Abstract

Arabica coffee (Coffea arabica L.) is a type of coffee that is very popular with the public, usually consumed in the form of a drink by brewing coffee grounds where the content of saponins, phenols, chlorogenic acid, mangiferin and flavonoids shows the presence of antioxidant activity that is needed to fight free radicals. Coffee connoisseurs can choose coffee processing methods to obtain high antioxidants. This study aims to determine the antioxidant activity of Arabica coffee processed with an espresso machine and manual brew pour over V60. The design of this study was a laboratory observation study using the DPPH (1,1-diphenyl-2-picrylhydrazyl) method. Antioxidant activity was determined by comparing the IC50 values. The results showed that the highest % inhibition of each filtrate based on espresso machine processing and manual brew pour over v60 was 73.750% and 77.632%, respectively. The IC50 values for espresso and manual brew filtrates were 324,289 ppm and 447.352 ppm, respectively. As for ascorbic acid as a comparison, the inhibition percentage was 79.585% with an IC50 value of 6.185 ppm. With this it can be concluded that the highest antioxidant activity is found in coffee filtrate processed with an espresso machine, but both coffee bean filtrates have very weak antioxidant activity because they are in the range > 200 ppm.Keywords: Antioxidant, arabica coffeeKopi arabika (Coffea arabica L.) merupakan jenis kopi yang sangat digemari masyarakat, biasanya dikonsumsi dalam bentuk minuman dengan menyeduh bubuk kopidimana kandungan senyawa saponin, fenol, asam klorogenat, mangiferin dan flavonoid menunjukan adanya aktivitas antioksidan yang sangat diperlukan untuk melawan radikal bebas. Penikmat kopi bisa memilih metode pengolahan kopi untuk memperoleh antioksidan yang tinggi. Penelitian ini bertujuan untuk mengetahui aktivitas antioksidan kopi arabika yang diolah dengan mesin espresso dan manual brew pour over V60. Desain penelitian ini adalah penelitian observasi laboratorium menggunakan metode DPPH (1,1-diphenyl-2-picrylhydrazyl). Aktivitas antioksidan ditentukan dengan membandingkan nilai IC50nya. Hasil penelitian menunjukkan %inhibisi tertinggi masing-masing filtrat berdasarkan pengolahan mesin espresso dan manual brew pour over v60 yaitu sebesar 73,750% dan 77,632%. Nilai IC50 filtrat espresso dan manual brew adalah 324,289 ppm dan 447,352 ppm. Sedangkan untuk asam askorbat sebagai pembanding %inhibisinya yaitu 79,585% dengan nilai IC50 6,185 ppm. Dengan iniĀ  dapat disimpulkan bahwa aktivitas antioksidan tertinggi terdapat pada filtrat kopi yang diolah dengan mesin espresso, namun kedua filtrat biji kopi tersebut memiliki aktivitas antioksidan yang tergolong sangat lemah karena berada pada range >200 ppm.Kata kunci : Antioksidan, kopi arabika

Abstract

In order to improve the quality of health services available to the community, pharmaceutical services at community health centers are an important component in the implementation of health initiatives. Minister of Health Regulation No. 26 of 2020 concerning Standards for Pharmaceutical Services at Community Health Centers, which includes (management of pharmaceutical supplies and disposable medical supplies, clinical pharmacy services, and the facilities or infrastructure required to support pharmaceutical services at community health centers) represents the latest update to the standards for pharmaceutical services at community health centers, which have undergone several revisions to support these objectives. Determining the feasibility of implementing pharmaceutical service standards at the Bambu Mamuju Community Health Center in Mamuju Regency is the objective of this study. Using a checklist and in-depth interviews, this study combines a descriptive approach with an observational strategy. The study was conducted from December 2024 to January 2025. The population in this study was the pharmaceutical services at the Bambu Community Health Center in Mamuju District. The informants used in this study were the pharmacists in charge of the pharmacy at the Bambu Community Health Center. Based on the results of the study, the Bambu Mamuju Community Health Center in Mamuju Regency has implemented pharmaceutical services in accordance with the Bambu Mamuju Community Health Center standards with an average score of 84.2% in the good category, in accordance with Minister of Health Regulation No. 26 of 2020. Clinical pharmacy services at the health center still need improvement, but the management of pharmaceutical supplies, single-use medical devices, facilities, and infrastructure is in line with the technical guidelines for pharmacy service standards.
