Abstract

Kimchi is a food that has a distinctive taste, which is sour due to the fermentation process.  Kimchi made from vegetables and various spices in the form of spices.  This research is about salt concentration and fermentation time on vitamin C content and organoleptic quality of kimchi pakcoy.  The research method used is the method of description (single factor; two replications) by presenting the results of observations in the form of a histogram, then discussed descriptively.  The treatment factor is a combination of salt concentration and fermentation time. Salt concentration (K) which consists of 3 levels, namely: K1 (2%), K2 (4%) and K3 (6%) and the duration of fermentation (L) which consists of 3 levels, namely: L1 (2 days), L2 (4 days) and L3 (6 days).  The parameters analyzed were vitamin C content and organoleptic quality related to taste, aroma, color and texture.  Salt concentration and fermentation time greatly affect the content of vitamin C and organoleptic quality.  The highest vitamin C content was found in the K3L3 sample, namely 6% salt concentration and 6 days of fermentation time with a vitamin C content of 0.7320 mg / gr.  Organoleptic quality using the hedonic test, related to taste, aroma, color and texture, yielded successive values, namely 5.2 (K3L2); 5,6 (K2L3); 5.9 (K1L1); 6.1 (K1L1)

Abstract

The  objectives of this study were to determine the concentration of NaOH and ethanol containing NaOH to the weight of the media on level two ethanolysis reaction CPO-PKO mixture that produces the highest of antimicrobial activity, emulsifying properties and to investigate the distribution patterns of glyceride compounds.  The treatments were ratio of ethanol containing NaOH to the weight of the media of level two ethanolysis reaction of CPO-PKO mixture, which were 1,20; 1,60 and 2,00 (v/w) and NaOH concentration to the weight of the media of ethanolysis reaction CPO-PKO mixture level two is 0,75; 1,0 and 1,25% (w/w).  The results showed that the highest treatment was on treatment with ethanol at a ratio of 1,20 with NaOH concentration of 0,75%. The antimicrobial activities of Bacillus cereus, Salmonella typhimurium and  natural microbial culture were 12,36%, 16,76 mm, 20,75 mm ​, 12,98 mm, and  the highest emulsion stability power was found on 6% and 16,04% concentration.  The  level  two  ethanolysis product of CPO-PKO mixture showed a uniform distribution pattern on the the TLC plates in a row from the nearest to the farthest was the MG, DG, ALB and TG with Rf value of 0,03; 0,15; 0,43 and 0,74. Abstract

Pandemi Covid-19 telah menimbulkan dampak yang cukup besar, termasuk pada perekonomian rumah tangga. Salah satu upaya yang dapat dilakukan yaitu melalui pemberdayaan kelompok wanita tani (KWT). Tujuan dari kegiatan ini adalah memberikan informasi dan keterampilan untuk meningkatkan kualitas produk Virgin Coconut Oil (VCO). Kegiatan pengabdian masyarakat dilaksanakan di Kecamatan Gedong Tataan Kabupaten Pesawaran pada bulan Februari 2021. Metode pelaksanaannya dilakukan dengan penyuluhan, demonstrasi, dan evaluasi kegiatan. Hasil evaluasi menunjukkan bahwa kegiatan berjalan dengan baik sesuai rencana. Seluruh kegiatan disambut baik oleh para peserta yang ditunjukkan dengan meningkatnya pemahaman dan pengetahuan tentang proses pembuatan VCO dari 61,54% menjadi 92,31%. Selain itu, minat terhadap topik yang disampaikan mendapat peningkatan tanggapan yang baik sebanyak 45,45% menjadi 72,73%. KWT juga berharap kegiatan serupa dapat dilakukan secara berkesinambungan guna memberikan pengetahuan kepada anggota kelompok.

Abstract

Mungbean are one of the food crops that produce 22% vegetable protein sources. It’s the third food crop after soybean and peanut. It has the potential to be developed because high economic value. The price is quite stable when compared to other food commodities. Cow manure can increase the nutrient content, the physical and chemical properties of the soil. You can also provide liquid organic fertilizer in the form of KSM to add the nutrients. KSM fertilizer is a new fertilizer circulating at the farmer level. It’s claimed to increase the absorption of fertilizer by plants. Research method used was a completely randomized block design which arranged in a factorial manner with three replications. The first factor is the dose of manure and the second factor is the frequency of fertilization of KSM to promote plant growth. Treatment without manure and KSM is as a comparison factor (control). The results showed that the dose of 1.2 kg of manure and the time of spraying every 3 days after planting could increase the growth and yield of mungbean. Dosage of manure and time of spraying don’t interact both of them.

Abstract

The use of oil in the food and non-food industries is increasing with the increasing number of findings on oleochemical synthesis processes that can be applied on an industrial scale. MAGs and DAGs are used as part of fat products and are often associated with other emulsifiers. MAG synthesis can be carried out chemically and enzymatically. The glycerolysis process using lipase enzymes as biocatalysts requires relatively low energy and produces products with better quality. This study uses enzymatic glycerolysis and will observe the distribution pattern of the glycerolysis product which describes the level of completeness of the reaction. The distribution pattern that describes the perfection of the reaction is a distribution pattern that has spots that spread regularly (not random/straight). The experiment was carried out with a single factor and two replications. The data are presented in the form of tables and histograms, then the results are discussed descriptively. Treatment factors, namely the ratio of the mixture of CPO and PKO consisting of 11 ratios of CPO and PKO: 0.2; 0.4; 0.6; 0.8; 1.0; 1,2; 1.4; 1.6; 1.8 and two controls. Based on the observations made, the glycerolysis of a mixture of CPO and PKO in various ratios, produces a pattern of distribution on the TLC plate which is regular and the Rf (Retardation factor) value shows that from closest to furthest are MAG, DAG, ALB, and TAG with Rf 0.01; 0.12; 0.31; 0.57, respectively. The highest MAG yield was produced by the results of glycerolysis of CPO control (83.90%) followed by PKO control (74.90%) and a mixture of CPO-PKO with a ratio of 0.8 (73.71%). The highest yield of MAG-DAG was produced by a mixture of CPO-PKO with a ratio of 1.6 (93.21%) followed by CPO control (91.88%) and a ratio of 0.8 (73.71%). Abstract

Liquid organic fertilizer is fertilizer that is applied to the leaves. The advantage of fertilizer application through leaves is that nutrients are more easily absorbed by plants, both macro and micro nutrients. This study aims to determine the time intervals of fertilization and differences in the concentration of liquid organic fertilizer on the growth and yield of red spinach, as well as to determine the interaction between the two. The treatment used was the time of fertilization and the difference in the concentration of liquid organic fertilizer. The results showed that the timing of fertilization had a significant effect on the weight of red spinach plants. The time interval of fertilization every 3 days gave better results, namely 18.94 g. And there is no interaction between time interval and concentration of liquid organic fertilizer on the growth and yield of red spinach for all variables.

Abstract

Kelompok Wanita Tani (KWT) Sekar Mewangi adalah salah satu KWT aktif di Desa Untoro yang berada di wilayah Kecamatan Trimurjo Kabupaten Lampung Tengah. KWT tersebut telah mendapat penyuluhan rutin dari Dosen yang tergabung dalam Tim Pengabdian Masyarakat Sekolah Tinggi Ilmu Pertanian Dharma Wacana (STIPER). Penyuluhan dilakukan dalam bentuk sosialisi tentang memanfaatkan potensi limbah lokal (kotoran sapi, sekam padi, dan serasah tanaman) menjadi pupuk kompos yang difermentasi menggunakan Biostarter EM4. Dengan fermentasi menggunakan EM4 akan mempercepat proses penguraian bahan organik sehingga pupuk akan cepat matang dan siap diaplikasikan. Tujuan kegiatan ini yaitu memberikan pengetahuan kepada KWT mengenai cara pembuatan pupuk kompos fermentasi dengan memanfaatkan limbah lokal yang ketersediaannya cukup melimpah. Dengan demikian limbah tersebut dapat termanfaatkan secara optimal dan dapat mengurangi penggunaan pupuk kimia serta cost produksi usaha tani. Setelah kegiatan pengabdian ini diharapkan KWT dapat menyediakan pupuk kompos organik untuk kebutuhan petani di desa Untoro khususnya. Hasil dari kegiatan ini, anggota KWT mendapat informasi melalui transfer ilmu tentang cara pembuatan pupuk kompos dengan Biostarter. Kontribusi mendasar kepada anggota KWT yaitu setelah program pengabdian ini petani mampu memanfaatkan limbah lokal untuk membuat pupuk kompos yang dapat digunakan sebagai pupuk subtitusi guna mengatasi ketergantungan terhadap pupuk kimia, dalam budidaya tanaman hortikultura menuju pertanian organik. Tujuan dari pengabdian ini adalah memberikan pengetahuan kepada KWT bahwa limbah pertanian dan peternakan yang mereka tekuni dapat digunakan sebagai bahan baku pembuatan kompos. Dengan demikian, limbah tersebut dapat termanfaatkan secara optimal dan dapat mengurangi cost produksi usaha tani.

Abstract

This study aims to determine the effect of various Ethepon concentrations and the right type of packaging for the quality of Janten bananas, and the interaction of both. The method used, the experimental method, with a completely randomized block design (RBD) arranged in factorial : (1) ethephone concentration(e) There are 3 types; (e0)without ethepon or 0 ml; (e1)2 mL/L or 30mL/15 L water; (e2)4 mL/L or 60mL/15L water. (2) packaging section (k) There are 3 types; (k1)plastic, (k2)cardboard, and (k3)gunny sacks. Observational data were tested with the Least Significant Difference test (LSDT, at the 5%. The results showed that: The administration of Ethepon at various concentrations had an effect on the quality of Janten bananas, as seen in the variable color, aroma, taste, level of hardness, level of sweetness, vitamin C and total dissolved acid except for the weight loss variable. The best Ethepon concentration is 4mL/L or 60mL/L Ethepon. The use of packaging has an influence on the quality of Janten bananas, which can be seen in the variables of color, aroma, taste and level of sweetness. The best packaging is cardboard packaging. There is an interaction between different concentrations of Ethepon and packaging on the quality of Janten bananas.
