkisar 5,23-7,11 cm dan larutan terserap yang tertinggi. Implikasi ini merupakan metode pengemasan yang dapat digunakan pedagang untuk memperpanjang ketahanan simpan bunga mawar potong sehingga jangkauan distribusi dan pemasaran dapat diperluas.ABSTRACTPulsing solution containing sugar and germicides were used for flower stem dipping before packaging and long storage to serve as carbohydrate sources, prevent the plugged stems from microbe infestation, and keep the quality of rose cut flowers. The objective of the study was to determine the proper packaging and storage of rose cut flowers. The flowers were harvested at a flower rose garden in Sukabumi-West Java at 07:00 AM with two bud opening stages and then they were pulsed with solution of AgNO3 20 ppm + sucrose 5% + 320 ppm citric acid for 12 hours. Each flower was placed in a box (75 x 20 x 8 cm) with capacity of 10 inflorescences. All treated cut flowers were storage at temperature of 5–10oC. The experiment was conducted in Experimental Garden of Indonesian Ornamental Plant Research Institute from August 2006 until March 2007, arranged in a completely randomize design (packaging method, six level: (a1) packaging PE 0.03 mm, pink prick 16 micro, 10 cut rose flowers; (a2) packaging PE 0.03 mm, pink prick 16 micro, 1 cut rose flowers; (a3) packaging PE 0.03 mm, 10 cut rose flowers; (a4) packaging PE 0.03 mm, 1 cut rose flowers (a5) without packaging (put direct into the cartoon box), (a6) control. Storage duration (B), three level: (b1) two days; (b2) four days; and (b3) six days with three replication. The results showed that the primary packaging with polyethylene plastic bag (PE) 0.03 mm, in a cardboard box single corrugated (size 75 x 20 x 8 cm) and storage duration of 2 days, give the best results with the freshness reach 6.81 days (two days longer than the  control), with flower diameter 5.23-7.11 cm and highest take up solution. This method was beneficial to the grower because they can expand their potential to market the flower.

Abstract

ABSTRAK. Pengembangan buah di Indonesia termasuk yang di prioritaskan, namun kesegaran buah tidak dapat bertahan lama. Untuk memperpanjang ketahanan simpannya perlu diberi perlakuan dengan konsentrasi oksigen dan karbondioksida dalam kemasan. Penelitian dilaksanakan dari bulan Juni sampai bulan November 2007. Penelitian ini bertujuan untuk mendapatkan suhu penyimpanan dengan komposisi gas O2 dan CO2 yang tepat dalam pengemasan agar dapat mempertahankan mutu dan memperpanjang daya simpan buah mangga Gedong. Buah mangga dikemas dalam kantong plastik PE tebal 0,04 mm. Perlakuan komposisi gas yang dicoba terdiri dari 5,0% O2 + 5,0-5,8% CO2; 2,5% O2 + 5,0-5,8% CO2; 1,0% O2 + 5,0-5,8% CO2; Udara normal (21,0% O2 + 0,03% CO2), dan Udara terbuka serta suhu penyimpanan adalah 15oC dan 27-30oC. Penelitian disusun dengan Rancangan Acak Lengkap dalam pola Faktorial dengan tiga ulangan. Hasil penelitian menunjukkan bahwa kombinasi perlakuan konsentrasi gas 5,0% O2 + 5,0-5,8% CO2 pada penyimpanan suhu 15oC setelah 21 hari penyimpanan memberikan mutu terbaik dengan kandungan Padatan Total Terlarut 11,56oBrix, pH 4,09, vitamin C 29,44 mg/100g, dan kadar air 87,20% serta persentase busuk buah 13,47%. Penerapan teknik hasil penelitian ini dapat menguntungkan pengguna karena waktu untuk distribusi diperpanjang.ABSTRACT. The effect of gas composition of oxygen and carbon dioxide in the packages on Gedong mango fruit self life. In Indonesia the development of fruit is priority. The self life of mango fruits is short. For prolonging the self life of mango fruits necessary to three gas compositions of oxygen and carbon dioxide treatment followed in the packages. The experiment was conducted from June to November 2007. The aim of the study was to determine both of the proper initial gas composition (CO2:O2) at the best storage temperature for conservation and extention of storage life. The mango fruits were packed in polyethylene bags (0.04 mm) and various initial compositions of O2 and CO2 with two levels of storage temperature. The gas compositions were 5,0% O2 + 5,0-5,8% CO2; 2,5% O2 + 5,0-5,8% CO2; 1,0% O2 + 5,0-5,8% CO2; Normal air (21,0% O2 + 0,03% CO2), and Untreated, and the storage temperature at 15oC and 27-30oC. This experiments was arranged in factorial and Completely Randomized Design with three replications. The results showed that either application of initial gas concentration were 5,0% O2 + 5,0-5,8% CO2 at 15oC after 21 day storage was able to maintain the best quality mango fruit days with total soluble solid 11,56oBrix, pH 4,09, ascorbic acid content of 29,44 mg/100g, moisture content 87,20%, rotten 13,47%. Applying this resulting technique will benefit to user due to lengthen of the distribution time.

Abstract

Alpinia merupakan jenis bunga potong tropis yang disukai kosumen hotel, floris, dan rumah tangga, namun belum banyak dikenal masyarakat luas. Oleh karena itu jenis bunga potong tersebut perlu disosialisasikan memiliki potensi untuk dikembangkan dalam agribisnis tanaman hias. Penelitian bertujuan mendapatkan informasi preferensi konsumen terhadap bunga potong Alpinia. Penelitian dilakukan pada bulan Agustus 2004 sampai Maret 2005 dengan metode survai. Responden yang dipilih ialah pedagang (floris), hotel (berbintang empat dan lima) dan rumah tangga masing-masing sebanyak 10, 9, dan 13 responden. Pemilihan responden dilakukan secara sengaja, berdasarkan pertimbangan bahwa responden tersebut merupakan konsumen Alpinia dalam bentuk bunga potong. Analisis data untuk menentukan preferensi konsumen dilakukan dengan menggunakan Chi-Square (P=0,01) dan untuk faktor-faktor yang memengaruhi konsumen dalam pemilihan Alpinia menggunakan metode ranking. Hasil penelitian menunjukkan bahwa faktor utama yang menjadi pertimbangan konsumen dalam pembelian bunga potong Alpinia ialah warna bunga. Selera konsumen hotel terhadap bunga potong Alpinia ialah warna merah, ukuran besar, tingkat kemekaran 50% kuncup, jumlah daun per tangkai tiga helai, panjang tangkai  lebih dari 50 cm, dan harga sedang atau murah. Konsumen rumah tangga menyenangi bunga Alpinia berwarna merah, ukuran besar, mekar penuh, tanpa daun, panjang tangkai lebih dari 50 cm dengan harga sedang atau murah. Hasil penelitian diharapkan dapat menjadi masukan bagi pengembangan agribisnis Alpinia dan upaya pemuliaannya.Alpine is a tropical cut flowers which is preferred by consumers of hotels, florists, and households, but the cut flower has not been widely known by people. It is required to be introduced for the development of its agribusiness. The objective of this research was to identify the consumer’s preference on Alpine cut flower. Primary data were collected from 10 respondents of florist, nine respondents of four and five star hotels, and 13 respondents of household. The respondents were purposively chosen based on that  they are Alpine consumers. Consumer’s preferences were analyzed by a ranking technique and tested by Chi-Square analyses (P=0.01). The results showed that the major factor  of consumenr’s preference was color interest. Hotel consumers prefered red color, outgrows flower, 50% buds opening, total leaf per stalk was three, stalk length more than 50 cm, and lower or medium price. Meanwhile, family consumer’s favoured rudle flower, big, and full opening flower, without leaf, stalk length more than 50 cm, and low or medium price.  This comsumer’s preference study will be useful for farmers to develop Alpine cut flower needed by consumers, and also for researchers to develop new superior varieties.

Abstract

Larutan perendam (pulsing) merupakan suatu larutan yang diberikan segera pada bunga sebelum pengiriman untuk memberi tambahan energi, melindungi tangkai bunga dari serangan mikroorganisme penyebab penyumbatan, dan menunda kelayuan. Penelitian ini bertujuan memperoleh komposisi larutan perendam yang tepat dalam upaya memperpanjang masa kesegaran bunga potong Alpinia. Penelitian dilakukan sejak  Agustus 2005 sampai dengan Februari 2006 di Kebun Percobaan Pasarminggu, Balai Penelitian Tanaman Hias.Tiga jenis bahan pengawet digunakan dalam penelitian ini, yaitu gula pasir dengan lima taraf konsentrasi 5, 10, 15, 20, dan 25% serta AgNO3 50 ppm dan asam sitrat 50 ppm (pH 3-4) dengan lama perendaman 2 dan 10 jam. Penelitian menggunakan rancangan acak kelompok faktorial dengan lima ulangan dan lima tangkai bunga potong per unit perlakuan. Hasil penelitian menunjukkan bahwa larutan perendam yang mengandung  AgNO3 50 ppm + gula 20% + asam sitrat 50 ppm (pH 3-4) dengan perendaman selama 2 jam memberikan hasil terbaik, yaitu masa kesegaran bunga potong mencapai 11,22 hari (atau 5,56 hari lebih lama dibanding tanpa perendaman) dengan persentase pembukaan braktea  sebesar 33,14%. Hasil penelitian ini dapat dimanfaatkan untuk merancang pengaturan suplai bunga potong ke pasar.Pulsing solution is commonly used to prolong vaselife by dipping the flower stalks in a solution containing sugars and germicides before delivering to give energy and to prevent the plugging of stalks by microbial growth, and to postpone wilting of flowers. The experiment was conducted to determine the appropriate composition of pulsing solution to prolong vaselife of Alpinia cut flowers. Three kinds of pulsing solution were tested in the experiment i.e. sucrose with concentration levels of 5, 10, 15, 20, and 25%, 50 ppm AgNO3, and 50 ppm citric acid (pH 3-4) with dipping periods of  2 and 10 hours. The experiment was arranged in a completely  randomized block design with five replications and five cut flowers stalks per treatments. The results indicated that pulsing solution containing 50 ppm AgNO3 + 20% sugar + 50 ppm citric acid (pH 3-4) with the 2 hours dipping period was the best treatment exhibited vaselife up to 11.22 days or 5.56 days longer than control, and with bud opening of 33.14%. The result implies that the such method can be exploited to arrange cut flower supply to the market.

Abstract

Sampai saat ini mutu bunga sedap malam (Polianthes tuberose L.) yang diproduksi oleh petani kecil belum dapat memenuhi mutu sesuai kebutuhan pasar. Penurunan mutu bunga sedap malam diduga berkaitan dengan kurangnya keseragaman diameter tangkai bunga, bentuk tangkai bunga, dan sebagainya. Penelitian ini bertujuan mendapatkan informasi mengenai karakteristik mutu bunga potong sedap malam komersial di sentra-sentra produksi. Mutu bunga sedap malam sangat ditentukan oleh ukuran tangkai bunga dan kesegaran bunga. Penelitian dilakukan sejak bulan Juli 2006 sampai  dengan Februari 2007. Sampel bunga potong sedap malam dipanen dari daerah Cianjur (Jawa Barat), Bandungan (Jawa Tengah), dan Pasuruan (Jawa Timur) masing-masing sebanyak 100 tangkai untuk diamati karakteristik fisiknya, yaitu panjang tangkai bunga, diameter bunga, panjang bunga, warna, dan kesegaran bunga. Hasil penelitian menunjukkan bahwa bunga potong sedap malam dari daerah Jawa Timur adalah tipe bunga tunggal dengan jumlah bunga per malai 49,1 ± 8,2, stadia kemekaran bunga 1,6±0,5, dan diameter tangkai bunga 10,8±1,5 cm. Aroma bunga sangat tajam, dengan penampilan lebih ramping dibanding bunga potong sedap malam asal Jawa Barat dan Jawa Tengah. Informasi mengenai mutu bunga potong sedap malam  sangat bermanfaat bagi pedagang atau eksportir untuk mendapatkan produk yang diinginkan pasar atau konsumen.Quality of tuberose cut flowers which are produced by small farmers until now has not enough to fulfil market demand. The decrease of tuberose cut flower quality is believed to be related to unavailability of stalk diameter and other flower characteristics. The aim of the study was to determine quality characteristics of fresh tuberose cut flowers harvested from  farmer field  in production centers. Tuberose cut flowers quality is mainly affected by the flowers size and freshness. The research was conducted from July 2006 to February 2007. Tuberose cut flower were freshly harvested at farmer  field in Cianjur (West Java), Bandungan (Central Java), and Pasuruan (East Java), 100 samples collected from each district. The cut flower samples were observed and evaluated for physical appearance i.e. length of flower stalk, diameter, color, and freshness. The results showed that the tuberose cut flower from East Java was a single type with flower number 49.1 ± 8.2, the number of opening flower 1.6 ± 0.5, stem diameter 10.8 ± 1.5 cm. The aroma of the flowers was very keen compared to slimmer appearance of delicate tuberose cut flowers from West Java and Central Java. The information of tuberose cut flowers characteristics will benefit to saler or exporters to obtain the product that demanded by market and consumers.

Abstract

Bunga mawar yang dikenal saat ini merupakan hibrida yang berasal dari hasil pemuliaan tanaman selama puluhan tahun. Bunga mawar yang beredar di floris dewasa ini mempunyai variasi bentuk dan warna bunga yang menakjubkan seolah-olah tidak ada habis-habisnya kebaruannya. Varietas mawar Pergiwati dan Pergiwa merupakan salah satu produk nasional yang mempunyai warna menawan, namun sebagai bunga potong daya tahan kesegarannya masih terbatas dan perlu upaya untuk meningkatkan kesegarannya, khususnya dengan penggunaan pengawet. Keuntungan dari larutan pengawet ialah dapat mempertahankan mutu dan memperpanjang kesegaran bunga potong. Penelitian dilakukan pada bulan September 2006 sampai dengan Januari 2007 di Laboratorium Fisiologi Hasil Balai Penelitian Tanaman Hias Pasarminggu. Penelitian bertujuan untuk mendapatkan pengawet yang tepat dalam upaya mempertahankan masa kesegaran bunga mawar potong varietas baru yaitu Pergiwati dan Pergiwa. Penelitian menggunakan dua jenis larutan pengawet, yaitu 2,5% sukrose dengan dan tanpa 100 ppm asam benzoat. Suhu penyimpanan yaitu suhu ruang (27-31oC), 20-23oC, dan 5-10oC. Penelitian dilaksanakan menggunakan rancangan acak lengkap pola faktorial dengan lima ulangan. Hasil penelitian menunjukkan bahwa penggunaan larutan 2,5% sucrose + 100 ppm asam benzoat pada bunga mawar Pergiwati mempunyai masa kesegaran bunga 28 hari bila disimpan pada suhu 5-10oC dengan persentase bunga mekar mencapai 100%. Implementasi hasil penelitian ini dapat dimanfaatkan untuk mengatur suplai bunga potong ke pasar.Rose flower that known this time are origin hybrids of more than 10 years of breeding process. Rose flower available on this time has attractive fine form and color as well as never ending its novelty. Rose varieties such us Pergiwati and Pergiwa generally showed short freshness as a cut flower, therefore to prolong the vaselife, a special treatment should be addressed and application of preservative has potential for this purpose. The advantages of applying preservatives are not only can keep the freshness, but also can maintain flower quality. The research was conducted at Laboratory of Physiological Product of Indonesian Ornamental Crop Research Institute from September 2006 to January 2007. The research objective was to find out the proper preservative combinations to lengthen the freshness of rose cut flower of new varieties i.e. Pergiwati and Pergiwa. Two types of preservative used in the study were 2,5% sucrose with or without 100 ppm benzoic acid. Temperature ranges of flower storage tested in the experiment were 27-31oC, 20-23oC, and 5-10oC. The factorial experiment was arranged in a completely randomized design with five replications. The results showed that using the preservative solution containing 2.5% sucrose + 100 ppm benzoic acid for Pergiwati rose cut flower could prolong the flower freshness up to 28 days at 5-10oC storage with 100% opened-buds. The result implied that the supply of rose cut flower can be regulated through application of the preservative composition.

Abstract

Penelitian bertujuan mendapatkan ketahanan segar tanaman anggrek pot berbunga pada beberapa kondisi ruangan dengan atau tanpa pengangkutan. Penelitian dilaksanakan di Balai Penelitian Tanaman Hias dari bulan Juli 1998 sampai bulan April 1999. Tiga jenis tanaman pot anggrek Dendrobium berbunga (Candy Strip, Bunjet Pink dan Kyomeisabin) diperoleh dari petani bunga di daerah Cibubur, Bogor, Jawa Barat. Tanaman pot anggrek Dendrobium berbunga yang digunakan dalam penelitian ini merupakan tanaman yang berbunga pertama atau kedua. Pada sebagian tanaman pot dilakukan pengangkutan Jakarta–Bandung pulang pergi selama 10 jam (±308,3 Km). Penelitian menggunakan rancangan acak lengkap, pola faktorial dengan 3 ulangan. Hasil penelitian memperlihatkan bahwa anggrek Dendrobium Candy Strip pot berbunga yang ditempatkan di rumah sere penyinaran 55% tanpa dan dengan transportasi, mempunyai masa peragaan masing-masing 48,3 hari dan 43,9 hari, dengan bunga pertama layu mencapai 28,0 hari dan 24,2 hari, dan bunga mekar mencapai 100% setelah peragaan selama 24,7 hari dan 17,9 hari. Hasil penelitian ini dapat digunakan untuk mempertahankan mutu dan masa peragaan anggrek pot Dendrobium sp. berbunga selama pengangkutan, sehingga distribusi pemasarannya dapat lebih luasExperiment was conducted to find out the self-life of flowered potted Dendrobium at several rooms conditions with or without transportation treatment. The experiment was done at Indonesian Ornamental Crops Research Institute from Juli 1998 to April 1999. Three Dendrobium cultivars (Candy Strip, Bunjet Pink and Kyomeisabin) as potted plant were bought from farmers orchid at Cibubur, Bogor, West Jawa. Flowering  Dendrobium with potted plant used in this experiment was at first or second flowering. Potted plant was transported from Jakarta–Bandung vice versa for about 10 hours (±308.3 km). A completely randomized design with 3 replications was used. The results showed that without and with transportation potted plant Dendrobium Candy Strip placed in a screenhouse of 55% lighting, indicated shelf life of 48.3 and 43.9 days, with first flowers wilting and 100% flower opening at 28.0 and 24.2 days and 24.7 and 17.9 days, respectively. This research results were useful to maintain the quality and shelf-life during transportation so that their marketing distribution can be extended.

Abstract

Penelitian ini bertujuan mendapatkan ketahanan segar bunga anggrek dendrobium pot di rumah sere penyinaran 55%. Penelitian dilaksanakan di Balai Penelitian Tanaman Hias Jakarta dari bulan Juli 1998 sampai bulan April 1999. Tanaman pot anggrek Dendrobium berbunga yang digunakan dalam penelitian merupakan tanaman yang berbunga pertama atau kedua. Tingkat kemekaran bunga yang dicoba  terdiri dari lima taraf yaitu 0-5% bunga mekar, 25–30% bunga mekar, 45–50% bunga mekar, 70–75% bunga mekar dan 90–95% bunga mekar. Pengangkutan dilakukan menggunakan mobil berpendingin (suhu 10-130C; RH 75-100%) selama 10 jam (±308,3 km). Penelitian dilakukan dengan rancangan acak lengkap, pola faktorial dengan 3 ulangan. Hasil penelitian menunjukkan bahwa tingkat kemekaran bunga 0-5% baik  untuk kultivar anggrek Dendrobium Bandung Pink maupun kultivar Dendrobium Sakura White masing-masing mempunyai umur kesegaran 36,4 dan 37,9 hari dengan persentase kemekaran bunga 87,5% dan 92,5%, waktu kemekaran bunga maksimum 17,7 dan 18,3 hari, bunga pertama layu 12,9 dan 14,5 hari. Perlakuan tersebut dapat mempertahankan kualitas bunga tetap prima dan dapat memperpanjang masa kesegaran tanaman pot berbunga setelah pengangkutan.The experiment was conducted to find out the flower shelf-life of potted Dendrobium at screenhouse. The experiment was done at Research Institute of Ornamentals Plant Jakarta from July 1998 to April 1999. Potted Dendrobium used in the experiment was bearing first or second flowers. In this experiment, five blooming stages (0-5%, 25-30%, 45-50%, 70-75%, and 90-95% bud opening) of Dendrobium orchid were used. Potted plants were transported from Jakarta–Bandung vice-versa using refrigated vehicle (10-13oC of temperature and 75-100% RH) for about 10 hours (±308.3 km). The experiment was arranged in a factorial completely randomized design with 3 replications. The results of the experiment indicated that potted Dendrobium cultivar Bandung Pink and Sakura White with blooming stage of 0-5% gave the best keeping quality with percentage of bud opening 85.7 and 92.5%, time of maximal blooming 17.7 and 18.3 days, time of first wilting flowers 12.9 and 14.5 days, and shelf-life 36.4 and 37.9 days respectively. By applying those treatment the period of potted plant flower shelf-life could be extended and quality after transportation could be maintained.

Abstract

In an effort to reduce yield losses of melon especially during period of storage, distribution, and marketing, an effective treatment is needed. A common technique is to process melon into nata de melon. The aim of the research was to determine the physical and chemical quality of nata de melon during storage. The experiment was conducted in the Laboratory of the Indonesian Center for Agricultural Post Harvest Research and Development from July 2010 until February 2011. The design used was a completely randomized (CRD) factorial design, with two factors i.e. sucrose (6%; 8%; and 10%) and ammonium sulfate (0%, 0.4%, 0.6%, and 0.8%) with two replications. The data was analyzed using parametric and non-parametric analyses. The results showed that 8% sucrose treatment was more effective in increasing yield, thickness, fiber content, firmness and flavor than other sucrose concentrations in nata de melon production. Additional treatment of ammonium sulfate 0.8% was more effective in increasing yield, thickness, fiber content, and elasticity compared to other concentrations of ammonium sulfate in nata de melon production. In general, a treatment combination of 8% sucrose and 0.6% ammonium sulfate can produce nata de melon better. Processing into nata de melon may prolong shelf life and increase the added value of melon.
