Abstract

Pindang Tongkol merupakan salah satu produk olahan industri perikanan Indonesia. Peningkatan nilai dari pindang tongkol sangat dibutuhkan untuk memperluas pasar. Penambahan sambal yang merupakan kuliner asli Indonesia diharapkan mampu menjadi solusi. Penambahan variasi sambal berdasarkan perbedaan warna yang berbeda ditambahkan pada olahan pindang tongkol menggunakan metode menumis. Hasil uji sensori pasar menunjukkan bahwa varian sambal warna merah paling diterima oleh konsumen.

Abstract

Fishery commodity distribution system has not been widely studied. Cold chain system must be applied in fishery product distribution system. The study of the cold chain system will be discussed more in this study using a qualitative descriptive approach. The research was carried out with special research procedures related to the COVID 19 protocol. Qualitative data were taken by means of observations and interviews with respondents from fish mongers in traditional markets, Mlijo traders (mobile vegetable vendors) and consumers. The results showed that traditional markets are the sources of food supply in Malang City. The distribution chain shows that Mlijo traders play a major role in distributing fishery products directly to consumers. Consumers are very dependent on Mlijo traders in terms of purchasing daily food ingredients. The cold chain system has not been implemented well in traditional markets, while the cold chain system has been not applied by Mlijo traders.

Abstract

Yellowfin tuna (Thunnus albacares) is a type of large pelagic fish that is spread in tropical and subtropical oceans throughout the world and is a leading export commodity of Indonesia. This field work practice aims to increase insightknowledge, skills, and experience in the tuna canning process. PT. XYZ is a company engaged in the export of fishery products in the form of tuna in cans. The processing process carried out begins with receiving raw materials, washing and thawing, cutting, then cooking, showering. Furthermore, pre-cleaning and cleaning, metal detecting, filling meat, filling medium, closing cans, sterilization, incubation, labeling and packing, and the stuffing process are carried out. The quality control method used is sig sixma, where the resulting DPMO value is 6.41 and sigma 440.382. Meanwhile, the control chart calculations obtained central line (CL) results, namely points 3,4, and 5. Meanwhile, points 6, 7, and 10 were above the central line (CL) and points 1, 2, 8, and 9 were below the center line (CL). Then the Paretto diagram shows that 31%, 45% of can lid scratch damage, and 60% of can body scratch damage.

Abstract

Skipjack tuna (Katsuwonus pelamis) is a pelagic species that migrates long distances and inhabits all tropical and subtropical waters in the world's oceans. Proper and efficient processing is required in order to maintain the quality of the fish and obtain maximum final product results. One form of processing skipjack tuna is canned tuna. The aim of this research is to analyze the quality control of the canned skipjack tuna packaging process. The method used is data analysis using the seven tools method, data is processed using flowchart, check sheets, fishbone diagrams, scatter diagrams, Pareto diagrams, control charts and managerial implications. The results of this research were that within 11 days of canned tuna production, 3 types of product defects were found. Defects consisted of 54.63% dented cans, 25.00% lid scratches, and 20.37% can body scratches. These defects are caused by various factors such as humans, machines, methods and materials. The results obtained during 11 days of observing the production process, on the control chart there were no points that passed the Upper Control Limit (UCL) or Lower Control Limit (LCL), showed that the canned tuna production process is within control limits.
