Abstract

Puskesmas Pangkalan merupakan salah Puskesmas di Kabupaten Lima Puluh Kota yang memiliki nagari lokus stunting pada wilayah kerjanya. Banyak penelitian yang telah membuktikan bahwa stunting merupakan outcome utama dari adanya anemia pada ibu hamil. Oleh karena itulah masalah ini perlu segera di atasi. Salah satu penyebab adanya suatu masalah gizi dan kesehatan ialah rendahnya pengetahuan mengenai gizi maupun kesehatan. Untuk meningkatkan pengetahuan tersebut dapat diberikan intervensi berupa edukasi atau pelatihan terkait. Salah satunya melalui pelatihan Emo-Demo yang memiliki tujuan menggugah emosi responden untuk mencapai perubahan perilaku. Emo-Demo juga telah memiliki modul mengenai pencegahan anemia pada ibu hamil. Pelatihan Emo-Demo yang dilakukan penulis merupakan pelatihan yang pertama kali dilakukan secara daring yang tetap melibatkan fasilitator GAIN secara jarak jauh. Pelatihan sendiri dilaksanakan dalam 5 tahapan mulai dari pengumpulan data dasar, koordinasi dengan stakeholder, dilanjutkan dengan training of trainer TPG, kemudian dilaksanakan pelatihan kader, dan terakhir dilakukan evaluasi. Hasil pelatihan menunjukan adanya peningkatan signifikan pengetahuan kader dengan adanya peningkatan skor post test. Kaderpun cukup antusias dengan materi pelatihan yang terlihat pada rencana tindak lanjut untuk menerapkan Emo-Demo pada kegiatan posyandu mendatang. Diharapkan Emo-Demo dapat dilaksanakan secara rutin sehingga tujuan jangka panjang pencegahan anemia pada ibu hamil dapat tercapai. Kata kunci: Anemia, Emo-Demo, Ibu hamil, Kader, Pelatihan daring ABSTRACT Pangkalan Public Health Centre is one of Public Health Centres located in Lima Puluh Kota District that has locus stunting village in its administrative area. Many researches had showed that stunting was the main outcome of maternal anemia. That’s why it is important to solve this problem immediately. Low nutrition knowledge has been known to be one of determinants of nutrition and health problems. To improve nutrition knowledge nutrition education intervention or related can be conducted. One example is by conducting Emo-Demo training that has emotional triggering to obtain behavior changes as its objective. Emo-Demo also has modul regarding prevention of maternal anemia. The Emo-Demo training conducted by writers was the first Emo-Demo online training and still involving GAIN fasilitator remotely. The training was conducted in 5 stages, started by basis data collection, coordination with stakeholders, proceeded by training of trainers to health workers, then followed by training to community health workers, and ended by evaluation. The training result showed that there was a significant improvement on the community health workers’ nutrition knowledge, proven by the improvement of post test score. The community health workers were enthusiast regarding the training materials proven on the follow up action plan to apply the Emo-Demo at the coming Posyandu. We hope that Emo-Demo can be applied on regular basis so that the long term outcome of maternal anemia prevention is achieved. Abstract

Stunting is a complex development problem, and it’s related to most goals of SDGs, ranging from eradicating poverty, eliminating hunger, malnutrition (including stunting), improving maternal and child health, eradicating disease, improving the environment and sanitation, food security, nutrition, gender equality and cooperation between nations. West Pasaman is one of the locus districts in West Sumatra Province. So the role of universities in assisting prevention and stunting prevention programs is crucial. This assistance activity aims to implement integrated nutrition interventions for stunting prevention and countermeasure in West Pasaman district. The method of activities undertaken is coordination and consolidation with the application of the IGT-AS (Integrated Nutrition-Child Stunting Intervention) concept from the college level, district, sub-district, and village levels. While the survey method by collecting nutritional status data at the family level. The assistance provided by tertiary institutions resulted in proposed interventions to OPD (Regional Apparatus Organizations) related to nutrition interventions at the Nagari / Village level by implementing five intervention pillars through Nagari / Village institutions and the support of OPD District which has an extension at the District and Village / Nagari levels. The survey results obtained the nutritional status of Height for age in Nagari Kajai West Pasaman found 128 children were Stunting (32.8%), children under five with exclusive breastfeeding by 60.5%, Integrated Healthcare Center sits in the last three months were found to be the most weighted regularly at 67.7%, and mothers of children under five who attend Toddler Family Development (BKB) in Nagari Kajai are still low at 14.9%. The role of universities is crucial, especially in increasing the capacity of OPD in determining intervention programs, expanding the capacity of health workers, cadres of Integrated Healthcare Center activities, and community empowerment.

Abstract

Puskesmas Kototinggi, Kabupaten Lima Puluh Kota merupakan salah satu puskesmas yang memiliki tiga desa untuk pencepatan pengetasan balita pendek/ stunting yang ditetapkan oleh pemerintah pada tahun 2020. Masalah kekurangan gizi dapat disebabkan karena pola asuh baik pola asuh makan, pola asuh psikososial, pola asuh ke pelayanan kesehatan dan pola asuh kebersihan yang tidak optimal. Kader merupakan salah satu ujung tombak pelayanan kesehatan di tingkat yang paling bawah. Sehingga sangat diperlukan penguatan kapasitas kader dalam memberikan penyuluhan kepada ibu balita. Tujuan kegiatan pengabdian ini adalah memberikan pelatihan kepada kader kesehatan tentang pola asuh makan bayi dan anak dengan pendekatan Emotional Demonstration (Emo Demo). Pada kondisi pandemi COVID-19 ini penulis menginisiasi pelatihan yang dilakukan melalui jarak jauh dengan menggunakan zoom meeting selama dua hari. Tahapan pelaksanaan kegiatan dimulai dengan koordinasi dengan Dinas Kesehatan Kabupaten Lima Puluh Kota, koordinasi tim dengan trainer emodemo dari Non Goverment Organization Global Alliances Improvement Nutrition (GAIN), koordinasi dengan Puskesmas Kototinggi, training of trainer tenaga kesehatan dan pelatihan kader. Hasil dari pelatihan yang dilakukan dapat meningkatkan pengetahuan kader tentang pola asuh makan. Setelah pelatihan ini diharapkan kegiatan penyuluhan dapat dilakukan kader kepada ibu balita dengan menggunakan emodemo sehingga ibu anak usia bawah lima tahun dapat memberikan pola asuh makan yang tepat serta dapat berdampak status gizi dan kesehatan anak balita.

Abstract

The COVID-19 pandemic has negatively impacted life sectors, including food access. It drives people to make some responses called food coping strategies to adapt to the current situation to fulfill their food access. This study aimed to analyze some of the food coping strategies done by households in Padang City during the pandemic. It was a descriptive study involving 87 households in Padang City located in the working areas of Anak Air, Lubuk Buaya, and Seberang Padang Health Center. Data on household characteristics and food coping strategies were collected through direct interviews. Data analysis showed a decrease in the household economic situation, shown by a 7,7% decrease in total expenditure per capita in a group below 40% compared to last year. 65,5% of the households did a tingkat two food coping strategy, and 14,9% even had to do the most extreme. Most of the households did food coping strategies by changing their food habits. We hope that government can evaluate the current policy so that no household has to do the most extreme coping strategies.

Abstract

Seribu Hari Pertama Kehidupan (1000 HPK) merupakan masa penting bagi seorang anak. Pada masa ini pertumbuhan dan perkembangan terjadi sangat pesat, sehingga dibutuhkan gizi yang optimal. Untuk mendukung pencapaian gizi yang optimal pada masa ini, praktik Inisiasi Menyusui Dini (IMD) dan ASI Eksklusif sangat penting untuk dilakukan. Akan tetapi data menunjukan masih rendahnya praktik IMD dan ASI Eksklusif di masyarakat. Salah satu penyebabnya ialah rendahnya pengetahuan sehingga kesadaran mengenai pentingnya dan manfaat IMD serta ASI Eksklusif juga masih rendah. Edukasi melalui metode Emo-Demo dapat menjadi salah satu langkah untuk mengatasi hal tersebut. Kegiatan pelatihan Emo-Demo yang dilaksanakan diikuti oleh kader kesehatan dan bidan desa yang didampingi oleh TPG dan juga Kepala Puskesmas Pangkalan. Pada kegiatan ini materi disampaikan materi mengenai Kolostrum untuk Bayiku dan Cukup ASI sampai 6 Bulan Pertama untuk mendukung 1000 HPK. Kegiatan pelatihan berjalan cukup baik dan lancar serta berhasil. Hal ini ditunjukan dengan peningkatan secara signifikan (p<0,05) pada skor pengetahuan peserta dan juga hasil diskusi rencana tindak lanjut ke depannya. Kata kunci: 1000 HPK, emo-demo, kader ABSTRACT The First 1000 days is an important stage for a children. During this stage, children grow and develop rapidly and an optimum nutrition is needed. To obtain optimum nutrition, early initiation of breastfeeding and exclusive breastfeeding are needed during this stage. Unfortunately, the data still showed low practices on both early initiation of breastfeeding and exclusive breastfeeding. It may cause by a low knowledge regarding these matters that leads to low awareness on the importance and the benefits of early initiation of breastfeeding and exclusive breastfeeding. Education using Emo-Demo can be used as a methods to deal with that matter. The training that had been conducted was joined by community health workers and midwives and also accompanied by the dietitian and also the head of Pangkalan Public Health Center. The materials entitled Colostrum for Babies and Exclusive Breastfeeding were given to promote The First 1000 days. The training were successfully conducted. It showed by the significant difference (p<0,05) on participants knowledge scores during the pre-test and also thepresented follow up plans. Abstract

Stunting merupakan suatu keadaan kurang gizi kronis yang disebabkan oleh asupan gizi yang tidak cukup dalam jangka waktu yang lama akibat pemberian makanan tidak sesuai dengan kebutuhan gizi. Cara yang dapat dilakukan untuk mencegah stunting salah satunya melalui fortifikasi pangan. Fortifikasi pangan yang dapat dilakukan antara lain dengan pemanfaatan bahan baku udang dengan memanfaatkan cangkangnya. Cangkang udang diketahui mengandung tinggi kalsium yang baik untuk pertumbuhan dan perkembangan anak. Penelitian bertujuan untuk mengetahui karakteristik mutu sensori dan kandungan zat gizi dari produk cream soup instan dengan penambahan tepung cangkang udang. Studi eksperimental menggunakan desain Rancangan Acak Lengkap (RAL). Rancangan terdiri dari 4 perlakuan dengan rasio F0 (100% tepung terigu: 0% tepung cangkang udang), F1 (75% tepung terigu:25% tepung cangkang udang), F2 (50% tepung terigu:50% tepung cangkang udang), F3 (25% tepung terigu:75% tepung cangkang udang). Uji statistik menggunakan uji Kolmogorov-Smirnov dan uji lanjut menggunakan uji Kruskal Wallis. Formulasi terbaik terpilih yaitu F3 yang memiliki mutu hedonik yaitu warna agak kuning, aroma tidak langu dan tidak harum, tekstur agak kental, dan rasa agak gurih. Kandungan zat gizi cream soup instan F3 antara lain kadar air 7,26% abu 8,64%, protein 15,35%, lemak 24,43%, karbohidrat 44,32% dan kalsium sebesar 54,39%.

Abstract

Diabetes is a chronic disease that can occur if the body is unable to use the insulin it produces effectively. People with diabetes have special dietary arrangements that are different from non-diabetic people. One of them is by consuming foods with a low glycemic index. Cassava peel has good potential for development. Artificial rice from cassava peel waste, besides having good nutritional content, is also very minimally used, especially in the city of Padang. This research aims to develop analog rice from cassava peel waste, which has the potential to have a low glycemic index and be an alternative food for people with diabetes. The method of this research is that this research uses an experimental test method using a randomized design comparing cassava peel flour and sago starch flour with the ratio F1(60:40), F2(70:30), and F3(80:20). Organoleptic tests were carried out on 30 semi-trained panelists. Data analysis used software with the Kruskal Wallis and Mann Whitney tests at a 5% level. The Glycemic Index test was carried out by taking blood using a finger prick test or glucometer at 0, 30, 60, 90, and 120 minutes. Results: From organoleptic and proximate testing, the best formulation was obtained, namely F3(80:20). The nutritional content of this formulation is 3.51% ash content; fat content 6.3%; protein content 1.64%; carbohydrates 81.16%; amylose 16.47%; crude fiber 6.07%; dietary fiber 29.14%. The glycemic index result was 20.63. Artificial rice from cassava skin has a low glycemic index, so it has the potential as a food for diabetes mellitus.
