Abstract

This study purpose to determine the effect of added sappan wood extract to be sugar palm fruit natural colored toward characteristic sensory evaluation, activities of antioxidant, and to know the best concentrate of sappan wood extract with higgest characteristic sensory and antioxidant. The research design was used Completely Randomize Design with 6 treated exctract concentrating which is 0% ; 2% ; 4% ; 6% ; 8% ; 10%. The treatment was repeated three times so that have 18 unit experimental. Data were analyzed by Analysis of Variance (ANOVA) and then continued with Duncan Multiple Range Test (DMRT). Result of this shown that the extract concentrate have very significant effect towards activities antioxidant, and anthocyanin levels. Have significant effect towards color (hedonic test). Has not significant effect towards flavour, taste, and overall acceptance (hedonic test). Concentrate 10% was the best treatment for produce sugar palm fruit with characteristic sensory color (liked), taste (rather liked), flavour (liked) and overall acceptance (rather liked), the highest value of antioxidant activitiest (based on IC50) 169.65 mg/ml, and anthocyanin 0.40 mg/100g. Abstract

The aims of this study are to determine the contamination of fungi in peanuts, to find out whatkinds of fungi that contaminated of peanuts, and to know the populations of each kind of fungi inpeanuts are sold in some traditional markets in the province of Bali. This research used descriptiveanalysis where displaying the results of the study in the form of images and tables. The sampling wasQuota Sampling method by taking samples at several largest traditional markets in the province ofBali. The number of samples required 36 samples of local varieties peanut and 36 samples of rabbitvarieties peanut which taken from some of traditional markets in the province of Bali. Samples wereisolated using a PDA (Potato Dextro Agar). The incubation period of 5 days (120 hours) at roomtemperature (29 ° C). The identification and the purification were done until get the pure result withPDA (Potato Dextro Agar). The result showed that rabbit varieties peanut 80.56% were contaminatedby fungi, while, 19.44% of rabbit varieties peanut were not contaminated. Whereas, the result of localvarieties peanut 66.67% were contaminated and 33.33% were not contaminated by fungi. Abstract

The aim of this research was to determine the concentration of phenol compounds and antifungal activity of torch ginger (Etlingera elatior) on Aspergillus flavus FNCC 6109. This research was a completely randomized design with 10 concentrations of shoot, flower, and fruit extract which were 10%, 20%, 30%, 40%, 50%, 60%, 70%, 80%, 90%, and 100%. The data were analyzed with variance analysis then followed by Duncan Multiple Range Test (DMRT). Analysis were repeated 2 times resulting in 20 experimental units. Result showed that each concentration of shoot, flower, and fruit extract had significantly effect (P<0,05) in inhibition of Aspergillus flavus FNCC 6109. Shoot, flower, and fruit extract of torch ginger contained phenol compounds of 154,56 mgGAE/g, 127,22 mgGAE/g, and 261,52 mgGAE/g. The best antifungal activity for shoot extract of torch ginger was at 70% concentration with a diameter inhibition of 7,9 mm category medium, for flower extract of torch ginger was at 90% concentration with a diameter inhibition of 5,65 mm category medium, and for fruit extract of torch ginger was at 80% concentration with a diameter inhibition of 13,75 mm category strong. Fruit extract of torch ginger had the highest phenol compound which could inhibit Aspergillus flavus FNCC 6109. Keywords : phenol, torch ginger, antifungal, Aspergillus flavus.

Abstract

Lactobacillus sp F213 (LbF213) is a lactic acid bacteria isolated from a healty infant feces, which has been proven as a probiotic bacteria because it is resistant to low pH, bile salts, digestive enzymes, able to survive and colonize the intestine, and prevent infection from E.coli pathogens.This study was conducted to know the viability of Lactobacillus sp F213 probiotic bacteria in rice juice during cold storage and its effect on the characteristics of rice juice products. This study used a descriptive method in objective tests (total lactic acid bacteria test, total glucose, pH and total acid) and a complete randomized design method in the subjective test (sensory test). This study used two treatments, namely rice juice with the addition of Lactobacillus sp F213 and without the addition of probiotic bacteria which are then tested every 3 days of 0, 3, 6, 9 and 12 in cold temperature. The test results data presented in the way form of tables and figures. The results of this study indicate that the viability of Lactobacillus sp F213 to 12 days storage at cold storage temperatures. The addition of Lactobacillus sp F213 also tends not to affect the characteristics of rice juice during storage either from the results of pH, total acid and total glucose and from sensory characteristics such as color, aroma, taste and overall acceptance. Abstract

“Jamu Gendong Kunyit Asam (Tamarind Turmeric Sour Herbs)” is a typical Indonesian drink that is quite famous which is one of the legacies of the Indonesian nation’s ancestors who have medicinal properties in maintaining health and for healing a disease. This study aims to determine aspects of chemistry and microbiology as well as food safety of Tamarind Turmeric Sour Herbs in Jimbaran and Kedonganan, Bali by using survey method and research. The observed variabels include total microbial, coliforms, Escherichia coli, pH, total acid, total vitamin C. The results of microbiological aspect test in this study showed that two samples of Jamu Gendong Kunyit Asam (Tamarind Turmeric Sour Herbs) at Jimbaran and Kedonganan,Bali does not meet the requirements according to SNI 7388:2009 namely samples B and E with indigo in sample B that is 30 x 10-1 and sample E which is 1 x 10-1. The result of chemistry aspect are if the increase in total vitamin C will effect the increase in total acid and pH will be more acid. Besaide that, E. coli bacteria can grow at a pH of 5-7 and the compound content of the tamarind fruit is also antibacterial so that most of Jamu Gendong Kunyit Asam (Tamarind Turmeric Sour Herbs) at Jimbaran and Kedonganan are not contaminated with E.coli.

Abstract

The aim of this research to determine the ability of mulberry leaf extract (Morus alba) to inhibit the growth of Aspergillus flavus. This research used completely Randomized Design with control treatment (without extract) and treatment of mulberry leaf extract concentration of 10%, 20%, 30%, 40%, 50%, 60%, 70%, 80%, 90%, 100%. The experiment were repeated 2 times and resulting in 22 experimental units. The data were presented in descriptive statistic with tables, and figure. The results showed that the extract of mulberry leaf inhibit the growth of Aspergillus flavus with optimal concentration 80% with an average 11.95 mm and strong inhibition categories.

Abstract

Sembukan leaf (Paederia foetida) is one of a tropical Asian plant that contains bioactive compounds and often used as functional foods. The aim of this research was to determine the concentration of flavonoid compounds sembukan leaf (Paederia foetida) as well as the concentration of inhibitory against the growth of Vibrio cholerae. This study uses an experimental design with 5 kinds concentrations : 20%, 40%, 60%, 80%, and 100%, with three replications. The analysis were repeated 3 times resulting in 15 experimental units. The data were presented in descriptive statistic in the form of tables and figures. The results showed that the sembukan leaf extract contained flavonoid compounds of 1.18%. The extract concentration of 80% exerted the highest inhibitory activity against V. cholerae classified as strong with a diameter zone inhibition of 19.60 mm. The sembukan leaf has percentage inhibition in the range of 15.36% - 64.86% with bacteriostatic category.

Abstract

Pesticides are chemical substances used to control various pests and diseases. In the field, synthetic pesticides are widely used and their use is not controlled and exceeds the permitted threshold according to the Minister of Agriculture No: 88 Permentan/PP.340/12/2011. The purpose of this study was to determine the content of pesticide residues in vegetables cultivated in Badung district. A total of 16 types of vegetables with 32 samples were tested for pesticide residues of organophosphorus and organochlorine groups (Diazinon, chlorphyrifos and Profenopos) on vegetable crops in Badung district. Qualitative testing was carried out with pesticide detection cards (Pesticide Detection Cards) and then samples contaminated with pesticides were continued by testing using Gas Chromatography Mass Spectrophotometry (GC MS) / The test results showed that as many as 30 samples of vegetables (93.75%) did not contain diazinon and as many as 2 samples (6.25%) containing diazinon, namely chinese cabbagge sample 1 of 0.015 ppm and chinese cabbagge of sample 2 of 0.024 ppm. A total of 29 samples of vegetables (90.63%) did not contain much chlorphyrifos and as many as 3 samples (9.37%) contained chlorphyrifos pesticide residues. A total of 30 samples (93.75%) contained profenofos and 2 samples of vegetables (6.25%) contained profenofos pesticide residues in the mustard greens sample 1 and chicory sample 2 were 0.048 ppm and 0.029 ppm, respectively. According to PERMENTAN No: 88 /Permentan/PP.340/12/2011, from the results of this test, all samples were below the Maximum Residue Limit (BMR) for pesticide diazinon, chlorphyrifos and profenofos

Abstract

The aim of this research to determine the concentration of flavonoid and anthocyanin compounds in sappan wood extract (Caesalpinia sappan L.), as well as to determine the concentration of inhibitory power against the growth of Vibrio cholerae. This experimental design study uses 5 kind of concentration, which are 20%, 40%, 60%, 80%, 100%. The analysis were repeated 3 times and resulting in 15 experimental units. The data were presented in descriptive statistic with tables, drawings and discussed. The results showed that the extract of sappan wood contained flavonoid compounds of 6,02%, anthocyanin compounds of 2,43% and was able to inhibit the growth of Vibrio cholerae with optimal concentration at a concentration of 80% with an average 20,1 mm and very strong inhibition categories.

Abstract

This research aims to find out the effect of fermentation time on the characteristics of soyghurt drink which was fermented by Lactobacillus rhamnosus SKG 34 and to identify the right fermentation time to produce soyghurt drink with the best characteristics. This research uses a Completely Randomized Design (CRD) with time of fermentation as the main factor that consists of 6 levels that are 0, 5 10, 15, 20 and 25 hours. Each treatment was repeated 3 times resulting 18 experimental units. The data were analyzed by analysis of variance (ANOVA) and if the treatment has a significant effect (P<0,05), then proceed with the Duncan Multiple Range Test. The results showed that the fermentation time had a significant effect on total LAB, total acidity, pH, aroma, sweet and sour flavor, overall accaptance, but had no significant effect on total sugar and color of soyghurt drink. The 5 hours fermentation time treatment produced the best characteristics of soyghurt drink, with the following characteristics: total LAB 9.47 log CFU/ ml, total sugar 9.64%, total acid 0.45%, pH 5.17, white color, with slightly sweet and sour taste, slightly liked aroma and liked overall acceptance.
