Abstract

Kepulauan Spermonde merupakan salah satu wilayah tangkapan utama ikan kerapu macan (Epinephelus fuscoguttatus) di Sulawesi Selatan. Jika upaya penangkapan terus ditingkatkan tanpa mempertimbangkan potensi dan kondisi populasi, dikhawatirkan dapat menggangu kelestarian sumberdaya kerapu di masa datang. Oleh karena itu diperlukan kajian parameter populasi dan tingkat eksploitasi agar kelestarian sumberdaya kerapu macan tetap terjaga. Penelitian ini bertujuan untuk parameter populasi dan laju eksploitasi ikan kerapu macan (E. fuscogttatus) di Kepulauan Spermonde Sulawesi Selatan. Penelitian dilaksanakan bulan September 2021 – Desember 2021 di Wilayah Kepulauan Spermonde Sulawesi Selatan. Metode penelitian berupa pengukuran panjang total dan berat ikan kerapu macan sebanyak 1.032 ekor dari hasil tangkapan nelayan dan pedagang pengumpul yang didaratkan di PPI Paotere, Makassar. Parameter yang diamati meliputi distribusi ukuran panjang, hubungan panjang bobot, laju pertumbuhan, laju mortalitas total, alami dan penangkapan dan laju eksploitasi yang dianalisis secara deskriptif dan dengan program ELEFAN. Hasil analisis panjang rata-rata ikan kerapu macan (E. fuscoguttatus) di Kepulauan Spermonde berukuran antara ukuran 19,00 cm – 40,00 cm, (N = 1.023). Hubungan panjang bobot allometrik minor, kecepatan. pertumbuhan 0,45/thn, laju kematian penangkapan lebih besar dari laju kematian alami, laju eksploitasi sebesar 0,61 (over eksploitasi).Spermonde Islands is one of the main catchment areas of tiger grouper fish (Epinephelus fuscoguttatus) in South Sulawesi. If arrest efforts continue to be improved without considering the potential and condition of the population, it is feared that it can interfere with the sustainability of grouper resources in the future. Therefore, a study of population parameters and eksploitation rates is needed so the sustainability of tiger grouper resources is maintained. The study aimed at population parameters and the rate of exploitation of tiger grouper fish (E. fuscoguttatus) in the Spermonde Islands of South Sulawesi. The study was conducted from September 2021 to December 2021 in the Spermonde Islands Region of South Sulawesi. The research method in the form of measurements of the total length and weight 1032 catch of tiger grouper fish from the catch of fishermen and collecting traders landed at PPI Paotere, Makassar. The observed parameters include the distribution of length size, weight length relationship, growth rate, total mortality rate, natural and capture and rate of exploitation analyzed descriptively and with the ELEFAN program. The results of the analysis of the average length of tiger grouper fish (E. fuscoguttatus) in the Spermonde Islands measured between the size of 19.00 cm – 40.00 cm, (N = 1,023). Relationship length-weight of minor allometric, growth rate of 0.45/year, arrest death rate greater than natural mortality rate, exploitation rate of 0.61 (over exploitation)

Abstract

Mangrove ecosystems are one of the most important areas in maintaining the level of diversity of organisms in the sea. Mangrove damage is caused by abrasion, lack of heeding of the carrying capacity of the coastal environment, and lack of knowledge and awareness of the community around the coast about mangrove ecosystems ecologically / economically. This research was conducted in January – March 2021 in Bira Village, Tamalanrea District, Makassar City, South Sulawesi Province.This study aims to determine the level of mangrove damage, find out damage factors and calculate the estimated value of mangrove ecosystem damage claims in Bira Village, Makassar City. This research used a survey or direct observation method. The results showed that mangrove vegetation in Bira Village is low with very little species diversity. The level of mangrove forest destruction is still in the good category with a percentage of 30.89%. The causative factors are due to the felling of mangrove trees for fuel, infrastructure development, and coastal abrasion. Based on rehabilitation costs referring to P.8 / KSDAAE / SET / REN.2 / 10/201 concerning Activity Standards and Costs for Conservation of Natural Resources and Ecosystems in 2018, a total rehabiliation cost of Rp. 350,220,000 was obtained with a total mangrove forest area of 10 Ha.

Abstract

Vannamei shrimp (Litopenaeus vannamei) is a fishery product that is able to generate foreign exchange for the country besides tiger prawns. This shrimp has the advantage of being more resistant to environmental conditions and disease. Feed plays an important role in its cultivation because it absorbs the largest cost of 60-70% of the total production cost. At present, there are still many farmers, both traditional and modern, who have not carried out effective feeding because of the high cost of providing feed. Amazon sailfin catfish, Pterygoplichthys pardalis are invasive fish in waters that need to be limited in population development by using them. One form of utilization is to make it a fish meal product and then it becomes a raw material for feed. This study aims to analyze the use of P. pardalis meal as feed for vaname shrimp. The test animals were vaname shrimp with a weight of 3.35±0.5 g; total length 6±0.5 cm, first acclimatized for 5 days. The percentages of using broomstick fish meal were 25%, 30%, 35% as treatment and commercial feed as control feed. The study used a completely randomized design (CRD) with 4 treatments and 3 replications. Research for 60 days, the dose of feed given is 5% with a frequency of 5 times a day. The parameters observed were: absolute growth (PM), daily growth (PH), daily growth rate (LPH), feed conversion (KP), feed efficiency (EF) and survival (KH). Data were analyzed for variance (ANOVA). The results showed that the higher the percentage of P. pardalis meal, the better the response of vannamei shrimp to growth parameters, but based on the analysis of variance, it showed that the treatment not significant all the parameters observed.

Abstract

The objectives of this study are: 1) identifying critical points in the frozen shrimp processing process in several Fish Processing Units in Makassar City in particular. 2) Evaluate the quality control in frozen shrimp processing and how far it is in accordance with the HACCP (Hazard Analysis Critical Control Point) concept. 3) Evaluate the basic feasibility and level of HACCP implementation from the Fish Processing Unit. This research was carried out for 1 month from December 2023 to January 2024 at the fish processing unit (UPI) in the Makassar Industrial Estate (KIMA), Makassar City. The results of this study are 1) The results of the identification of critical points (CCP) in both UPIs are known that for UPI 1 at the Raw Material and Metal Detecting stages, it is stated as a critical point (CCP). At UPI 2 critical points (CCP) at the Raw Material, Metal Detecting and Labeling stages. The monitoring of the second CCP of UPI has implemented monitoring procedures, controlling critical points consisting of components: what, how, frequency, who. 2) Both UPIs have implemented quality control for handling frozen shrimp which can be seen from the results of organoleptic and microbiological tests (ALT, Salmonella, E.Coli and V. Cholerae) which show that the results do not exceed the threshold value of each parameter. The concept of HACCP by applying 7 HACCP principles by supervising and making preventive efforts on Standard Sanitary Operating Procedures (SSOP) and Standard Processing Operations (SOP). 3) Judging from the results of the basic feasibility of both UPIs, the Standard Sanitary Operating Procedures and the Standard Processing Operations in UPI 1 have a deviation condition of (Minor 4, Major 1) with a rating of A (Very Good) and in UPI 2 the condition of deviation is (Major 3) with a rating of A (Very Good).
