Abstract

AbstractNoodles is one of the foods favored by the people of Indonesia and economical and practical, so it is necessary to processing alternatives that qualify nutritionally with the addition of fiber from cassava leaves. This study aims to find out the acceptableness, elasticity, iron content, protein, fiber and hydrogen cyanide. This type of research is an experiment that is the manufacture of noodles using the addition of cassava leaves (15%, 30% and 50%) then conducted an analysis of protein, iron, fiber using gravimetry, analysis of hydrogen cyanide levels using volumetri with tools - ingredients are scales, sieves, molds, measuring cups, filters, wheat flour, egg whites, garlic, cassava leaves and salt. The results of the research from the preferred hedonic aspect are a concentration of 15%. Noodles with cassava leaves concentration of 15% have the elasticity value closest to wet noodles without cassava leaves which is 3.3 cm with medium category, the highest iron content with cassava leaves concentration of 50% as much as 0.5 mg / 100 grams, the highest fiber content as much as 9.67 grams per 100 grams, the highest HCN content as much as 15.7 mg per 100 grams, the highest protein content of noodles with cassava leaves concentration of 15% obtained as much as 8,222 grams / 100 grams. In conclusion, preferred acceptableness and elasticity as well as the highest protein content with 15% cassava leaves, the highest iron, fiber and HCN levels with a concentration of 50%.

Abstract

Penelitian ini bertujuan untuk mengetahui efektivitas pemberian makanan tambahan pada Balita Kurus dan Sangat Kurus di Wilayah Kerja Puskesmas Kapasa Kota Makassar. Penelitian ini adalah penelitian survei dengan desain penelitian potong lintang (cross sectional). Populasi dalam penelitian ini adalah seluruh balita kurus dan sangat kurus yang mendapat Makanan Tambahan berada di wilayah kerja Puskesmas Kapasa. Sampel yang digunakan dalam penelitian ini merupakan bagian dari populasi. Teknik pengambilan sampel dalam penelitian ini adalah Purposive Sampling. Jumlah sampel dalam penelitian ini adalah 18 balita. Hasil penelitian ini menunjukkan untuk Daya Terima Konsumsi Makanan Tambahan sebagian besar responden adalah Baik sebanyak 12 balita (66.7%), untuk Perubahan Berat Badan sebagian besar responden adalah Naik sebanyak 14 balita (77.8%), untuk Perubahan Tinggi Badan atau Panjang Badan sebagian besar responden adalah Tidak Naik sebanyak 10 balita (55.6%). Hasil pengujian statistik menggunakan Uji Chi Square untuk Daya Terima Konsumsi Makanan Tambahan dengan Perubahan Berat Badan dengan nilai p value 0.045 artinya p < 0.05 maka ada efektivitas pemberian makanan tambahan pada perubahan berat badan. Hasil pengujian statistik menggunakan Uji Chi Square untuk Daya Terima Konsumsi Makanan Tambahan dengan Perubahan Tinggi Badan atau Panjang Badan dengan nilai p value 0.502 artinya p > 0.05 maka tidak ada efektivitas pemberian makanan tambahan pada perubahan tinggi badan atau panjang badan. Disimpulkan bahwa pemberian makanan tambahan efektif terhadap perubahan berat badan. Akan tetapi pemberian makanan tambahan tidak efektif terhadap perubahan tinggi badan atau panjang badan.

Abstract

The prevalence of stunting in Indonesia is still high at 30,8%. Low protein intake is one of the causes of stunting. The purpose of this study was to determine the nutritional analysis and organoleptic quality in cork fish sausages. This study used a completely randomized design with 3 repetitions. Nutrient analysis was obtained from the Luff schroll test for carbohydrates, fat test with shoxlet and protein test with micro kjedhall. Organoleptic quality with acceptance of taste, texture, color and aroma by descriptive. Research results with univariate analisis were the highest nutrient content of protein and carbohydrate in formula F1 (100%) is protein (16.71%) and carbohydrate (20.14%) and the highest fat content in formula F3 (60%) is as much as (18.52%). The most preferred organoleptic quality for aroma and taste is in formula F1 (100%), texture is in formula F2(80%) and the most preferred color is in formula F3 (60%). The recommendation for prevent stunting can be used F1 formula.

Abstract

Stunting in Indonesia is a very serious problem because the percentage is above form cut off point of World Health Organization is only 20%. The results of South East Asia Nutritions Surveys (SEANUTS), around 24.1% of boys and 24.3% of girls in Indonesia are stunted. Based on Basic Health Research (2018), the incidence of stunting among children under five in South Sulawesi is still high, which is above 30% and South Sulawesi is the fourth highest in Indonesia. One of the preventive efforts to reduce stunting from an early age by nutrition health education through developing an electronic module about stunting as a method of nutrition health education which contains information about stunting. The purpose of this study was to determine the effect of nutrion health education on students' knowledge and attitudes through the development of the E-Module "Against Stunting" at SMU Negeri 1 Makassar City. The research method used is a Quasi Experiment, with a total sample of 64 students based on inclusion and exclusion criteria and then divided into the intervention group and the control group. Before the intervention, a pre-test was carried out on the two groups, then students in the intervention group were given nutrition education through an e-module containing knowledge about stunting, its causes and prevention continuously every week and at the end, a post test was carried out on the intervention group and the control group. The data collected were analyzed using the Man Whitney test. The results showed that there was an effect of nutrition heath education on increasing the knowledge and attitudes of students at SMU Negeri 1 Makassar City.

Abstract

Posyandu mempunyai peran penting sebagai salah satu kegiatan sosial bagi ibu-ibu untuk memantau tumbuh kembang anak. Pemantauan pertumbuhan anak melalui penimbangan balita yang dilakukan secara berkala pada setiap bulannya akan dicatat pada sistem Kartu Menuju Sehat (KMS). Hambatan kemajuan pertumbuhan berat badan anak dapat segera terlihat pada kurva pertumbuhan hasil pengukuran periodik yang tertera dan dicatat pada KMS tersebut. Naik turunnya jumlah anak balita yang mengalami hambatan pertumbuhan dapat segera terlihat dalam jangka waktu pendek (bulan) dan dapat segera diteliti lebih jauh penyebabnya, dan secepat mungkin dapat dibuat rancangan untuk diambil tindakan penanggulangan. Rumusan masalah pengabdian masayarakat ini adalah bagaimana meningkatkan keterampilan kader posyandu terhadap pengukuran data BB, PB/TB dan perhitungan umur berdasarkan presisi dan akurasi dalam rangka peningkatan kualitas screening stunting. Metode yang digunakan dalam pengabdian kepada masyarakat adalah berupa Team based learning (TBL) dan Pendampingan Kader pada saat pelaksanaan kegiatan. Penerimaan materi yang diberikan kepada para peserta dapat dikatakan baik karena terjadi peningkatan pengetahuan tentang pengukuran antropometri secara akurat dan presisi di Desa Poleonro Kabupaten Bone. Abstract

As the elderly population grows, life expectancy increases. This poses significant challenges to their health, particularly in maintaining immune and digestive function. Zinc and synbiotics (a combination of probiotics and prebiotics) are two promising nutritional interventions for supporting the health of the elderly. This article reviews the effects of zinc and synbiotics, as well as their combination, on elderly health, with a primary focus on immune response, sarcopenia, and fatigue. Based on a systematic review of literature from PubMed, Scopus, and Google Scholar, 600 articles were narrowed down to 10 selected articles (2017–2024) specifically involving randomized controlled trials, using the Cochrane Risk of Bias Tool and the PRISMA algorithm. The findings indicate that zinc supplementation has the potential to enhance the immune system and reduce inflammation, contributing to improved quality of life for the elderly. Meanwhile, synbiotics have been proven effective in improving gut health, addressing microbiota dysbiosis commonly found in the elderly, and enhancing gut microbiota balance that supports immune function. Zinc helps improve immune function and brain function, while synbiotics improve digestive health and reduce inflammation. When combined, both provide stronger and complementary effects in maintaining overall health in the elderly. Further research with stronger designs is needed to validate the benefits of both, and clinical recommendations for nutritional interventions in the elderly can be expanded based on these findings. Abstract

Pediatric patients with infectious diseases and neurological disorders are at high risk of malnutrition due to increased metabolic needs, infection processes, and limited nutritional intake. Problem: the risk increases in patients with a history of prematurity and neuromuscular disorders such as Cerebral Palsy which can cause difficulty eating and low nutritional intake. The purpose of this study is to describe the nutritional care process for An. MFA, a 5-year-old male 8 months old with a diagnosis of measles, bronchopneumonia, Cerebral Palsy and malnutrition who was treated in the Mina Inpatient Room of Harapan dan Doa Hospital, Bengkulu City. Research method: a case study with a five-step approach of the Standardized Nutrition Care Process (PAGT), including assessment, diagnosis, intervention, monitoring, and nutritional evaluation. Anthropometric results showed poor nutritional status with a BMI/U of -3.64 SD and MUAC 64%. Dietary history showed inadequate intake because the patient since birth only consumed formula milk without additional food. Biochemical examination showed a hemoglobin level of 11.0 g/dL which is still normal. Clinical examination revealed a body temperature of 37.1°C, pulse rate of 121 beats/minute, respiratory rate of 31 breaths/minute, and SpO₂ of 99% with a general condition of moderate illness. Intervention in the form of a High Energy High Protein (TETP) liquid diet was given in stages according to the patient's clinical condition and tolerance. Monitoring over three days showed an increase in energy and nutrient intake and improvements in several clinical parameters, although anthropometric changes were not yet significant. It was concluded that planned and monitored nutritional care plays an important role in meeting nutritional needs, preventing deterioration of nutritional status, and supporting patient recovery
