Abstract

A study to identifY the possibility on the development of swine raising managed traditionally by local communities on the coastal area of Manokwari district was conducted in Manokwari district (Kecamatan Manokwari; Kelurahan Manokwari Barat and Kelurahan Manokwri Timur). Data collection was carried out through field survey, observation and interviewing 35 respondent farmers Who have been raising swine for at least a year. For the future development, the requirements of good feeding management, feed additive (vitamin and mineral) is urgently to be applied with regards to enrich feed nutrients for the animals. Feed nutrition analysis of the consumed feeding is important to do serve as the base line information for the feeding management requirements. Feed availability was showed by various feed items, feeding sources diversity, and common practice of feeding frequency that appropriate as requirements for raising swine.

Abstract

Penelitian ini bertujuan menilai pengaruh perbedaan jenis galur ternak dan lemak pakan terhadap bau off-odor (menyimpang) pada daging ternak itik. Percobaan dilakukan dengan menggunakan rancangan dua faktor pada rancangan acak lengkap. Sebagi faktor pertama adalah jenis galur ternak, yakni galur alabio dan cihateup; sedangkan faktor kedua adalah jenis sumber lemak pakan, yakni lemak sapi, minyak kedelei dan minyak kelapa. Analisis sensori yang dilakukan melibatkan 10-14 orang panelis terlatih untuk menilai kualitas sensori daging dengan menggunakan metode uji ranking, skala dan uji deskriptif. Hasil penelitian memperlihatkan bahwa perbedaan galur ternak dan jenis lemak berpengaruh nyata (P<0,05) terhadap komposisi asam-asam lemak dan intensitas bau off-odor pada daging itik. Itik cihateup memiliki intensitas bau off-odor yang lebih tinggi daripada itik alabio. Analisis deskriptif memperlihatkan bahwa jenis bau off-odor pada daging itik adalah bau tengik, amis, bau lemak, bau jamur, langu, dan bau tanah.

Abstract

Abstract This study aims to improve the nutritional quality of venison floss by modifying the the technology process of floss making with adding red fruit oil (Pandanus conoideus L) and kebar grass extract (Biophytum petersianum) as a source of natural antioxidants. The results showed that the nutritional value of floss was influenced by the use of these herbal. Supplementation of antioxidant is to potentially extend the shelf-life of floss as indicated in decreasing the value of water activity (Aw) and thiobarburic acid (TBA). The Aw value decreased from 0.756 to 0.701, and TBA decreased from 0.139 to 0.055 mg/kg. The protein of floss increased from 33.20 to 35.60%. The result also showed that the content of antioxidant increased which is indicated by the increasing of beta-carotene content from 0.0087 mg /100 gram to 0.81 mg/100 gram. Results also showed that the use of red fruit oil extract and kebar grass extract decreased the content of saturated fatty acids, meanwhile in unsaturated fatty acids it increased arachidonic fatty acids. Abstrak Penelitian ini bertujuan meningkatkan kualitas nutrisi abon daging rusa dengan memodifikasi proses teknologi produksinya dengan penambahan ekstrak minyak buah merah (Pandanus conoideus L) dan ekstrak rumput kebar (Biophytum petersianum) sebagai sumber antioksidan alami. Hasil penelitian memperlihatkan bahwa nilai nutrisi produk olahan daging dipengaruhi oleh adanya penambahan senyawa antioksidan. Pemberian suplementasi bahan sumber antioksidan meningkatkan daya awet pada abon yang ditunjukkan dengan penurunan nilai aktivitas air (Aw) dan nilai thiobarburic acid (TBA). Nilai Aw abon menurun dari 0,756 menjadi 0,701, dan nilai TBA-nya menurun dari 0,139 menjadi 0,055 mg/kg. Nilai nutrisi terjadi pada nilai protein yang meningkat dari 33,20 menjadi 35,60%. Sebagai sumber antioksidan terlihat pada peningkatan kandungan beta-karoten dari 0,0087 mg/100 gram menjadi 0,81 mg/100 gram. Faktor penting lainnya dengan penggunaan ekstrak minyak buah merah dan ekstrak rumput kebar yakni adanya penurunan yang signifikan pada kandungan asam-asam lemak jenuh, akan tetapi pada asam-asam lemak tidak jenuh terjadi peningkatan pada asam lemak arakidonat. Abstract

The strategy for developing pigs through this research is a pilot model for the assistance of the Program Pembangunan Desa Mandiri (PPDM) in Nabire Regency. The objectives of this research are: to determine the factors that influence the pig farming business in Nabire Regency, to determine the strategy of developing pigs for farmers and the Animal Husbandry Office of Nabire Regency, to evaluate the pig farming development program and to recommend a model for developing pigs in Nabire Regency.The research was analyzed by swot analysis and multiple linear regression analysis. This research was conducted for 1 month on 30 respondents from pig farmers and 5 respondents from program actors. The results of the research through SWOT analysis showed that based on the sum of the total scores on the IFE and EFE matrices, the scores were 2.41 and 2.55, respectively. The IE matrix value indicates the position of the middle cell (Growth/Stable). Based on the results of the calculations in the QSP matrix, the most appropriate strategy to implement is to increase the productivity of pigs 6.10. The results of the study through the analysis of Multiple Linear Regression, it is known that the coefficient of determination test results show the R2 value of the regression model is 89.40%. This shows the ability of the independent variables together to contribute to the dependent variable by 89.40%. Based on the F-test that together the independent variables affect the production of pigs. Based on the t-test in this study, it is known that all variables included in the model separately have no effect on pig production.

Abstract

Fat deposition in broiler chickens is generally found in the abdominal cavity and under the skin. The fat content of broiler chicken is 5.79-8.44% with a mass of fat by ±10%, higher than the fat content of local chicken, namely of 1.18-2.76%, the cholesterol content of every 100 grams of wet meat of domestic chicken is similar to that of broiler chicken, 116 mg and 110 mg, respectively. The cholesterol content of broiler stomach contents is higher than that of free-range chicken. The highest cholesterol content of broiler innards is liver (529 mg/100 g) and the lowest is heart (171 mg/100 g), while for free-range chicken the highest is the kidney (336 mg/100 g) and the lowest is the heart (164 mg). /100g). The cholesterol content of free-range chicken eggs is 922 mg/100 g, almost twice that of broiler eggs, which is 485 mg/100 g. Moringa leaves (Moringa oleifera) as a source of feed with high nutritional value also has a function to control cholesterol levels and fat levels in broiler chicken meat. The experimental design used a completely randomized design with five treatments, namely (P0). Without the addition of Moringa leaf flour (control), (P1). Addition of 4% Moringa leaf flour, (P2). Addition of Moringa Leaf Flour 8%, (P3). Addition of 12% Moringa Leaf Flour and (P4). Addition of 16% Moringa Leaf Flour. Each treatment used 3 broiler chickens aged 12 days with 4 replications. The results showed that there was a significant difference between treatments, treatments P0 and P2 had lower cholesterol levels in meat than chickens with other treatments. Fat content in meat there was a significant difference between treatments, P3, P2 and P4 had lower levels of fat in meat than chicken with other treatments.
